Food: Pinotage Grapes
About Pinotage Grapes
Pinotage is a red wine grape that is South Africa’s signature variety. It was bred there in 1925 as a cross between Pinot noir and Cinsaut. It typically produces deep red varietal wines with smoky, bramble and earthy flavors, sometimes with notes of bananas and tropical fruit, but has been criticized for sometimes smelling of acetone. Pinotage is often blended, and also made into fortified wine and even red sparkling wine. The grape is a viticultural cross, not a hybrid. Both of Pinotage’s ancestors are members of Vitis vinifera. The first recognition came when a Bellevue wine made from Pinotage became the champion wine at the Cape Wine Show of 1959. This wine would become the first wine to mention Pinotage on its label in 1961, when Stellenbosch Farmer’s Winery (SFW) marketed it under their Lanzerac brand. This early success, and its easy viticulture, prompted a wave of planting during the 1960s.

Pinotage – Wine of the Week

Pinotage is the cilantro of the wine world — you either love it or hate it, but very few people sit on the fence.
A cross between Cinsault and Pinot Noir, Pinotage was created in 1925 by a Stellenbosch, South Africa university professor. The idea was to reap the best of both grapes and combine the sturdiness of Cinsault in the vineyard with the world-class taste of Pinot Noir in the glass.
Unfortunately, sometimes beautiful parents produce an ugly child, and though Pinotage lovers would disagree, I think this grape falls squarely in the “do not cross” category. Why? Because, more than its good qualities, the wine is known for its burnt-rubber aftertaste.
There are a lot of wine descriptors that critics enthusiastically use to describe a high-quality wine. Cat’s piss. Horse leather. Barnyard funk. But burnt rubber? Definitely not on the list.
Read more about this wine after the jump.
To be fair, not all Pinotage has this taste in spades. In some wines, it’s more subtle, and in others, nonexistent. But no one advertises on the bottle: “Warning: This wine tastes like burnt rubber,” so you never know what you’re going to get.
We had a wine tasting last weekend, and I threw a bottle of Pinotage in. I tasted everything before our guests came over, and at first the Pinotage lured me in: It was a an inexpensive Westerland 2005 Pinotage from South Africa ($10), and it smelled of leather, smoky flint, and dried cherries and prunes. A sip confirmed the nose, but then — oh, then — the burnt rubber crept over my tongue like a stealth fungus, and I gagged and stuffed cheese in my mouth to mask the horrible taste, which lingered for a couple of hours. Talk about a long finish.
I put the bottle aside, but people got interested in it, so I warned them to try at their own risk. To my astonishment, several of our guests not just tolerated the Pinotage, but actually preferred it to the other wines. One friend experimented with giving the wine some air for 10-15 minutes, and the acrid rubber was less obnoxious, but still there. I was amazed anyone liked it at all, but it’s a good lesson about wine and food taste in general: One person’s burnt rubber is another person’s paradise.
Have you had Pinotage? Do you like it or hate it? Vote in the poll below!

June 1, 2011
Pinotage Still Country’s Trump in World of Wine
Johannesburg — THE promotion of uniquely South African grape variety Pinotage is breaking new ground with new international markets discovering the country’s signature taste at least 85 years after it was created by Abraham Izak Perold, the first professor of viticulture at Stellenbosch University.
Pinotage wines have recently been welcomed in several states in the US and certain European Union markets, especially Scandinavia, and Russia.
The Pinotage Association is targeting Canada and Asia as some of the wine has already reached the Japanese market.
“Prof Perold is the man without whom we wouldn’t be savouring Pinotage wines here and now … he is to the wine industry what our former president Nelson Mandela is to humanity and SA,” says Mr Beyers Truter, founder and chairman of the Pinotage Association.
Pinotage is a red wine grape that Prof Perold bred in 1925 with a cross between Pinot noir and Cinsaut. The Cinsaut is known as Hermitage in SA, hence the name Pinotage.
The grape is a viticultural cross of two varieties of Vitis vinifera, not a hybrid.

It produces deep red varietal wines with smoky, bramble and earthy flavours, sometimes with notes of bananas and tropical fruit. Pinotage is often blended, and also made into fortified wine and even red sparkling wine.

However, in its early years Pinotage was criticised by wine testers who said at times it smelled of acetone.

