There are many delicious ways to prepare this exquisite game bird. You may have your own favorite recipe. At the YATS Grill Room restaurant in Clark (Mimosa Leisure Estate), Chef Philip Golding and his talented sous chef “Gov” will prepare it to your customized delights. If you are a fan of wine, this would also give you the perfect excuse to open an old bottle of Bordeaux, Burgundy or Rhone red wine. Sommelier’s recommendation: 1991 Bourgogne Pinot-Noir, P Misserey for p2,200 or 1987 Chambolle-Musigny, M. Chenu for p3,300.
