<em>the richness and intensity of flavors for a good white wine from Meursualt have besotted fans of Chardonnay for ages;  1999 was a fantastic year in Burgundy for both red and white wines, even though it was only pretty good in Bordeaux;  these wines have amazing ageing potential as this 1999 Mersault shows us;  this wine is matured and ready to show us a good time, for years to come; pair this with seafood, poultry and white meat even if the sauce is a little heavy;  it is great with a variety of soft cheeses also; enjoy!  Also available are the 1997 and 1998 vintages of the same wine.</em></p>

<em>there is no reason why 90% of wine lovers think of red wine when they think of Bordeaux; indeed for fans of Sauvignon Blanc who long for a white wine that is less grassy and has a little more in body and substance, these superb white wines from Bordeaux’s Graves appellation is the perfect dinner wine for a very large variety of white-wine dishes; shellfish dishes are particularly favored but they are also an ideal companion for pork also.</em></p>

<em>it is not clear why the fabulous whites of Saint-Aubin have eluded the craze of fans of Burgundy’s white wines;  these wines have been surprisingly underrated for decades only now beginning to enjoy the respect and recognition they deserve;  these medium-bodied Chardonnay wines are pure, vigorous and attractive when enjoyed on their own from lunch to dinner or with seafood, salad, sandwiches, poultry, white meat and a variety of soft creamy cheeses also.</em></p>

However this Chassagne-Montrachet will go very well with a nice seabass in white sauce or veal; try to pan-fried barracuda with it, may still be on the a la carte menu.</em></p>

<em>Saint-Romain is one of the terroirs in Burgundy that produce white wines with strong mineral notes, a quality that connoisseurs seek in fine Chardonnay; the wine is dry and vigorous, nervy even, a bit too sharp when young, needing ageing in the bottle to achieve a smoother touch;  this Saint-Romain white wine keeps on refreshing the palate after every bite of food, really nice with fish especially steamed or fried, excellent with Camembert cheese also.<br />

This wine is full-bodied, smooth-textured and it offers abundant bright red fruits to compliment a good variety of dishes on the menu today.  At this price, it is practically irresistible even if it is not necessarily the most distinguished and complex wines in France.</em></p>

Once we get past the label, the wine speaks for itself, in body, texture, intensity of flavors, vigor and a certain depth and complexity that makes this not only a delightful sparkling wine but a serious wine to engage over a nice meal.  The price also speaks of how this kind of sparkling wine from Burgundy is incredibly undervalued, good for us, wine lovers.</em></p>

<em>Fresh sparkling wine from Burgundy, not something that Manila wine lovers see every day in their favorite wine shop and supermarket wine aisles but an excellent alternative to the often-over-priced Champagne.  Produced in exactly the same fashion as Champagne and using the same blend of Chardonnay and Pinot Noir, it is not surprising that they taste remarkably similar to and almost indistinguishable from Champagne.  At a fraction of the cost of a Champagne, these Crèmant de Bourgogne are offer splendid value for money.  Enjoy this with a wide variety of dishes from Cavier to oysters, salads to prawns, white fish to creamy cheeses and of course, the classic – strawberries.</em></p>

<p>The most entertaining way to learn about wine is to invite a few friends to a tasting in your own home. The more you know about wine, the more rewarding the tasting will be, but even if you&#8217;re a neophyte, you&#8217;ll be amused&#8211;and educated. All you need are an appropriate group of bottles, a corkscrew, good company and an open mind.<br />
ORGANIZING A TASTING<br />
I recommend a short tasting before lunch or dinner so that you can follow up by drinking the same wines with your meal. I&#8217;d stick to no more than eight tasters and line up no more than four glasses in front of each person. Depending on how many wines you&#8217;d like to sample, serve them in &#8220;flights,&#8221; or groups, of three or four. Pour one and a half or two ounces per glass; that will give everyone enough to taste and still leave part of each bottle to serve later. For this kind of casual event, you should select one of the following two approaches:<br />
VARIETAL TASTING. A tasting of representative examples of the same grape variety from different areas&#8211;Chardonnays from Burgundy, California, Washington State, Australia, New Zealand, northern Italy, Spain and Chile, for instance&#8211;is the better choice for relative beginners. The wines should be of roughly the same age to minimize the number of tasting variables. This kind of comparative tasting is ideal for learning how various regions contribute their own distinctive character to the same variety and which versions you prefer.<br />