“Because of the efforts of South African makers of Pinotage wines, SA has both practical and patriotic reasons for aggressively promoting Pinotage wines produced from a grape varietal which provides wines of superior quality,” says Mr Truter, who is now cellar master and owner of Beyerskloof near Stellenbosch.

“These are wines which can hold their own against any varietal from any wine-growing region of the world – making Pinotage the trump card of the South African wine industry.”

Although the vines are now planted in other countries and Pinotage has achieved international success, its origin is South African, he says.

The association is honouring Prof Perold this year with the launch of the Absa Perold Cape Blend Competition, to encourage makers to create a signature style for the composition of true Cape blends.

Key to the competition is the requirement that the blended wine should contain a minimum of 30% and maximum of 70% Pinotage. The first award will be made next year.

Prof Perold was born in the Cape in 1880. After achieving a PhD in chemistry from the University of Halle an der Saale in Germany in 1904, he was sent on a scouting mission overseas by the Cape government, which wanted to extend the range of grapes planted in the region.

He left SA having only 17 types of grapes, and returned with 177 varietals. They formed the core of a collection which still exists at the Welgevallen experimental farm of the University of Stellenbosch.

Mr Thys Loubser, CEO of KWV, says as owners of KWV’s Abraham Perold heritage brand, the company continues to jealously guard the integrity of the name “Perold”.

It says the association of the name with the Absa Perold Cape Blend Competition will “go a long way in creating excellent blends in our country”.

Meanwhile, the trophy for the world’s top Pinotage wine at the International Wine and Spirits Competition in London has been renamed the Abraham Perold Trophy for Best Pinotage.

“It would be pointless to grow superb grapes and make exceptional wines from them if that achievement remained a secret,” Mr Truter says.

Ernst Janovsky, GM of Absa AgriBusiness says: “With the Absa Perold Cape Blend Competition, our aim is to assist the wine industry to set a standard in what constitutes a Cape Blend.”

As more hectares are being planted with Pinotage grapes, the association believes more Pinotage wines are being made.

It says it wants to ensure the market expands and although it does not market individual labels, it accepts the responsibility of the generic promotion of Pinotage wines.

About Pinotage
Pinotage is a recent addition to the wine world, having been created in South Africa in 1925, by Stellenbosch University Professor A.I Perold. Perold crossed the Pinot Noir and Cinsaut grapes with the aim of acquiring the best qualities of both parents: classic Pinot Noir flavors with a bountiful crop from sturdy, disease resistant vines.
Initially, Pinotage failed to meet this promise, and was largely ignored. Now that the grape has been “rediscovered,” starting in the 1990s, and is now widely planted in South Africa, its current appeal stems from the uniqueness of its flavors. As a replacement for Pinot Noir, it was not a success. Instead, the grape provides a range of styles: from old-fashioned, dry, and somewhat baked to sweeter, spicy, and more obviously fruity. Expect flavors of mulberry, blackberry, and tobacco, often with rich spiciness and gamy nuances.
Pinotage may be easier to cultivate than its fussy parent Pinot Noir, but viticulture is not without challenges. When grown under conditions of high water stress and high temperatures, the wine may take on characteristics of spray paint or rusty nails. Not so good. Once cultivators discovered that these charateristics could be avoided by growing the grape in “softer” conditions, the profile of the grape began to rise, and the wine became more successful in the international marketplace.
Even still, Pinotage remains a great value. We think the finest examples still come from the grape’s birthplace in the beautiful Stellenbosch region, and we especially like releases from Kanonkop Estate and Ken Forrester.
Pinotage is a versatile and food-friendly wine: pair it with a hearty winter bean soup, game, or ratatouille.

June 1, 2011
The Controversy of Pinotage
There are certain wines that everyone knows about: the Merlots, the Chardonnays, and the Champagnes are just a few of those popular enough to be invited to nearly every party. These wines are what the general drinking population has deemed the “Cool Kids.” But, the “Cool Kids” aren’t made so only because of their characteristics. Sure, Merlots are rich, Chardonnays are smokin’ and Champagnes, especially when mixed with orange juice and accompanied by a side of toast, are known to be good in bed. But, it’s not these reasons alone that make them popular. Much of their popularity must be attributed to the fact that they are extremely common; simply, they are well known wines.

