Chinese Duck Breast

Ingredients:
100g Duck Breast
½ tsp Pomace Olive Oil
.1g Salt and Pepper
.1g Cajun Powder
For The Risotto
50g Cooked Risotto
10g Chopped Yellow Bell Pepper
10g Chopped Red Bell Pepper
10g Chopped Green Bell Pepper
45ml Culinary Cream
.1g Salt and Pepper
30g Grated Parmesan Cheese
80ml Chicken Stocks
5g Butter
For Cream of Spinach
80g Cooked Chopped Spinach
5g Chopped Shallots
3g Chopped Garlic
5g Grated Parmesan
45ml Culinary Cream
5ml Olive Oil
For Sidings
30g blanched Asparagus
5g Butter
METHOD:
On a heavy metal skillet add the Olive Oil in high hit. Put the duck skin down first on the skillet. Cooked it for about 2 ½ minutes to brown both sides of the duck. Put it aside
Prepare another pan for the risotto
Put the butter till it melts add the red, green and Yellow peppers and sautee it for 3 minutes. Add the other ingredients. Risotto Rice, Culinary Cream, Chicken Stocks, Grated Parmesan and cooked it till it done.
Put it aside
On the other clean pan in low hit add the butter and sauté the asparagus for 1 min put it aside
On another clean pan prepare the Cream of Spinach
On The Pan pour the oil, follow shallots, garlic cooked spinach and sautee for 3 minutes. Add the culinary cream and parmesan
To assemble the Chicken Duck Breast
On a nice plate assemble the Spinach and Risotto Side to Side. Put the Duck Breast and Garnished it with Butter Asparagus.

How to get to this fine-dining restaurant in Clark Philippines? Once you get to Clark Freeport, go straight until you hit Mimosa. After you enter Mimosa, stay on the left on Mimosa Drive, go past the Holiday Inn and Yats Restaurant (green top, independent 1-storey structure) is on your left. Just past the Yats Restaurant is the London Pub.
