Many of Monterey Wine Country’s vineyards recently pulled in the last of their grapes as the busy harvest season wound …

Many of Monterey Wine Country’s vineyards recently pulled in the last of their grapes as the busy harvest season wound down to a close. Winemakers and vineyard managers across the region’s nine American Viticulture Areas agree that the quality and flavor concentration in grapes from the 2012 vintage are extremely high.
Jason Smith, Valley Farm Management and Grower Chair for the Monterey County Vintners and Growers Association (MCVGA) said of the 2012 vintage: “Overall, it was a nice moderate year. Mother Nature cooperated, the growing season was long, and the grapes matured well. We were able to have a nice average crop with great quality! This was a nice change after the challenges of 2011.”
While several grape-growing counties across the state battled early rains that threatened rot and crop loss, Monterey County fruit went virtually unaffected, with rains averaging only one-tenth of an inch. As the storm passed Monterey County, Steve McIntyre of Monterey Pacific said, “Once again the Santa Lucia Mountain rain shadow has saved the day! We seldom get much out of these northern storms and such was the case with this one – a tenth of an inch was our highest reading. Actually, we were still running the water truck the following day for dust control.”
Andy Mitchell of Hahn Winery concurred: “The recent rain events here in Monterey County have been relatively light when compared to other parts of the State, both north and south of us. A few picks have had to be rescheduled as a direct result of rain, and the cooler temperatures associated with the storm systems have pushed back some scheduled harvests due to Brix levels dropping. But as far as any added pressure of botrytis caused by the rains, we are not finding this a problem.”
From an economic standpoint, the region is seeing similar trends to those of 2011, when wine grapes sold at an increased price-per-ton average across all major varietals. According to the County’s 2011 Crop Report, of the leading ten grape varieties (five white and five red), nine sold at an increase of several percentage points from 2010 to 2011. Local growers hope to see that trend continue to boost the region’s economy.
“I’ve been watching Monterey County harvests for ten years now,” said Rhonda Motil, Executive Director for the MCVGA. “Low yields, fine weather, and long hang times will put this vintage up in the realm of the best I’ve witnessed thus far.”
Bringing together the talents and resources of its members, partners and the community, the MCVGA promotes and supports their leadership in the art, science and business of wine. Founded in 1974, the Association is a non-profit organization representing over 75 vintners and growers in Monterey, California.
2012 Vintage Report: France
Winegrowers earned their paychecks as they dueled tough, wet growing conditions all year; the Rhône was a bright spot
Harvest. For winemakers, no other word is loaded with so much potential and anticipation. After a long growing season of endless work in the vineyards, harvest means pencils down, time’s up. And no matter how hard you have labored all year, at the end of the day, nature usually has the last word.
In the third of five 2012 vintage reports, vignerons in France are reporting a tough year. Spring was wet in most regions, producing low yields. After a summer reprieve, the rains returned in September, forcing overtime work at winery sorting tables. The Rhône Valley had it easier. Elsewhere, only hard work and smart winemaking could turnaround a rough season. As for final quality in the bottle—it’s too early to know. But here’s a sneak peek.

September 1, 2011
The popularity of wine has risen significantly over the past ten years, with a rise in the pursuit of becoming a wine connoisseur. Although a love of wine is a prerequisite to become an ‘official’

connoisseur, the talent also needs to be developed, grown, and enhanced over time. With the overwhelming amount of information available on wine, the various magazines covering latest finds, and an extensive history of wine-making across the globe, it can be an intimidating subject. A great way to begin is to host a wine tasting party in your home! Organize an evening with friends and family to learn about wine basics, and begin your journey into the World of Wine as a lifetime learning opportunity. You’ll quickly learn how the rich history of the regions play a key role in wine cultivation, how to define and identify tastes and flavors on your palette, and how to pour wine the ‘proper’ way.

Step 1:

The first step in organizing your wine tasting is to choose from either a red, or white wine for that evening. Although you may want to do both, it is recommended to choose one to start and follow up with another session for the next time. You’ll not only benefit from a thorough understanding of the one type, but you’ll quickly learn your tolerance level for the taste. If you and the attendees are not frequent wine drinkers, this is a great opportunity to begin slowly.

Step2:

The second step is to select five to six wines and note the regions. Visit your local wine store and ask to speak with a sales representative or knowledgeable staff member for recommendations. Remember, you are looking for basic, ‘beginner’ wines for now, and can move onto the more in-depth and Reserve wines at a later date.

Step 3:
A Beginner’s Guide to Learning About the World of Wine
Select appetizers and side dishes to serve. The third step after choosing red or white, will be to complement the tasting with snacks. Well-chosen snacks include natural cheese, fresh fruit, and even plain pieces of

steak for red wines. For white, opt for light cheeses, crackers, and light salty snacks. The idea is to enhance the wine’s flavors, and not overwhelm the palates with a full-course meal!

Step 4:

Arrange meeting time, place, and date, and send out invites! Round up a fun crowd of friends and family, and do disclose the purpose of the event.