On the other end of the spectrum are those wines that are unpopular; many of these wines aren’t even allowed to sit at the same wine cellar as the “Cool Kids.” But, just as stated above, it’s not the characteristics of the unpopular wines that make them so: it’s simply because they are not common; they are unknown wines. One of these great unknowns is Pinotage. A wine that many people ignore, if a drinker sat down and took a sip out of a bottle, they might discover that it’s just their type.

Pinotage is a South African wine created by a Abraham Izak Perold. Perold, a professor at Stellenbosch University, was known for his skill in chemistry and viticulture. When the Cape Government decided that they wanted to plant a larger variety of grapes on their lands, they sent Perold on a journey to scout and explore; he returned with 177 grape varieties. In 1925, Perold decided to scout and explore on his own in at attempt to find a grape rich with flavor and strength. He found one by crossing two different grapes: Pinot Noir and Cinsault. It made sense that crossing Pinot Noir, a grape with wonderful wine making potential but difficult to grow, with Cinsault, a grape that is tolerant and flourishes easily, would produce a grape filled with all the important qualities. This experiment resulted in a wine love child: Pinotage.

The production of Pinotage was initially marked by controversy: these grapes met wrath. While the controversy stopped just short of grapes protesting to chants of “Hell No, We Wont’ Grow,” it left many wine consumers refusing to take part in sampling. One reason for this was the erroneous belief that Pinotage was a hybrid, a wine made by breeding two grapes from two different species. In actuality, Pinotage is a viticulture cross, a wine made by breeding two grapes from within the same species. Both Pinot Noir and Cinsault are related to vitis viniferous, a European Grapevine.

Pinotage, though it still has its fair share of opponents, has begun to gain ground over the years. In 1959, it became available commercially, but was generally only known inside of South Africa. Its popularity, while dismal in the first years of existence, began to grow when, in 1961, a Bellevue red wine made from Pinotage was named the champion at the Cape Wine Show.
Popularity Emerges
The crown Pinotage wore proved to be revoked rather quickly; it was a short reign. Suddenly, Pinotage was again a faceless wine. However, another wine competition would soon give it a reputation. In 1991, a winemaker by the name of Beyers Truter entered a Pinotage in the International Wine and Spirit Competition. Upon sampling the Pinotage, the judges named him “Winemaker of the Year.” He was the first South African to ever be bestowed this honor.

Pinotage started to grow on the rest of the world when the unjust system of Apartheid fell; with its removal , international boycotts were also removed and Pinotage began to be sold and traded outside South African boundaries.

True fans of Pinotage attest that it can go well with any type of food. However, its flavor tends to really thrive when paired with certain entrees. A medium-bodied Pinotage, for example, goes considerably well with fresh fish, sushi, and thick soups. A heavy-bodied Pinotage goes well with red meat, venison, barbequed dishes, and oysters.

There are two things about Pinotage that many people must determine on their own: its taste and its ability to age. Fans of Pinotage describe it as tasting of loganberries, blackberries, earth, and banana; to them, it has a flavor that is fruity, distinctive, and refreshing. On the flip side, opponents of Pinotage state that it tastes like “rusty nails.” While the opposition does admit that they have tasted some very good Pinotage, they attribute its success to the skill of the winemaker, not the greatness of the grape.

In regards to aging, Pinotage is not typically a wine that is thought to age well. However, this is a bit of a conundrum: most red wines age as well as Dick Clark. The age question has also been addressed by wine drinkers: many connoisseurs have stated that Pinotages that have aged a few years exhibit stronger and more notable flavors. In general, certain Pinotages were made to age and can sit for up to eight years; others were made to be drank within a year of bottling. When purchasing a Pinotage, a sommelier should be able to tell you which vintages you should keep in your cellar and which vintages you should open up and start drinking on your way to the cash register.

Pinotage, like all types of wine, isn’t for everybody. Some people love it, some people think it’s decent, and some people would rather (gasp!) drink no wine at all. But, the same can be said for just about anything consumable. When it comes down to it, Pinotage is worth a try, if nothing else, to see what the controversy is all about.

PINOTAGE: Behind the Legends of South Africa’s Own Wine
1925. In South Africa Professor Perold is crossing grape varieties, striving for the perfect wine. Did he succeed? The quest to unravel the truth of Pinotage’s parentage spans decades and continents, with myths and legends appearing at every turn.

