Wine and cheese pairing – Bordeaux Red Wine 1988 Ch. Gloria St. Julien from Yats Wine Cellars

Eight familiar cheeses were paired against a vintage red wine from Bordeaux left-bank Medoc region, 1988 Chateau Gloria St. Julien from Yats Wine Cellars Clark Philippines. This is the result of the pairing.

Two cheeses matched nicely with this middle-age Claret.

Asiago (Young): this same cheese failed miserably with a 1982 St. Emilion in an earlier experiment but fared very well in this pairing. Although it is not the best one, it did very well, in the weight department especially. Flavors give nicely with the cassis and ripe fruit flavors of the wine. The balance was harmonious. Perhaps the texture of the cheese caused the wine to appear a bit thinner than it really was.

Gruyere: this is an almost perfect match. The slightly flaky texture of the cheese made the wine feel even more velvety than it was. The crisp acidity of the wine was tamed by the cheese resulting in a sweet and round finish. Flavor synergy occurred naturally but both cheese and wine retained their individuality while achieving harmony.

Jack: not bad, brings out the cassis personality of the wine, everything else matches up nicely, so this is a positive pairing, weight and texture match up quite nicely also.

Raclette: also not bad, amplifies fruitiness in the wine, stripping it of tannins, good for those who like fruity wines but diminishes the distinction of the wine, otherwise it was a harmonious pairing.

Gruyere is the outright winner and Raclette is a close runner-up. The other two are also workable.