HORIZONTAL TASTING. The second option is a tasting of wines from a single category and a single vintage: 1993 Bordeaux or 1994 Oregon Pinot Noirs. If you gather together, say, 1993 Bordeaux from such major appellations as Pauillac, St-Julien, Graves, St-Emilion and Pomerol, you will have wines of markedly different character, and you will never be able to experience these differences more clearly than when tasting the wines side by side.<br />
But a horizontal tasting can be rigorous, as the distinctions among young wines in some categories may be quite subtle. At my first serious tasting of Bordeaux from the Médoc region, I could not believe the discussion going on around me about the differences between the wines. To me, everything was black currants and shoe polish and mouth-numbing tannins. But as I listened to my more experienced companions and returned to the glasses in front of me, I was able to identify black cherry, raspberry and plum notes, not to mention nuances of leather, tobacco and grilled meat. As the evening progressed, I could discern more or less intensity and complexity of flavor, as well as the contrast between fine, gentle tannins and coarser, drier ones. Wine is like any other subject: once you learn a little and master a basic vocabulary, you can quickly absorb a lot.<br />
SETTING THE SCENE<br />
THE BOTTLES. Remove the capsule from the top of each bottle, then roll the bottle in foil, crushing the bottom flat. Number each with a marking pen to ensure that the right wines are poured into the right glasses. (It is easier to uncork the bottles after they are wrapped.) You&#8217;ll be referring to wine No. 2 or wine No. 3 and revealing the labels only at the end.<br />
The reason for tasting &#8220;blind&#8221; is simply to avoid being swayed by the labels. We tend to be less willing to find fault with wines with swanky names and more reluctant to give high marks to supposedly inferior bottles. One of the joys of a blind tasting is that it virtually always produces surprises.<br />
THE TABLE. Cover the table with a white cloth so that your guests can easily examine the color of each wine. Or arrange the glasses on white plastic-coated sheets or butcher paper; their friction-free surfaces make it easier to swirl the wine in your glass.<br />
THE GLASSES. An ideal all-purpose tasting glass is Riedel Crystal&#8217;s Ouverture Red Wine glass, widely available for $7.50 to $9; the more expensive Riedel Vinum Chardonnay glass, about twice the price, has a somewhat more elegant shape. Both are narrower at the rim than they are at the middle of the bowl and large enough to allow you to swirl a few ounces of wine without splashing your neighbor.<br />
SCENTS. Strong scents in the room will interfere with your ability to taste wine. The floral and spice aromas your guests find in their glasses may come from that Ralph Lauren potpourri on the sideboard.<br />
TEMPERATURE. Chill dry whites to between 50 and 55 degrees and reds to between 60 and 65 degrees. At refrigerator temperature, the aromas and flavors of white wines are typically stunted. And reds served too warm may be dulled by their alcohol.<br />
PALATE CLEARERS. Supply some bread or crackers for your guests to munch on between wines. Crunchy French bread or neutral biscuits are excellent choices. I also often serve fresh lightly salted mozzarella, which has an uncanny knack for ridding the mouth of strong tastes.<br />
SPIT BUCKETS. You don&#8217;t need to swallow wine to taste it. In fact, the less you swallow, the longer you&#8217;ll be able to maintain your acuity. Spittoons can be large coffee mugs or opaque plastic cups, preferably weighted so that they cannot overturn easily. A larger bucket on the table allows tasters to empty their glasses and spittoons at the end of each flight. </p>
<p>TASTING THE WINES<br />
LOOK. Begin by examining the color of the wine against a white background, tilting the glass away from you. Look for bright and, in the case of red wines, saturated color. A young red that is going brown at the rim is probably aging too quickly, while a white that is unusually dark may be showing signs of incipient oxidation.<br />
SWIRL. To release the aromas of a wine, swirl it in the glass and then give it a deep sniff. Repeat as necessary, taking notes.<br />
SIP. Take a good-size sip. Hold the wine in your mouth; swish it around, allowing it to coat your entire palate. What does the wine feel like? Is it thin and acidic? Is it rich and velvety?<br />
SAVOR. Draw in some air be-tween your front teeth or across your tongue and &#8220;gargle&#8221; the wine in your mouth. Keep in mind that your tongue can identify only four basic tastes: saltiness, bitterness, sweetness and acidity. All other flavors actually reach your brain as aromas through the retronasal passage at the back of your throat. By &#8220;chewing&#8221; the wine, or combining it with air, you cause its volatile elements to vaporize.<br />