Wine explorer Peter F May is a modern day Indiana Jones, tracking down long-lost journals, turning dusty pages of long-forgotten books and analysing high technology DNA results to unravel this mystery.

Travel with Peter from the silent wine cellars of South Africa to the noise of London’s Tube, from ancient French vineyards to modern wineries in Texas to unearth the ancestors of this award-winning wine. Along the way you’ll see whale pods kiss the coastline, savour the swirl of wine on an African savannah, infiltrate the musty depths of a restricted library, and take part in solving one of the most fascinating mysteries to ever tantalise the wine world.

Pinotage is South Africa’s very own wine, but there has never been a book written about it until now.

2009 is the 50th anniversary of the world’s first Pinotage wine and in PINOTAGE: Behind the Legends of South Africa’s Own Wine author Peter F May tells the story of this uniquely South African grape variety and of its creator, Professor Abraham Perold.

During researches in South Africa Peter F May uncovered information that differed from the standard definition of Pinotage in text books. Turning detective, May investigated various legends about Pinotage’s parentage and origins.

“I felt like Sherlock Holmes,” he says, “as winemakers told me things in confidence that contradicted everything I’d read about Pinotage.”

May travelled to and interviewed winemakers and winery owners in four continents for the book which details how Pinotage is grown, made and marketed. As well as covering growing making and marketing Pinotage in South Africa, he provides a comprehensive review of Pinotage in other countries.

PINOTAGE: Behind the Legends of South Africa’s Own Wine tells of Peter F May’s infatuation with the Pinotage variety and follows his investigations into its origins. He identifies when it was created and first planted and he discovers the oldest living Pinotage vineyard.

There’s a history of winemaking in South Africa and a biography of Pinotage’s creator, Professor Abraham Perold.

In the second part of the book May discusses growing, making and marketing Pinotage wines with case studies of classic South African vineyards.

Various styles of Pinotage are discussed, the Cape Blend controversy is covered and criticisms of the variety are analysed.

In the third section of the book, May takes a look at Pinotage in other countries. His travels take him from South Africa to California and Virginia, Canada, Israel and New Zealand.

This is a book for anyone interested in wine and wine making, and those who wants to know the truth about South Africa’s wine gift to the world.

Discover the Wonderful South African Pinotage
You may not be familiar with the South African wine Pinotage but after you try this variant of Pinot Noir, you will be looking for more. It’s a great accompaniment to many meals and is budget friendly.
Interesting History Facts About Pinotage
Pinotage grapes are a cross between Pinot Noir and Cinsault grapes. Professor A.I. Peroldt was the first to come up with the combination of grapes to create this wine in 1922. People did not favor the new wine at the time, so it wasn’t until 30 years later that it started being cultivated in earnest. Interestingly, people took a liking to it the second time around.
A Glass of Pinotage Wine
When you pour yourself a glass of Pinotage, you will immediately notice the deep red color with a slight purple rim. When you take your first whiff of this delectable wine, you will smell the fruity combination so recognizable in Pinot Noir wines. Taking your first sip introduces you to all of the exquisite flavors of both the Cinsault and Pinot Noir grapes.

It is medium bodied with a velvety texture. The taste of fruits such as mixed berries, raspberries, strawberries and banana will delight your palate.
Pinotage and Foods
This is an excellent wine to pair with hearty meals or light snacks. Pinotage complements cheese wonderfully because it doesn’t overpower even the mildest of cheeses. The people of South Africa often drink Pinotage with meats such as deer, oxtail and duck. It is also a popular wine with meat stews and chili.
Pinotage Regions
Since 1952, other countries have decided to start planting Pinotage grapes. Zimbabwe and New Zealand have the largest wineries for this type of wine besides South Africa. California and Canada also have a good number of vineyards. Most people who like to purchase this wine look for the South African variety because it is the oldest planted area and is not expensive.
Varieties of Pinotage wines
If you’re trying Pinotage for the first time, you’ll have a number of great choices. These are the best of the South African varieties:
•	Pinotage Bob’s African Pinotage: This wine comes straight from South Africa and is not an expensive bottle of wine. You can find it in many markets across the United States. Bob’s African Wines believes in helping a good cause and donates ten percent of the sales of Pinotage Bob’s African Pinotage to charities fighting HIV/AIDS in Africa.
•	Viljoensdrift Pinotage: This wine comes from the Robertson Wine Valley in South Africa. When you take a sip of this variety of Pinotage you may taste raspberry, strawberry, cherry and banana. If you are looking for a wine that is only mildly acidic, this is a great one to choose.
•	Neederburg Pinotage: Your first whiff of Neederburg Pinotage will take you to a field of sun-drenched raspberries. Many people find that Neederburg has a woody taste, which adds uniqueness and character to this Pinotage wine.
•	Cape Quarter Shiraz Pinotage: A slightly different version of Pinotage wine that gives you hints of blackcurrent and mulberry, this variety is from the Western Cape of South Africa.
•	Bellingham Pinotage: If you enjoy wines with a bit of spice then Bellingham Pinotage is right for you. With this Pinotage wine, you get the wonderful fruity flavor along with accents of nutmeg, cinnamon and clove.
Choosing Pinotage Wine
When looking for an economical wine that is smoother and sweeter than the popular Pinot Noir, consider Pinotage wine. After your first sip, you will be asking for some more of this rich, velvety, and fruity wine.

