Come back to me with all your heart, says God. I will, I will, I say, but my heart is not ready yet. Yes, I want a deeper relationship with You but not now. I still have to ready myself. I have to overcome my faults and shame over my failures before reconciling myself with You. I have many things to do rather than pray. I will come back to You. Soon.
Come back to Me, He insists.
But I am afraid to return. If You only knew the kind of person I have become. I do not know how to go back to You. What shall I say when I do?
But He gently prods me. Here I am, faithfully awaiting your return. Nothing matters except that you come back to Me, I Who love you unconditionally.
Embarrassed and confused, I look at You as Your arms eagerly open to embrace me, like the way the father did to his prodigal son. No stern stares, no judgmental looks, just the joyful welcoming warmth of Your embrace. Then I realize that there is no need for words. I run to You and I am back home.
Almighty Father, the time of Lent has come, together with your never-ending personal invitation to return to Your love. And I accept it. But, Lord, where do I start?
I now pray for Your grace to drop my defences and realize that my standards, my way of judging and loving are so very different from, and so much smaller than Your way. No matter what I have done or how much I think I have hidden from You, I thank you for offering me another season, more so an entire lifetime, of loving me unconditionally. Help me live each day in Your love.
Such is my Lenten prayer. May it be yours too.

Phl Philharmonic Orchestra holds concert in San Fernando

CITY OF SAN FERNANDO – The country’s leading and symphony orchestra and noted as one of the top musical ensembles in the Asia-Pacific region will be performing in this city’s 12th cityhood celebration.
“It is one of the activities during the two-week celebration of the cityhood anniversary from January 31 to February 14. The Philippine Philharmonic Orchestra (PPO) concert will be held on February 8, 6 p.m. at Heroes Hall’s Mini-convention center,” Mayor Oscar Rodriguez said.
The special performance of the orchestra was supposed to take place August 14, 2012 but due to inclement weather where Habagat or southwest monsoon occurred during that time, it was moved this year.
“Fernandinos will witness the country’s longest-existing and most-distinguished Philippine Philharmonic Orchestra, and we are inviting you as they join us in the festivity of our city,” Rodriguez added.
For those interested to witness the music of the group, free tickets are available at the City Tourism Office located at the second floor of San Fernando City Hall.
The PPO was established on May 15, 1973 as the Cultural Center of the Philippines’ (CCP) Philharmonic Orchestra and was initially intended to accompany performing artists at the CCP Theatre.
It has already performed with many of the world’s renowned conductors that include Mendi Rodan, Piero Gamba, Enrique Batis, Sebastian Bereau and Nicholas Koch and with the best foreign and Filipino artists such as Van Cliburn, Renata Tebaldi, Judith Engel, Anthony Camden, David Benoit, Cecile Licad, Raul Sunico and Lea Salonga. ●Joelyn G. A nobly rotten vintage