WHAT TO LOOK FOR<br />
AROMAS AND FLAVORS. Free associate as you smell and taste the wine, and jot down the descriptive words or phrases that come to mind. Make sure the wine is clean, that is, lacking such obvious faults as a vinegary quality, mustiness (which may be due to a bad cork), oxidation (the smell of sherry or Madeira) or a strong suggestion of the barnyard.<br />
TEXTURE AND WEIGHT. Is the wine light and crisp? Is it soft and full-bodied? Is it rough or smooth?<br />
OVERALL BALANCE. Generally speaking, a good mature wine should display a harmony of components; no single element should dominate. But perhaps your wine is overwhelmed by scents of new oak barrels or is excessively tan-nic or alcoholic. Keep in mind, though, that very young wines often need some bottle aging to achieve harmony.<br />
PERSISTENCE ON THE PALATE. If there is a single reliable indicator of wine quality, it&#8217;s the length of the aftertaste, or finish. A wine that disappears virtually the mo-ment you spit or swallow it probably lacks concentration or was made from marginally ripe grapes. An outstanding wine lingers on your palate for 20 to 30 seconds and sometimes much longer. </p>
<p>COMPARING NOTES<br />
CONSULT. Allow everyone enough time to taste through each flight of wines and take a few notes. Then discuss the various bottles, exchanging your tasting notes and your likes and dislikes. It will work to the group&#8217;s advantage if one person with a general familiarity with wine is able to provide the basic parameters for the category of wine you&#8217;re tasting.<br />
TASTE AGAIN. As you discuss the wines, retaste them to see whether they have changed with aeration. Notice how some improve and grow richer while others lose their shape and freshness.<br />
VOTE. Pick your favorites before revealing the labels.<br />
TASTE WITH FOOD. Later, as you drink the same wines with your meal, note how some complement the food and others overwhelm it with monolithic flavors or excessive alcohol or new oak. A wine that grabbed your attention during the tasting may ultimately prove tiring to drink, but another that was less compelling may come alive with your meat course. Compare your impressions at the table with the opinions recorded in your tasting notes.<br />
And save your notes so that you can recall your preferences the next time you find yourself in a wine shop. </p>

<p>t&#8217;s great to have a group of people over for a casual social event, but costs can quickly add up. But one idea that can be unique for guests and inexpensive for you as the host is a wine tasting potluck! By contributing just a few items and inviting guests to add their favorite bottle of wine, you can have a great wine tasting event at a relatively low price to you as the host!<br />
You can put as much or as little into this event, but a few nice touches will make it memorable to your friends and most likely start a new tradition with your group of friends. Follow these easy steps to create your evening:<br />
1) Invite your friends: this kind of event works well with just about any number of guests. You can invite four close friends, or you can have 15-20 people over for a larger event. It&#8217;s up to you because any number will work!<br />
2) Inform your guests of the requirements: let the guests know that this is a wine &#8220;potluck&#8221; of sorts. Invite them to bring their favorite bottle of wine. It might even encourage someone else to host a similar event! Obviously, a wine-tasting event needs wine experts, so begin by seeking suitable merchant partnerships based not only on expertise, but also access to the best wines. After all, you have to be able to provide numerous bottles of expensive wine and there&#8217;s no sense in paying anything near retail price.<br />
Partner with a wine merchant or distributor who can not only help with supplying wine and expert advice, but can also help sell advance tickets to your event.<br />
Organization Tips<br />
Getting plenty of advance publicity is a must. Take the time to put together a press release and get the word out to local media outlets such as tv and radio stations.<br />

<p>Nothing contributes more significantly to your wine experience than tasting. It&#8217;s kind of like learning to play an instrument; it&#8217;s helpful to know how to read music, but ultimately, there&#8217;s no substitute for practice.<br />
Coming together with a group of fellow wine enthusiasts is a fantastic way to exercise your tasting muscles. A group atmosphere offers participants the opportunity to share opinions and conclusions, shaping and strengthening each individual&#8217;s appreciation of the wine. The concept is similar to that of a book club. Sure, you can enjoy a novel on your own. But getting together with a group of people who have read the same book can enhance your appreciation and understanding of the story.<br />
