Lava rock roasted kangaroo fillet on picked purple & savoy cabbages accompanied by portabella risotto & lemon thyme reduction.
The dish combines two skilful cooking methods over seasoned volcanic rocks with a dash of honey & black pepper. Served on lightly crunchy stir fried sweet & sour cabbages and finished with an earthy classical mushroom rice dish with home grown lemon thyme .
Wine Pairing: A weighty new-world red wine – Wolfblass President’s Selecton Cabernet Sauvignon from Australia – match up nicely with the weight of the meat. If the meat is served medium or medium-rare, more age in the wine is preferred. However the Kangaroo loin is a very lean meat with plenty of nice gamey flavors, so a Red Burgundy, Claret or Rhone red would do nicely also. Serving temperature can be a degree or two above normal, say 18C for this pairing.

The Magnum Room wine lounge is an excellent venue for those who are accustomed to enjoying a night cap after dinner in a wine bar. Aside from port and dessert wine, Magnum Room offers a wide range of Single malt, Cognac, Armagnac, Calvados, Sherry, Banyuls, Vin Santo and other liquor.

How to get to this fine-dining restaurant in Clark Philippines? Once you get to Clark Freeport, go straight until you hit Mimosa. After you enter Mimosa, stay on the left on Mimosa Drive, go past the Holiday Inn and Yats Restaurant (green top, independent 1-storey structure) is on your left. Just past the Yats Restaurant is the London Pub.