In this growing season of uncharacteristically cool temperatures, uncertainty, ill-timed rain, crop loss and bunch rot, there’s at least one winemaker in the valley who is smiling.
Roger Harrison, of RA Harrison Family Cellars, ranks the 2011 vintage in the top three in difficulty he’s seen in his 29 years as a winemaker. And while he’s concerned for his neighbors, he is also looking at perhaps the best harvest for his wine he’s ever seen.
He’s chosen an extremely challenging winemaking niche for himself: late-harvest, botrytized wines. It’s production is fraught with risk, and the wine has to be tasted and understood to sell.
Why does he pursue it? “It’s what I do best” he said.
Harrison’s day job includes being responsible for the production of Beringer’s Nightingale, a Sauternes-style, late-harvest sweet wine. “I’ve been privileged to be mentored by three renowned legends in the wine industry: Myron and Alice Nightingale and Edward Sbragia,” Harrison said.
The name “late harvest” is literal. When everyone else in the valley has finished crushing, pressing and cleaning up, Harrison is still walking the vineyard and usually harvests in December.
The greatest source of risk for this style is that the birds may feast on his crop or he may be rained out and looking at a vineyard full of sour rot before harvest day finally arrives.
Botrytized wines are delightfully odd in that the best of them are made from grapes that are, technically, rotten — they’re infected with Botrytis Cinerea mold. Botrytis can destroy a crop in fairly short order but, under the right conditions, it makes a distinctively rich sweet wine unlike anything else. If you’ve had the pleasure of sipping a glass of Sauternes, Beerenauslese or Tokaji Aszú — or Harrison’s wines — you’ve experienced what the French refer to as “noble rot.”
The botrytis perforates the grape skins and the berries begin to dehydrate, concentrating the flavor and sugar. On a good year, Harrison’s crop comes in at between 35 and 40 percent sugar, while the target sugar for table wine is in the low to high 20s, depending upon the style.
“The botrytis gives sauvignon blanc melon, pear and honeyed character and the semillon shows apricot, caramel and nutty flavors,” he said. “The semillon also gives the wine viscosity — it really adds to the mid-palate.”
Harrison produces a late-harvest sauvignon blanc and Nobility, a blend of sauvignon blanc and semillon in the tradition of Sauternes from the Bordeaux region of France.
Think back to last month and you have almost a perfect recipe for noble rot. Significant rainfall in the first week, followed by warm, dry weather set the stage for mold to develop and progress, much to the dismay of local growers who still had grapes on the vine.
Then, shortly after, there was another downpour and this was a warm one. Harrison said, “It’s very difficult for everyone else and they’re picking around the rot, but it was just perfect for me — the botrytis bloomed and was spreading. With the second rain it just took off. And, the warm, dry conditions that followed were just perfect for dehydration.”
Last year, however, was a difficult year for him, which highlights the need for specific conditions in order to succeed with this style. Like 2011, last year was a long, cool growing season with October rains — in his case too much. “Last year, I got rained on 15 times,” Harrison recalled. With too much rain, it’s hard to get the dehydration going, he said. “I had to pick on a couple of dry days in December or I would have had nothing.”
Aside from the risk of potentially having nothing to harvest, it’s important to differentiate noble rot from black rot or green mold.
“The pickers think I’m nuts,” Harrison said. “I show them the good botrytis but we end up picking everything — clusters, partial clusters and grapes that are rotten — and then sorting it out at the winery. Later, I go back to see if the healthy grapes we left hanging have rotted and there can be a number of passes through the vineyard.”
There’s financial risk, too. “You never know what’s going to happen,” he said. “I have to buy about two green, healthy tons, which would typically yield 350 gallons, to get one ton of botrytis. Between the sorting and the fact that they’re dehydrated the yield is about 90 gallons. It’s kind of like buying four tons to get one, so these grapes are expensive.”
The challenges don’t end at the sorting table. “The sugar, acid and pH are out of whack, and the juice is low in nutrients because of the rot,” Harrison said. “It’s not a good environment for the yeast.” He adjusts the pH by supplementing the acid and adds nitrogen-based yeast food to encourage the yeast. He ferments the wine in 60-gallon, French oak barrels.
This year, he hopes to complete harvest early, by his standards, in November. “I couldn’t have created better conditions,” he said.
He walks the vineyards with increasing frequency as the time to harvest gets closer. “I can’t sample the grapes the way you would to make dry table wine. The sugars are all over the board. I walk every three days and taste the fruit, and then, as it gets closer, I walk every day. I don’t know how to explain it; it’s like the vineyard just talks to me. Knowing when to harvest comes with experience.”
Why is this style of wine difficult to sell?
“I think it’s just a question of people getting educated about the wines,” he said. “I don’t like the word ‘dessert’ wine. I think that’s what’s killing the wine in this country. I’m an up front sweet and savory guy. Anything savory goes with a sweet wine and gives it a kind of balance.
“You could serve blue cheese or foie gras with a glass of Nobility as an aperitif. If you have blue cheese with late-harvest wine it makes the wine taste better and the cheese taste better. This style is great with a cheese course and is the best choice for strong cheeses. Sweet wines are more versatile that people think.”
His favorite dessert pairing? “Crème brulee. And, for Thanksgiving I think a glass of Nobility with pumpkin cheesecake would be an amazing pairing.”