The following article shows you the key steps in hosting a wine tasting &#8212; from the planning stage to choosing a theme &#8212; so that it will be a truly meaningful experience. We&#8217;ll start by addressing a few basics you should consider when planning a wine tasting.<br />
Blind Tasting<br />
Organizing a wine tasting is easy; all you&#8217;ll need are good friends and (hopefully) good wine. Whether you decide to plan an occasion that&#8217;s formal and serious or casual and low-key, a blind tasting (where the tasters don&#8217;t know which wine is in which glass) is your best bet. Concealing the wine&#8217;s identity is vital if purely sensory evaluations are to be made. Otherwise, the power of suggestion can cloud a taster&#8217;s ability to honestly evaluate a wine; impressions are likely to be influenced, whether consciously or unconsciously, by expectation rather than by what the senses actually encounter.<br />
The More the Merrier?<br />
So, how many people should you include in your tasting group? In general, the more the merrier! More tasters means more opinions, increasing the base for interaction. And if you plan to pool your resources to finance the wine purchases, more people can mean a wider range and/or better-class of wines. Still, keep in mind that a bottle of wine can only go so far. A regular (750 ml) bottle contains about 25 ounces. If a tasting sample is two ounces, one bottle can accommodate up to 12 people. But, if the group exceeds 12 participants, it will be necessary to either buy more than one bottle of each wine to be sampled or pour smaller tasting samples from a single bottle.<br />
Before the first tasting, get your friends together for a planning session. Now is the time to work out the details so the event itself can be a festive, carefree occasion.<br />
Choose a date and time for the get-together. Who will host the tasting? Will the host be responsible for setup and cleanup? For purchasing the wines? Decide in advance which group member will be responsible for each element of the event. After all, it&#8217;s impossible to have a tasting without the wine! Pick a site for the tasting. Make certain the location has sufficient table space and chairs to accommodate the tasters and their glasses. The most comfortable and hassle-free site is probably a cozy dining room. If this isn&#8217;t possible, then you&#8217;ll have to be creative. Does a group member have access to a semipublic room, such as a recreation room at a condominium or an apartment complex? If so, consider booking the room for the tasting. Other possibilities include a meeting room in an office suite or a separate room in a restaurant (the owner might be persuaded to make the room available if your group dines at the restaurant following the tasting).<br />
Determine how many wines will be sampled. Agree on a minimum number, so the host will know how many wines to obtain. Also decide whether the tasters are to bring their own glasses. If so, consider tasting six wines; boxed stemware often comes in sets of six, and the compartmental boxes make carrying the glasses to and from the tasting much more convenient.<br />
Decide how the wines will be paid for. Some wines might be significantly higher in price, and some tasters may drop out along the way, so it&#8217;s important to resolve this issue early on. Consider simply dividing the total cost by the number of people participating. Don&#8217;t forget to factor in any amount spent for bread or cheese! Or, take turns hosting (and paying for) the event. Perhaps you can make it a monthly get-together!<br />
Create or obtain a tasting sheet. Many wineries have tasting sheets that can be adapted for the group&#8217;s purposes, or you can create your own. Whatever you choose to do, make sure to duplicate the form so that you have a copy for each taster.<br />
The tasting sheet should include the number or letter that corresponds to each wine; space for comments; points awarded, if desired (the common systems are the 20-point and 100-point scales); an individual ranking, from first place to last place; and total group ranking points. To calculate total group ranking points, find out what ranking each taster gave each wine. If six people believe the same wine deserves to be in first place, it gets six group points (631=6); if they all put the wine in sixth place, it gets 36 points (636=36). The lower the total ranking score, the higher the group ranking for the particular wine.<br />
Choose a tabulator and create a tabulator&#8217;s sheet. Decide which group member will act as the tabulator. This can change from tasting to tasting, or the same person can do it each time. The tabulator compiles each taster&#8217;s rankings as well as each taster&#8217;s point awards, if points are used (keep in mind that rankings are much more important than point values; awarding points is a very subjective exercise and can lead to considerable confusion). Design a sheet that enables the tabulator to readily calculate these figures. You might also want to develop simple slips of paper for group members to use to transmit their rankings (and scores, if used) to the tabulator.</p>