June 01 2011
Pinotage
The result of a 1cross between the Pinot Noir and Cinsault varieties, Pinotage was created in South Africa in 1925, by Stellenbosch University Professor A.I. Perold, during experiments to develop new varieties.
Although there is a very low rate of success when breeding new vine varieties, this cross, eventually called 2Pinotage, showed promise. It is often said that Professor Perold intended to get Pinot Noir’s flavor from a vine with the robustness of Cinsaut, but Perold was the leading viticulturist of the day and he knew that result was unlikely. As plausible a motivation is that Pinot Noir was his favorite variety and Cinsaut was the dominant red variety in South Africa at the time.
Initial tastings did not sufficiently impress, so Pinotage was largely ignored until 1961, when a 1959 vintage 3Pinotage won the Grand Championship at the Cape Young Wine Show, South Africa’s long-running and uniquely-themed wine competition.
There was a subsequent rush towards planting Pinotage vines. The vines proved easy to grow and high sugar levels were easily achieved, it is a good cropper and many farmers overproduced. The resulting wines didn’t show the early potential and Pinotage tended to be used to bulk out popular-priced blends. There was also a tendency for the wine to show a sweet paint or nail-varnish-like bitterness. And as such it suffered descriptions such as “rusty nails”.
A few wineries began to specialize in pinotage and showed that a wine worthy of serious consideration could be made. But plantings declined year by year. Pinotage acreage sunk to around 2% of total area by 1993, with prices and demand for Pinotage grapes dropping, much was distilled for brandy.
Again, a wine competition proved savior. In 1991, Kanonkop Estate’s winemaker Beyers Truter entered his Pinotages at England’s International Wine and Spirit Competition. These so impressed the judges that he was presented with the “Winemaker of the Year” award – becoming the first South African to win this honor.
Pinotage gained international attention, and wine drinkers keen to enjoy a new taste clamored for the unique wine, causing the price of Pinotage grapes to shoot up 500% by 1995. Again winemakers started taking the wine seriously and many even invested in French oak casks to age it. Wine Spectator Editor James Suckling was at a 1995 Cape of Good Hope tasting of old Kanonkop Pinotages when he declared, “What the hell’s going on around here? These are spectacular …… SPECTACULAR! Why did you murder the grape?”
Reacting to renewed interest, The Pinotage Association was formed, research funded, and an annual Pinotage Top 10 competition begun. Research found that fermentation at too low a temperature was the cause of the nail-varnish problem.
The ending of apartheid not only removed trading sanctions, thus opening up new markets, but also created a great international interest in all things South African. And what was more South African than its own varietal? On the other hand, vineyards could finally import vine stocks and the inclination was to plant more fashionable world varieties. At the start of the twenty first-century, demand for Pinotage is increasing and the acreage now forms almost 6% of the South African total for wine grapes.
Pinotage may be made in several different styles: young, light, and fruity, like Beaujolais, deep and rich like a Cotes du Rhone or Zinfandel, or elegant and restrained like Bordeaux are the most common styles. There are also popular ‘blush’ versions and several fortified into Port-style sweet dessert wines. Pinotage can also be a component in sparkling wine and at least one producer makes Methode Champenoise sparkling red Pinotage.
So what should you expect in a red Pinotage? Good depth of flavor, a unique individual fruity refreshing wine. Some tasters remark on a banana-like taste. I have noted bramble fruits and a velvet texture. It is a dinner wine, with good levels of alcohol giving depth and structure and keeping ability. But – like Zinfandel – there is no old-world style for winemakers to model on, so opening a bottle from a new winery is very much an adventure.
Diemersfontein winery pioneered a popular Pinotage that has coffee and chocolate flavours, arising from a combination of a particular vineyard and toasted barrels, and the giant KWV followed with a similar wine called Café Culture.
The words “bush-vine” on a South African label indicate that the vines are old, planted before machine harvesting. Although not legally defined, the practice of labeling wine as a “Cape Blend” usually means Pinotage with Bordeaux varieties. Warwick Estate’s ‘Three Cape Ladies’ and Kaapzicht Estate’s ‘Vision’ are two leading examples and E & J Gallo markets a Cape Blend in the USA under the Sebeka label.
Pinotage is not unique to South Africa. New Zealand, where the relatively thick, rot-resistant Pinotage skin is an added benefit in the humid north island, has been making it almost as long. Israel now has two wineries making Pinotage and there are at least six producers in Canada. Brazil and Zimbabwe also make wine from Pinotage and Australia will be soon. In the United States, Virginia has three wineries growing and making Pinotage and planting is increasing in 4California where nearly 20 wineries are currently producing it.

