Premature oxidation โ abbreviated to PREMOX in wine jargon โ had been more of an academic interest than anything until recently when expensive bottles of white wine were unceremoniously poured down the drain because they were simply not pleasurable to drink.
If there is any irrefutable evidence that life is indeed unfair in the world of wine, add this to the line-up.ย Almost all the โbadโ bottles were blamed on cork taint.ย This drove the cork people to near insanity at the brink of even buying the story themselves.
In reality, as Yats Wine Cellars join the short but elite list of wine institutions out to bash these ridiculous myths, a majority of these faulty wines was really a product of a thing called Premox which is wine jargon for โPremature Oxidationโ.
As you can see from the pictures of the luscious 1998 Meursault from Francoise Parent, the color is noticeably deeper in one than the other.ย Cork taint โ TCT โ doesnโt leave that forensic evidence.ย On the nose, oxidation is clearly the murderer of this fine wine.
Premox was especially bad in the otherwise fabulous 1999 vintage but it is something that worries wine lovers from 1995 to 2002.