<p>Choosing a Wine-Tasting Theme<br />
Coming up with a theme for a wine tasting requires some imagination; you have so many choices! To begin, decide whether the tasting will be vertical or horizontal.<br />
A vertical tasting features the same brand of wine from different vintages: for example, Winery X Cabernet Sauvignons from 1995 to 2000. A horizontal tasting includes wines from different wineries that are the same type and vintage: for example, six different bottles of Alsace Gewurztraminer, each with a vintage date of 2000. A horizontal tasting can be as basic as comparing newly released varietals (like Cabernet Sauvignon or Chardonnay) that are from the same appellation or growing area. Or it can be much more complicated; it&#8217;s up to you!<br />
Many resources are available to assist in coming up with a theme. If your group is just beginning to acquire some wine knowledge, a reliable wine merchant should be happy to suggest wines that fit the theme. If you&#8217;re operating within a budget, let the merchant know up front. Don&#8217;t make the mistake of pumping the merchant for advice and then going to a discounter to get a cheaper price; you make no friends that way.<br />
Perhaps the next best thing to a wine merchant is a magazine or newspaper. Such publications are usually available at newsstands and wine shops. Or go online to find a helpful site. These sources feature wine-tasting notes, sometimes with point scores or evaluation symbols, sometimes without.<br />
Obtain the wines that fit the theme. The individual paper bag in which each wine is wrapped before it leaves the store can be used to conceal the wine&#8217;s identity at the tasting. Make sure there are enough bags for all the wines (perhaps before you leave the store).<br />
If the group can afford it, taste better-quality wines. Ordinary wines are for everyday drinking, not for group deliberation. Moderate-quality wines afford good tasting practice and can be interesting but often reflect a &#8220;sameness&#8221; that makes comparison difficult. The most vivid characteristics of a growing area or a vintage are most easily identified in a wine of higher quality.<br />
Do some research on the wines to be tasted. Call the wineries or visit their Web sites for winemaker&#8217;s production data and tasting notes. Telephone numbers and Web addresses can often be found on back labels. Also consider copying pertinent tasting notes from published sources, and distribute them at the discussion stage of the tasting.<br />
A few weeks in advance of the tasting, the host should remind everyone of the date and time. If all or most of your friends have e-mail, this should be a quick and easy task. Include the theme of the tasting, and remind the tasters to bring their own glassware, unless the host is providing the glasses. Also request that the participants avoid wearing cologne or perfume to the event.<br />
It&#8217;s Almost Tasting Time!<br />
If the wines are in the refrigerator, remove them about one hour before the start of the tasting so they can warm up a bit; wine that&#8217;s too cold can&#8217;t be adequately evaluated. Remove the foil capsules, pull the corks, and bag each wine. Secure the top of each bag with a rubber band, or simply twist the top of the bag around the neck of the bottle. Leave the task of numbering or lettering the bags to another participant (who hasn&#8217;t seen the wines being bagged), so that you can taste them blind too.<br />
Get the table area set up with enough chairs for the participants. If possible, use a white table cover to make color and clarity evaluations easier. Each place setting should have<br />
either a small spit bucket or a large plastic cup. Spitting is highly recommended to keep as clear a head as possible while all the wines are being evaluated. The group&#8217;s evaluation and reporting forms should also be at each place setting.<br />
Put out a sufficient quantity of sliced plain baguettes and pitchers of water to act as palate cleansers. A water glass at each setting is thoughtful, as is a pencil or pen. Keep the tasting area free of strongly scented things, such as flowers or cooked foods.</p>
<p>How to Make the Most of Your Wine Tasting<br />
There are some simple steps you can take to ensure that your wine tasting is a sparkling success.<br />
No smoking and go easy on the cologne or perfume. Smoking at a tasting may be inconsiderate, even offensive, to many people, but it also seriously impairs the ability of the smoker and others nearby to evaluate the wines. For the same reason, avoid heavy use of cologne or perfume.<br />
