For those who enjoy a single glass rather than a whole bottle, or want to try mix and match meals and wines, the remainder of the bottle more often than not ends up being discarded.As soon as wines come into contact with the air, oxidation occurs and their flavour begins to change. In red wines, there can be an initial improvement, but within a few days the integrity of the flavour is generally compromised and the wine is well past its best. In an article published in You Magazine (a supplement to The Mail on Sunday) on 30 January 2010, wine expert Olly Smith reviews the various wine bottle accessories which are available to address this problem. The solutions range from the elementary to the technologically advanced and cater for a range of budgets.The first method is the most obvious and commonly deployed by lovers of the single glass; simply replacing the cork. While this may go some way to preventing further ingress of air into the wine bottle, most corks once replaced don’t fit particularly well and in any event do not prevent the wine from interacting with the air that has already entered the bottle on removal of the cork.A better option is to invest in a selection of good quality wine bottle stoppers and select one that fits the bottle as well as possible. However, this doesn’t address the problem of air having rushed into the bottle when the cork was removed. Again, these are also unlikely to keep the wine for any significant length of time.Refrigeration can help for a short time to keep white wine, but this will only buy limited time. It seems that to ensure longer term wine preservation, some technological assistance is required
