Nine fairly common cheeses were paired against a vintage white wine from Bordeaux’ Graves region, 1990 Chateau Olivier Blanc of Graves from Yats Wine Cellars Clark Philippines.  This is the result of the pairing.

 

Jack:  works surprisingly well, cheese made the wine taste “clean” and crisp, the finish is harmonious due to an even match-up in their weights, good pairing but short of brilliant.

 

Edam:  flavors blend nicely but cheese just a bit too heavy for the wine making the latter feel a little thinner than it really is, but overall more an acceptable as an everyday sort of pairings

 

Gouda (Australian):   good balance of flavor intensity and weight, flavors mesh nicely also but the cheese outlasts the wine by too long a stretch in the finish, otherwise it might be an excellent pairing

 

Asiago:   Flavor of cheese far too strong for the wine making the latter tastes bitter and hollow, not a good pairing

 

Raclette:  doesn’t work either, not as bad as with the Asiago but the damage is similar, wine taste bitter but this time, with a curious undertone of Anchovies

 

Gruyere:  Quite acceptable but the flavors of the cheese cause the wine to taste strangely citrusy, almost like a grape soda of sort only more tart, not really working well as a pairing

 

Fontina:  not much is wrong with the match up in flavors but the harmony is damaged by the overpowering weight of the cheese causing the palate to lose interest in the wine especially during the finish

 

St. Paulin:  There is nothing to like about this pairing, complete clash, avoid

 

Camenbert (Danish):  a sleeper really, works unexpectedly well, the wine seems to wake up the otherwise dull flavor profile of the cheese, not much synergy but not as bad as expected, but the wine is somewhat diminished by the cheese towards the end

 

So the best pairing are Jack and Edam
