Wagyu cows from Japan are responsible for giving us Kobe beef. They are fed a diet of beer, fresh grass and rice. They also receive hand massages daily.
Dry Aging
o Dry aging is one method that helps beef reach its taste potential. When a piece of beef is dry aged, it is hung in a special refrigerator that is kept between 36 and 32 degrees Fahrenheit. The aging process stops if the meat gets above 36 degrees, or falls below freezing. The meat loses weight due to water loss and it is labor intensive to carve off mold that forms on the outside. Dry aging takes a minimum of about 30 days. This process is not done often due to its labor-intensive nature, which makes it an expensive method.
Wet Aging
o Another method of aging beef is called wet aging. Wet aging takes place in a vacuum-sealed bag. The meat can be sent in its bag straight to the butcher to do its aging. This method keeps the meat from losing weight during the aging process and cuts down on the labor involved in carving up the meat. All together, it is an easier and cheaper way to age beef, but may not provide as much flavor as dry aging.
Popular Cuts of Steak
o Overall, the more popular steaks seem to include thick cuts of meat. The porterhouse, for example, is cut from the short loin section of the cow and makes for a fairly large steak at up to 3 inches thick. A New York strip is the cut of meat that is left when the tenderloin is separated from the short loin. This cut can be up to 2 1/2 inches thick. The filet mignon is cut from the back of the cow and can be served as thick as 2 inches.
