”I have to rush back to Manila after this and I am hoping all the information had been completed on what happened (in Sabah)…” Aquino said before addressing the more than 2,000 crowd at the Heroes Hall along Lazatin blvd. here.<br />
Accompanied by Transportation Secretary Jun Abaya, the President arrived at 2:05 pm and proceeded to the stage to acknowledge the crowd but went down again to get updates on the Sabah incident.<br />
”We will continue our program while our President is monitoring the situation in Sabah,” Lea Navarro, master of ceremony, told the crowd.<br />
Team PNoy senatorial bets Alan Peter Cayetano, Aquilino Pimentel III, Ramon Magasaysay Jr., Jamby Madrigal, Riza Hontiveros and Bam Aquino showed up in the Pampanga sortie while Loren Legarda, Grace Poe and Sonny Angara sent proxies.<br />

			<content:encoded><![CDATA[<p>ANGELES CITY–First District congressional bet Francis “Blueboy” Nepomuceno and Vice mayorable Tony Mamac on Friday were no-show in the peace covenant signing staged at the Holy Rosary Parish Church here for a secure and fair elections.<br />
In an interview, mice mayoralty candidate Mark Allen Sison, who is a known ally of Nepomuceno, said the former mayor and congressman had a prior appointment which he could not cancel.<br />
Sison said he and Nepomuceno received their invitation for the peace covenant signing just two days ago, the reason why the latter could not cancel his prior appointment.<br />
“Nareceive namin ‘yong invitation for the peace covenant two days ago lang at gabi pa namin natanggap ito,” Sison said.<br />
Meanwhile, Mamac told Headline in a phone interview that he was not able to attend the signing also because of a prior commitment in Manila.<br />
“Although I was not physically present in the signing, I support the covenant 100 percent,” Mamac said.<br />
Bishop Pablo Virgilio “Ambo” David, for his part, said the candidates gathered at the church to sign the covenant because it is a “neutral ground.”<br />

Decaf is coffee that has most of the caffeine removed through the use of either water or trichloroethylene on the beans.<br />
Not everything about the coffee bean has been exposed by science, however. Scientists hypothesize that an unknown chemical agent which stimulates the production of cortisone and adrenaline, two stimulating hormones in the human body, is present in coffee, however these two hormones aren’t particularly harmful in themselves v at least in coffee sized doses.<br />
Coffee has a variety of helpful uses for humans v gardeners use the grounds as fertilizer to great success, while others say that coffee increases the effectiveness of pain killers, and can even help fight asthma, possibly due to the enhanced adrenal effect from the caffeine. In women, scientists have shown that coffee reduces suicidal tendencies, while it may also prevent gallstones and gallbladder disease in men, and reduce the incidence of diabetes by some 40%. Lastly, coffee’s stimulant effects and fat burning potential sees some quarters of the medical industry pushing it as a means of lowering the incidence of heart disease.<br />
How much of this is real and how much is hokum stemming from wishful thinking in coffee drinkers remains to be seen. But one thing we can be sure of it tastes great!<br />

<p>There is little consistency in roast descriptions; one roaster&#8217;s full city roast is another&#8217;s espresso roast. In recent years, regional variations have blurred. For commercial reference, an objective reference has been established by the SCAA called the Agtron gourmet scale, ranging from #95 (lightest) to #25 (darkest). A sample of roasted coffee is illuminated, and the reflectance of certain near-infrared wavelengths is measured; this closely determines the thermal absorbencies of the coffee. The machine that takes these measurements is quite expensive, so a less expensive alternative exists in the form of a series of color tiles that are compared to the roasted and ground beans.<br />
Nevertheless, some generalizations can be made, though again the distinctions are, again, somewhat arbitrary:<br />
Light Cinnamon<br />
Light tan, dry, unpleasantly sour, little or no body. Reminiscent of cereal.<br />
Cinnamon<br />
Slightly darker than light cinnamon, but the taste and texture is little different.<br />
Light or New England<br />
Light brown, sourness has decreased, but the cereal taste is largely gone.The name derives from its original use for inexpensive coffee in the eastern U.S.<br />
American<br />
Light to medium brown; once the predominant roast in the United States. Varietal variance distinct.<br />
Viennese or Full City<br />
Medium brown, the norm for most of the Northwestern US. Body, flavor, and aroma are quite balanced<br />
Espresso<br />
Medium to dark brown with drops of oil on the surface, greater sweetness, carbonized sugars lend a caramel flavor; body exceeds acidity.<br />
French<br />
Surface is dark brown and lightly coated with oil; burnt notes become noticeable, acidity low.<br />
Italian or Dark French<br />
Almost black, with a lot of surface oil. Tasted clearly burnt; acidity and even body are almost undetectable.<br />
Spanish<br />
Oily and black and very oily; overwhelming charcoal taste.</p>