Keep talking to a minimum during evaluation. Although a wine tasting doesn&#8217;t have to be a solemn occasion, it also shouldn&#8217;t be a gab session, at least not until after the rankings (and scores, if used) have been turned in. There&#8217;s nothing more distracting than a chatterbox, except maybe two chatterboxes, in the tasting room.<br />
Offer a short introduction. The host should give the tasters some general information about what&#8217;s in front of them. For example: &#8220;These are Pinot Noirs from the 2000 vintage; all come from Santa Barbara County. Prices range from $18 to $25.&#8221;<br />
Pour small tasting portions. Wine glasses, one for each wine, should be set out in a semicircle in front of each taster. The bagged bottles (which have been numbered or lettered by someone other than the host) should be passed among the tasters so each can pour a small sample (approximately two ounces).<br />
Consider purchasing a pouring disc, a great, inexpensive, reusable tool that facilitates pouring in measured amounts without dripping. Made of flexible heavy foil, these discs fold into a funnel shape and fit into the bottle opening. They come several to a packet and can be found in most wine stores.<br />
If desired, tasters&#8217; glasses can be lettered or numbered on the base with a wet-erase pen, available at most stores that sell stationery or office supplies. This avoids confusion if the glasses are moved out of order at some point. The number or letter on each glass should conform to the number or letter on the bag concealing the wine. The ink readily washes off the glass in warm water.<br />
Hold off on eating until later. Spicy, aromatic foods, like sausages and heavy cheeses, can get in the way of pure wine evaluation. Sliced baguettes and cubes of mild, white cheese or simple water (without flavoring) are sufficient to clear the palate between sips. If desired, appetizers or a light meal can be organized to follow the tasting, or you can all sit down to a full meal; there you can resume social interaction and see how perceptions of the wines change when enjoyed with food.<br />
Discuss the wines. After the tabulations are complete, the wines should be unbagged one by one. For added interest, move from the last-place wine to the first-place wine. The tabulator should announce each wine&#8217;s group ranking and total ranking points and, if scores are submitted, the average score (add all the scores together and divide by the number of members submitting scores).<br />
After all the results have been announced, a discussion may be held, with a participant selecting one wine to talk about, followed by another member offering his or her comments about the same wine, and so on around the table.<br />
Before your friends go their separate ways that day, take the opportunity to discuss the next wine tasting. Who will be the host and when and where will it be?<br />
With very little effort, your circle of friends can get together on a regular basis to enjoy and broaden their knowledge and appreciation of one of life&#8217;s greatest pleasures.<br />

After tasting mine, someone remarked that it might go well with a communion wafer. The rest of the wines that we tried that night never were able to overcome the taste of the first glasses of plonk. The wine bar’s first responsibility is to serve good wine. And for those that don’t: uh, duh.</p>

<p>First thing, don&#8217;t be intimidated or dissuaded. Second, don&#8217;t get confused. A person doesn&#8217;t have to be a certified  Sommelier to pour a glass of Pinot Noir from Sonoma or tell anyone that the 2002 vintage was a top-notch year. However, there&#8217;s a level of prestige to wear on one&#8217;s jacket and to be a certified Sommelier, and even higher to be acclaimed a Master Sommelier with an MS behind one&#8217;s name. It would also be a disservice to neglect the Master of Wine (MW) category as well, a certification indicating a high mastery of wine knowledge.</p>
<p>What&#8217;s the difference between the two certifications of MS and MW? Think of it as the MW being more academic and learning more wine theory and less about service, whereas an MS also delves into more practical education and takes a hands-on approach regarding the wine business, beverage management, and wine knowledge. Never fear, both the Institute of Masters of Wine (MoW) and Court of Master Sommeliers (CMS) require a significant amount of tastings to pass their programs and know wines. Either way, if you pass the final examination, you will be acknowledged as a peerless expert of wine. In fact, the number of MS and MW Sommeliers worldwide are a rare breed, with 247 Master of Wine holders and only 124 Master Sommeliers floating around the world.</p>