Pinotage Wine Information
Pinotage was produced by crossing Pinot Noir and Cinsault, and is grown primarily in South Africa. Wine was first planted in South Africa in 1652 by the Dutch – they used wine on sea voyages to give to the sailors prevent scurvy. In 1922 Professor Peroldt created the Pinotage cross, and in 1952 it was planted. The rest is history – the Pinotage grape ripens early and produces well.
Pinotage has a distinctive flavour, very fruity with an underlying taste frequently compared with banana. It can be drunk young, to maintain its fruity flavor. It also ages well, and the mellowing effect allows the wine to taste like a mature bordeaux. Pinotage pairs well with stews and other rich dishes. It should be served at 61F – warmer than fridge temperature but not “room temerature” in modern times.

Wine With . . . Chicken Caesar Salad

by Paul Lukacs and Marguerite Thomas

The dog days of summer are upon us as we write, and the east coast of the United States is sweltering under a blanket of heat and humidity. It’s the kind of weather that invites indulgence in gin and tonics, peach pie, and bowls of ice cream-not to mention lots of lounging in the hammock. But after a couple of weeks of such immoderation, and with Labor Day done with by the time you read this, it’s time to think about getting back into shape for fall. All of the above-the hot weather, the flourishing love handles–suggests one thing: salad!

To our mind, a good Caesar Salad is one of the best ways to beat the heat and combat the flab. Crisp, cool morsels of Romaine (and it must be Romaine rather than some limp lettuce to qualify as a Caesar), laced with a creamy garlic-infused dressing and topped with shredded Parmesan and grilled shrimp or chicken for sustenance, makes a terrific dinner, either homemade or enjoyed at a local pub.

Though many salads clash with wine, one of Caesar’s many attributes is that it is remarkably adaptable to a variety of different wines. We hear a lot about food-friendly wines these days, but Caesar is a relatively wine-friendly food. This is due largely to its creamy texture (created by both egg and mustard emulsified in the dressing), and by virtue of the dense protein in both the cheese and the chicken or shrimp topping. The use of lemon (rather than harsher vinegar) in the dressing is another bonus, and the hint of anchovy or Worcestershire adds a depth of flavor that enhances the wine.

There are certainly occasions when a glass of youthful, fruity red might be just the thing to have with Caesar Salad. But when the temperature and heat indexes are edging into the high 90s, a fresh, chilled white wine holds a lot of appeal. When we sampled thirteen different wines on a muggy evening with our Chicken Caesar, we included one rosé, but otherwise opened only whites. Not surprisingly, heaviness-whether from discernible oak or too much residual sugar-proved to be a deterrent. The rosé seemed clunky (though a drier one might have fared better), as did both a California Chardonnay and an off-dry Proseco. At the same time, while crispness and verve were appealing, overt acidity (which came off as sourness in an Italian Pinot Grigio we sampled) went to war with the lemony dressing. In the final analysis, harmony counted for a lot more than grape variety or specific stylistic differences. The wines that paired best were those with fine flavor but also fine balance.