Hawaii is the only state in the United States that grows coffee, though several US territories also grow it. Compared to Jamaican Blue Mountain, Kona&#8217;s lower per-pound price yields a coffee whose quality is arguably more commensurate with its price.<br />
Located on the western coast of the island of Hawaii, Kona stretches twenty miles north-south and two miles east-west, and is divided into the North and South Kona Districts. Under federal and state regulations as well as federal trademark, only coffee grown here may be called Kona. The Kona region constitutes somewhat less than half of the 7,600 acres devoted to coffee on the Hawaiian Islands; most of the remainder—approximately 4,100 acres—is on Kauai. Kona is the oldest continually planted region for Hawaiian Island coffees; most of the other Hawaiian coffees were planted during the 1980s on available fallow sugar lands after the demise of the Hawaiian sugar plantations.<br />
Kona coffee, Var. typica, was first planted in 1829 and has continued to thrive; many of the trees are over 100 years old. Most of the 680 or so farms are less than four acres, although there are also a few huge estates. Due to the island&#8217;s isolation and the state&#8217;s strict import restrictions on agricultural products, minimal pest control is required and, as a result, no pesticides are used, nor may they legally be used. With a rainy growing season and a cool, dry harvesting season, the region is particularly well suited to coffee production.<br />
As with Jamaican Blue Mountain blends, Kona sold as a &#8220;blend&#8221; may contain small quantities of Kona. In the state of Hawaii, coffee lableed &#8220;Kona blend&#8221; may by law contain as little as ten percent real Kona coffee; elsewhere, there are no set minimums. The Kona Kai scandal of 1996 was a notable instance of fraud: Costa Rican and Guatemalan coffee was relabeled and sold as Kona. This effected some changes in the sale of Kona, with a &#8220;100% Kona&#8221; certificate or a &#8220;Kona Coffee Council 100%&#8221; seal available. All large quantities of unroasted Kona Coffee will have the Hawaii State Certification tag on the burlap bag; the consumer does not usually get to see these bags, but you might be able to ask the roaster to show them to you. Not all Kona farmers pay for certification—it is not required for the sale of roasted beans or smaller quantities of green—so legitimate Kona may not be specifically labeled as such. Buy directly from a Kona farm, or a well-regarded retailer you trust. Note that although Kona coffee farmers may meet the standards of Fair Trade coffee, for technical reasons they cannot be certified as such.</p>

