Yats Restaurant & Wine Bar (www.YatsRestaurant.com) were put to task to find a good wine to pair with Braised Beef Brisket noodle. The two finalists were a 1990 Le Corton and 1985 Corton-Charlemagne white wine, all courtesy of Yats Wine Cellars (www.YatsWineCellars.com). Here are the results.

The 1985 Corton-Charlemagne was very vigorous but fresh and it fared well with the noodle and the beef stock from the brisket. However with the beef brisket, it didn’t stand a prayer and just disappeared into total obscurity. The 1990 Le Corton – a Grand Cru from Burgundy – was nearly a perfect match. By the way Burgundy has its own famous version of braised beef which is of course the ubiquitous Boeuf Bourguignon. So the pairing was nothing new.

The fat content and the consistency of the braised beef require a slightly more weighty wine. Although the Burgundy worked very well, it is possible that a younger Burgundy from a ripe year like 1996, 1999 and 2003 might do better. Holding that thought a moment longer, one might want to try a Pinot Noir from Yarra Valley but preferably from a cooler year with a lower alcohol level of say 13%, which is not easy to find in New-world regions.