All red wines are not the same

Back in the 1970s, when I first began writing about wine, a co-worker at the Associated Press chided me: “All red wine tastes the same.”
I was amused by the line since I could usually tell the differences between the major red grapes. The task wasn’t particularly difficult back then since wines from different grapes had distinctive aromas and tastes.
Cabernet sauvignon was slightly herbal and had a nice dusty, earthy/cherry fruit, occasionally with a bit of tarragon, thyme or savory. And its aftertaste was a bit astringent. Tannin was the culprit, but it responded to aging, diminishing over time.
Merlot had more olive and tea-like characteristics, a lot softer tannin structure and less of the dry herb notes. Though it could be less complex, it had a more obvious level of fruit.
Zinfandel had a jam-y, plum-y aroma with hints of violets, strawberries, plums and even blueberries.
And syrah, for all intents and purposes, didn’t exist. Little of it was planted in California. (Its rise as a major variety has been spectacular. In 1991, California had just 141 acres of it. In 2010, that figure was more than 19,000 acres.)
Syrah’s popularity as a red wine grape seems to have coincided with California wine makers’ desire to make a wine with little if any of the distinctive varietal character of the past.
This began to happen in the 1990s as alcohol levels for most red wines rose in response to higher scores from some people who believed that the “best” wines were the biggest.
By the late 1990s, we were seeing red wine alcohols in the 14.5 percent to 16 percent range; previously most red wines were 12 percent to 13.5 percent, and most wine lovers had been fine with that.
But newer consumers, notably those who read scores as facts, believed that the best wines had loads of alcohol.
Higher alcohols are the result of far more sugar in the grapes at harvest than previously, indicating that the grapes were harvested later than in the past. And the later that red grapes are harvested, the less they show the distinctive varietal character for which we once lusted.
What syrah added to the varietal mix was its ability to, chameleon-like, take the character from where it was planted. And since most of the plantings of syrah were in warmer-to-hot climates, most of the wines were rather bland in aroma and character, lacking the distinctiveness that the variety shows when planted in cooler areas.
Over the last few years, many red wines began to show less varietal character. But those who rate wines by score seemed to be uninterested in varietal character as much as power and concentration.
In the mid-1990s, I began to notice a trend: It was increasingly more difficult to say which wine was made from which grape. Among the least distinctive were warm-climate Syrahs.
And it was then I recalled my friend’s remark about all red wines tasting the same.
Not all red wines, of course. But for the most part, any wine listed as having more than 14.5 percent alcohol has a sameness and a simplicity that can be rather boring.

Wine of the Week
2008 Greg Norman Cabernet-Merlot, Limestone Coast ($15) – There is a nice bit of complexity in the aroma here, with some of cabernet’s herbal character, some Merlot fruit, a softer entry from the latter grape, and a bit of cellar potential from the former. Occasionally seen discounted, a great value.

Hong Kong toast of wine world amid global woes

(Reuters) – Hong Kong’s wine imports have remained strong even as global economic uncertainty cuts demand for luxury goods, underscoring the city’s credentials as a preeminent wine hub buoyed by strong demand from mainland Chinese buyers.
Even with Europe’s debt crisis and continued fragility in the U.S. economy continuing to weigh on consumer demand, Hong Kong’s wine trade has grown steadily, with imports surging 57 percent in the first nine months, year on year, to $940 million.
Since the teeming former British colony scrapped wine duties from 40 percent to zero in 2008, wine imports have almost quadrupled to $898 million in 2010 with the mushrooming of wine merchants, auctioneers, distributors and storage cellars.
Auction houses such as Christie’s and Sotheby’s, along with specialised wine sellers such as Acker, Merrall & Condit, helped propel wine auction sales in the city to $164 million in 2010, according to industry figures, making it the world’s leading wine auction hub over London and New York.
In the first three quarters this year, the city recorded $940 million of wine imports from all major wine-growing regions including France, Italy, Australia and South America, many of the best vintages being channelled to meet growing demand from affluent and regular buyers.
“China is the fastest growing wine consumption market in the world,” said K.C. Chan, Hong Kong’s secretary for financial services and the treasury.
“Strong economic growth, increasing prosperity and an improving lifestyle have led to continuing increase in demand for wine in Mainland China.”
At Asia’s largest wine and spirits fair in Hong Kong’s harbour-front convention and exhibition centre, some old world wine producers said that while the financial uncertainty was hurting business, China remained an important new sales frontier.
“The only source of growth we have for the time being is the U.S. and the Chinese market,” said Denis Stevens, the head of the French pavilion at the fair, which this year attracted a record 934 exhibitors from 37 countries.
“For the time being, Bordeaux is still the big winner of growth but more and more, all the regions are getting in the spotlight.”
Despite the bullishness there have been signs of more discerning buying by the Chinese, with Bordeaux prices coming down from record highs and a growing focus on Burgundy vintages.
“Bordeaux (wine) has levelled and maybe a few wines have come down a stick or two, but overall the market is stable,” John Kapon, the head of Acker, Merrall & Condit, the veteran U.S.-based wine auctioneers, told Reuters.
“China is very important, it’s almost 60 percent of our revenues … and we expect this to continue for many, many years,” added Kapon, whose firm’s four auctions in Hong Kong this year have already netted around $45 million.