Many people grind their beans themselves, to ensure a fresh and flavourful cup of coffee. But not as many people roast their own. Whether you are a home-roaster or not, knowing the different roast levels and their taste characteristics can be helpful when purchasing coffee.<br />
What exactly does roasting do? The sugars, fats and starches that are within the bean are emulsified, caramelized and released. This creates the delicate coffee oil. This oil is what gives coffee its distinctive aroma and taste.<br />
In general, lighter roasts are sharper and more acidic than the darker roasts. Darker roasts have a fuller flavor. Beans that have been over-roasted will take on a burned, smoky or charcoal flavor. Also, there is less caffeine in the darker roasted coffees than in the lighter ones. The roast alone doesn&#8217;t determine the resulting coffee taste or quality. The origin of the beans makes a big difference. A bean from Ethiopia will taste differently than a bean from India, even if they are both French roast.<br />
Here are the basic roast terms. Many are used interchangeably, so be careful.<br />
Cinnamon<br />
The bean is light brown, and dry (no oil visible). The flavour is baked or &#8220;bready&#8221;, like toasted grain. There will likely be definite sour tones. There is not much body in cinnamon roasted coffee.<br />
New England<br />
A term not as frequently used as the others, though this roast is apparently common in the eastern United States. It&#8217;s a little darker than the cinnamon roast, but without the grainy flavour. New England roast will still have some sour tones to it.<br />
American, Light<br />
Medium light brown beans. This roast is the norm for eastern USA. This roast (and sometimes cinnamon as well) is the most often used for cupping or professional tasting.<br />
City, Medium<br />
The colour is darker still, more of a medium brown (think chocolate). This roast is common in the western parts of the USA. This roast is a good choice to taste the differences between varietals.<br />
Full City<br />
Medium dark brown beans. The beans will start to show some oily drops on the surface with this roast. Full City will have caramel or chocolate undertones.<br />
French, Espresso<br />
Beans are starting to get dark brown, and French roasted beans are shiny with oil. There is less acidity, but with burned undertones. This roast is often used when making Espresso. Many people think this is the darkest roast available, but that&#8217;s not true.<br />
Italian, Dark French<br />
Similar to regular French, but more so. Darker and oilier looking, and with a stronger burned flavour.<br />
Spanish<br />
Darkest roast of all. Colour is nearly black, and the flavour is flat with a charcoal undertone.<br />

What’s the coffee culture like in your city? Coffee culture, a term that Wikipedia defines as “a term used to describe a social atmosphere that depends heavily on coffee shops, espresso in particular, as a social lubricant”. While that article goes on to talk specifically about Seattle and its thick density of coffee shops and cafes, the truth is that coffee culture has existed for centuries, and the popularity of coffee shops in the late 1900s is just another little bubble in the history of coffee culture throughout the world.<br />
The earliest record of coffee culture dates to the early 1400s in Yemen, one of the earliest exporters of coffee. The tradition of coffee houses, on which the establishment of a coffee culture depends, began in Mecca, and was encouraged by those in power who felt that the influence of coffee was better than that of another popular stimulant, kat. Those coffee houses were called kaveh kanes, and became social hubs where men could gather over coffee to discuss business, exchange gossip, play chess and enjoy entertainment – all for the price of a cup of coffee. Sounds an awful lot like the coffee shops and coffee culture of today, no?The Yemeni coffee houses were also places where politics were discussed and rebellion fomented, which eventually led to their attempted suppression – not once, not twice, but repeatedly. The coffee culture was so entrenched by this time, though, that it proved nearly impossible to eradicate the coffee houses. Instead, the government eventually cashed in on the trend by taxing coffee by the cup. Much later, a Dutch traveler noted about the coffee culture in Yemen that the coffee houses were “the only theatres for the exercise of (non-religious) eloquence. … Young scholars walk about and deliver discourses on all sorts of subjects. They make up the most wonderful tales, inventing, singing, making tales and fables”. The manuscript, written by Carsten Niebuhr in the 1760s, sounds remarkably like an open mike reading at a coffee house today.<br />
Between the beginnings of coffee houses in Yemen and Niebuhr’s visit there, though, coffee culture had started to spread throughout the world. By 1475, there are written records of a coffee house called Kiva Han in Constantinople. Turkish coffee, brewed in an ibrik, was served along with entertainment and – no surprise – political and social commentary. The first recorded coffee house in Europe was, interestingly, the result of the spoils of war. The story of that first cafe is possibly one of the most romantic in the annals of coffee culture. The Turkish armies had encamped in Vienna, taking over the city. A young Pole by the name of Franz Georg Kolschitzky, had been instrumental in engineering the defeat of the Turkish. He and a servant slipped into the Turkish encampment and wandered around it, gathering information that he then carried with him to the Christian troops of King Sobieski and Duke Charles of Lorraine. His message brought the troops to Constantinople just in time to save the city. When asked to name his reward for his service, Kolschitzky asked for 500 pounds of ‘camel fodder’ that had been left behind by the Turks. Using that camel fodder – green coffee beans – Kolschitzky established Vienna’s first coffee house, Kolschitzky’s Cafe.<br />
Coffee culture spread througout Europe quickly and made its way to the British isles. Between 1670 and 1685, coffee houses sprouted up throughout London, attracting scholars and politicos. Writing in 1675, a young man noted,<br />
“Now, whither shall a person, wearied with hard study, or the laborious turmoils of a tedious day, repair to refresh himself? Or where can young gentlemen, or shop-keepers, more innocently and advantageously spend an hour or two in the evening, than at a coffee-house? Where they shall be sure to meet company, and, by the custom of the house, not such as at other places, stingy and reserved to themselves, but free and communicative; where every man may modestly begin his story, and propose to, or answer another, as he thinks fit…In brief, it is undeniable, that, as you have here the most civil, so it is, generally, the most intelligent society;”<br />
Nearly 350 years ago, the unnamed scholar described what is still the dominant coffee culture in coffeehouses throughout the world – a place where people come to spend an hour or two, meet company, tell stories and entertain each other. Coffee culture revolved around entertainment, erudition and politics. In London, the coffee houses were nicknamed “penny universities”, where a man could learn more in an evening of listening than he could in a month of studying. In 1675, King Charles II tried to ban coffee houses as ‘hotbeds of revolution’, but had to withdraw his proclamation after just 11 days because of the public outcry against it. The coffee culture was so entrenched and involved that it birthed other innovations in society. Jonathan’s Coffee House in Change Alley, for instance, was the birthplace of the London Stock Exchange, and Edward Lloyd’s Coffee House eventually became the headquarters for Lloyds of London, still the world’s most famous insurance company.<br />
The coffee culture of Paris is credited with spawning the French Revolution. In 1773, the American colonists adopted coffee drinking as their patriotic duty after the British government allowed the East India Tea Company to import their tea untaxed, creating an unfair advantage for them over domestic companies. Coffee vendors and coffee shops were well-established in Italy and throughout Prussia. In every one of those cities, coffee, culture and politics became intertwined.<br />
Today, the general impression of the coffee culture is not much different than it was back in Yemen and Constantinople in the 1400s and 1500s. Coffee houses are congenial places where people meet, exchange ideas, listen to storytellers, enjoy art and entertain each other. While the big chains spread across the country and across the world, independent coffee shops continue to offer more than a fix of espresso – they offer a heady shot of coffee culture well-mixed with company, political discourse and a chance to mingle with others who are as enchanted by the atmosphere as they are the bean.<br />