<p>Both organizations originated in Great Britain, with the Institute of Masters of Wine starting in 1953, with The Court of Master Sommeliers holding their first exam in 1969. Debate amongst yourselves about which is the better &#8220;M&#8221; to hold. Both require extensive study and time to achieve, with no guarantee of succeeding. <p>What is a sommelier, let alone a Master Sommelier, and how do you become one? The American Heritage Dictionary defines a sommelier as &#8220;A wine steward in a restaurant.&#8221;. A steward is then defined as &#8220;A person who manages another&#8217;s property.&#8221;. This does not quite tell the whole story. The job of a sommelier is to manage the wine selection, purchasing, receiving, storage, sales and service for a restaurant, club, hotel or other institution. Although there is no legal requirement in the U.S. to be certified for this position, there is one internationally recognized organization for certification. The Court of Master Sommeliers was founded in London in 1977. They conduct education and testing for restaurant wine professionals. There are three  four levels of certification within the organization: introductory (formerly called certificate), advanced and MS Diploma (Master). The exams are held annually in the United Kingdom and North America.</p>
<p>The Introductory Course is a two day educational seminar. It covers wine regions of the world, viticulture (vineyard management), viniculture (winemaking), appellation rules for various countries and regions, production methods for beers and spirits, cigars, food and wine pairing, service and blind tasting technique (the steps to evaluating and identifying wines by appearance, smell and taste). At the end of the seminar is a multiple choice exam for which a score of 60% is required. I could not get an exact historical average but I would estimate that 90% of those taking this exam pass. This course is very helpful to any restaurant wine professional or manager and the Introductory exam can be passed with just a little advanced preparation.</p>
<p>As of 2005 there is a step between Introductory and Advanced called Certificate. See the Court of Master Sommeliers&#8217; web site for more information on this exam. Thus far approximately 65% of the people attempting this new exam have passed, earning the title Certified Sommelier.</p>
<p>The Advanced Course is a significant step up from the Introductory. It covers all of the same material but at a more detailed level. The pace is also faster as it is expected that you are prepared for the exam prior to attending the seminar. The seminar is also one day longer than the Introductory Course. For the first time, candidates were required to apply to be accepted for the exam in 2001.</p>
<p>The test is the real difference though. It is a two day test in three sections. The first section is theory. It is an 82 question test with 20 multiple choice and 62 short answer questions. One hour is allowed for completion.</p>
<p>The second section is blind tasting. The candidate enters a room with a table with six glasses of wine on it and two Master Sommeliers sitting on the opposite side of the table. They listen as you swirl, sniff, taste and talk about each wine. You have 25 minutes total to identify all six. These wines can be from anywhere in the world, but they stick to classic examples. Points are given for your analysis and deductive reasoning as well as your identification of the wines.</p>
<p>The final section is the hardest of all. Restaurant service somehow seems harder when it is in a test environment. There are service stations where the Master Sommeliers judge your skills at opening still and sparkling wines, decanting, cigar service, freehand pouring of spirits, wine and food pairing, proof reading of wine lists, setting tables for a variety of menus, conversing with the guests and complaint resolution. While this is going on they also throw questions at you to see how you react. A passing score of 60% is required on all three sections. Approximately 25% of candidates pass this exam.</p>
<p>The final test is by invitation only. You are also required to wait at least one year between passing the Advanced and your first attempt at the Master. The test is the same as the advanced but the theory portion is verbal instead of written, the questions are much more detailed and the score required to pass is 75%. An example of the difference between an Advanced question and a Master question might be: name six of the Anbaugebiet (high quality wine regions) in Germany for the Advanced versus name all 13 Anbaugebiet for the Master. The good news is that you can pass an individual section and retain it for three years, only re-taking the portions you failed. The pass rate for this exam is approximately 4%, though very few people pass it on their first attempt. After 29 years of testing only 142 people in the world have completed the Master Sommelier (MS) level. The next time you see MS after someone&#8217;s name you will know what they went through for those 2 letters.</p>