Often used as a synonym for coffee excellence, Jamaican Blue Mountain refers to a specific region on the island of Jamaica: the Blue Mountains, of which Blue Mountain Peak is the highest point on Jamaica at 7,402 feet. Only coffee grown on certain estates may be called &#8220;Blue Mountain&#8221;: Wallenford, Mavis Bank, Silver Hill, and Moy Hall registered the rights to call their product Blue Mountain, and Old Tavern Estate was in recent years awarded the right to use the name. The sale, roasting, and export of Blue Mountain coffee is strictly controlled by the Jamaican government and the Coffee Industry Board.<br />
Jamaican Blue Mountain (or JBM) is quite expensive, often $30 a pound or more, but the general consensus of professional roasters today is that the brand rides on its reputation and mystique, and that the taste of the modern day JBM is not as good as the JBM of the 1970s or 1960s.<br />
Further, there is a considerable quantity of counterfeit JBM out there — not surprising, considering that the quantity sold each year worldwide handily outstrips the actual yearly production. Not all of it is outright counterfeit — some is simply misleading: you may see &#8220;Jamaica Blue Mountain style&#8221; coffee, or &#8220;Jamaica Blue Mountain Blend.&#8221; The former likely doesn&#8217;t actually contain any JBM, and the latter need only contain as little as 5% authentic JBM to be called a JBM Blend. There is also Jamaica High Mountain, which refers to coffee grown by estates in the area that cannot use the JBM label. These may well be high quality coffees, but they should not cost nearly as much as true Jamaican Blue Mountain.</p>

Introduction &#8211; How Coffee is Roasted</p>
<p> Whether you roast your own coffee beans or buy coffee from a roaster, it helps to understand the basics of coffee roasting. We&#8217;ll introduce some basic terminology and explain the different roast levels.</p>
<p>A roasting process is required to &#8220;cook&#8221; green coffee beans and expose the natural flavors in the coffee.</p>
<p>Slow Temperature Increase: First, green coffee beans are placed in a roaster and heated. As the roaster heats up, the beans are tumbled like clothes in a dryer to allow the heat to toast the coffee evenly. The temperature is slowly raised to between 460°F and 530°F, allowing heat to penetrate slowly to the center of every coffee bean.</p>
<p>First Color Change: Green coffee beans contain a significant amount of moisture, and you&#8217;ll notice the release of a significant amount of steam. As moisture escapes the roasting coffee, the green coffee beans will first turn yellow, then turn brown.</p>
<p>First Crack: When the temperature reaches a critical point, the coffee beans will swell (increase in size) significantly. Soon thereafter, a loud cracking noise will be heard as the remaining moisture bursts out of the coffee beans. At this point, the sugars in the coffee have begun to caramelize and the coffee is officially considered &#8220;roasted&#8221;. At the time of first crack, however, the beans are at the lowest roast level (we&#8217;ll explain the roast levels a little later).</p>
<p>Rapid Second Color Change: After the first crack, the coffee beans caramelize and release oils quickly. During this phase, the coffee roasts very quickly. The color darkens rapidly and requires quite a lot of finesse and timing to achieve different precise roast levels. Usually the roasting process is stopped sometime during this phase.</p>
<p>Second Crack: another loud crack will be heard, and this is called the Second Crack. Most roastmasters stop the roast before the second crack, but sometimes the second crack is desirable. The second crack is usually harder to identify than the first crack, and the coffee is very dark roasted by the time the second crack occurs, if it occurs at all. If the coffee is roasted much beyond the second crack, all of the sugars in the coffee will have caramelized, yielding a very harsh, bitter cup of coffee.</p>
<p>Stopping the Roast: The roastmaster uses the aroma and color (and sometimes special instruments) of the coffee to determine when the coffee is done roasting. It takes a tremendous amount of experience to know exactly when to stop the roasting process. To make sure the beans stop roasting immediately, the roasted coffee must be cooled quickly. Cooling is usually performed by either flooding the roaster with fresh cold air, or by spraying the beans with water.</p>
<p>Degassing After Roasting: After the coffee is roasted, the beans go through a process called degassing. For approximately 24 hours after roasting, the bean releases Carbon Dioxide (CO2) gas. The degassing phase is critical and should not be ground or brewed until all of the CO2 has been released.<br />
Knowing Your Coffee Roast Levels</p>
<p>Roasting coffee causes the sugars, fats, and starches contained in the bean to emulsify, caramelize, and release. The delicate coffee oil that results from roasting is what gives coffee its unique, distinctive aroma and taste.</p>
<p>In general, lighter roasts tend to be sharper and more acidic than darker roasts. Darker roasts have a fuller flavor, though. Coffee that is over-roasted tends to have a smoky, charcoal-like, or burned flavor (not desirable). Interestingly, darker roasts actually have less caffeine than the lighter roasts. Every coffee is different, though. Colombian coffee will taste different than Sumatra coffee, even if the roast level is exactly the same.</p>
<p>Light Roasts<br />

The bean is light brown and dry with no visible oils on the surface of the bean. The flavor is baked or bread-like, similar to toasted grain. (Full City, Light French, Viennese)<br />
Medium dark brown beans. Some oily drops will be present on the surface of the bean when roasted Full City. Full City roasted coffee will exhibit some chocolate or caramel undertones. Light French or Viennese is ever so slightly darker than Full City.</p>
<p>Dark/High Roasts<br />
(After Dinner, Continental, European, French, New Orleans, Espresso)<br />
At this level, the beans are very dark brown (but not black). French roasted beans are shiny with an oil coating on the surface. Some burned undertones will be present and acidity is lower. This is a popular roast for making espresso, though lighter roasts are used also. Many people believe French roast to be the darkest roast, but they have not had Spanish roast yet&#8230;</p>

Spanish is the darkest roast of all (Dark French and Italian is a little lighter). The coffee beans are nearly black in color and the flavor tends to be flat with charcoal undertones. Pretty much all of the sugar in the beans has been caramelized and toasted thoroughly. Most Americans would turn their noses up to coffee this overcooked but, hey, to each his own.<br />