Step 5:

Ensure that water and soda water are readily available. This is necessary to ‘cleanse’ the palette between tasting each type of wine, so that you can truly experience the unique flavor, textures, and density of each wine. Some may choose to simply ‘roll’ the wine in their mouths and spit it out in order to taste; make sure there are plenty of bowls available for this!

Step 6: Construct comment/note cards to make note of your findings. This is a great activity for all members of your party, as it encourages note-taking on your new discoveries! It also makes sure you know what wine you now like, (or dislike) after your results. You can even set up a ‘blind taste-test’ at this point, and see who’s taste buds are most trained to identify flavors and corresponding wine.

Step 7: Keep track in a tasting log. This can be a journal, an electronic log, or any sort of notebook that let’s you remember what you have tried, and how different varieties taste. By writing these down, you can also research each brand, location, or vintage online for more information.

Step 8: Enjoy and continue researching! As you get better and more comfortable, invite your ‘club’ for future tastings, and develop plans for your next region or wine type. You can choose specific wines from one country, one state, or even one varietal and expand from there.

The key to beginning wine tasting is to learn as much as you can as you go along. You will never know every single wine or vintage, but you can learn a lot from magazines, books, and online resources that showcase signature and trademark selections. Seek out local wine bistros and stores that feature their own tastings, and you’ll also find more people with a similar interest. You’ll also learn the many definitions to describe what you experience with each wine, a key characteristic of the well-educated wine connoisseur!

Food and wine lovers of Manila gather in Pampanga to enjoy a sumptuous dinner at the best restaurant in Clark Pampanga featuring classic French cuisine, many order fine vintage wines from Yats Restaurant and Wine Lounge to pair with these delectable dishes, all in all, one of the best dinners they enjoy for a long time.

September 1, 2011

t’s great to have a group of people over for a casual social event, but costs can quickly add up. But one idea that can be unique for guests and inexpensive for you as the host is a wine tasting potluck! By contributing just a few items and inviting guests to add their favorite bottle of wine, you can have a great wine tasting event at a relatively low price to you as the host!
You can put as much or as little into this event, but a few nice touches will make it memorable to your friends and most likely start a new tradition with your group of friends. Follow these easy steps to create your evening:
1) Invite your friends: this kind of event works well with just about any number of guests. You can invite four close friends, or you can have 15-20 people over for a larger event. It’s up to you because any number will work!
2) Inform your guests of the requirements: let the guests know that this is a wine “potluck” of sorts. Invite them to bring their favorite bottle of wine. Be sure to tell them that it doesn’t have to be fancy or expensive-the fun part is seeing the unique collection of wines that will be assembled.
3) Add the basics: this is where you’ll realize how easy it really is to host this event! Check out the gourmet section of your local grocery store for unique cheeses and coordinating crackers. There are some great articles right here on Helium that can clue you in on the world of gourmet cheeses! Also, pick up an inexpensive box of wine glasses from your local party supply store. You won’t believe how cheap they are, and you won’t have to worry about butter-fingered guests breaking your good crystal. If you don’t have wine charms collecting dust in your china cabinet, pick up a few brightly colored markers so that guests can write their initials on the base of their glass. Finally, grab some cute napkins while you’re picking up the glasses at the party supply and you’re set!
4) Extra touch: the basics will provide you with a great night, but if you want to spend a little more money, you can add a bit more to the night. Stop at a dollar store or hit the bargain bins at your local craft or discount store for inexpensive journals. Hand them to your guests when they arrive, along with a pen. This way, they can keep track of the names of the wines that they like, as well as what they tasted like and what foods they would accompany. Your guests will love the memento and enjoy doing this wine “research”. They can continue to keep track of favorites in their new wine journal long after your party. It might even encourage someone else to host a similar event! If you want to alter this idea, but with less money, pick up a pack of nice stationery paper and provide everyone with a few sheets to keep their notes.
Remember to keep things casual and hopefully, your wine tasting potluck will be a low-stress, inexpensive way to get your friends together for a fun and different event!

September 1, 2011 Looking for tips on organizing a wine-tasting fundraiser? Here are some ideas on organizing your fundraising event …

September 1, 2011

Looking for tips on organizing a wine-tasting fundraiser? Here are some ideas on organizing your fundraising event in order to maximize your proceeds.
Obviously, a wine-tasting event needs wine experts, so begin by seeking suitable merchant partnerships based not only on expertise, but also access to the best wines. After all, you have to be able to provide numerous bottles of expensive wine and there’s no sense in paying anything near retail price.
Partner with a wine merchant or distributor who can not only help with supplying wine and expert advice, but can also help sell advance tickets to your event.
Organization Tips
Getting plenty of advance publicity is a must. Take the time to put together a press release and get the word out to local media outlets such as tv and radio stations.
Be sure to offer tickets through not only your organization, but also through participating merchants and other groups who support your cause.
It never hurts to have another nonprofit group plugging your fundraising event to their supporters as well. Strike an agreement to do the same thing for their fundraiser.
You will need a suitable place for your wine tasting fundraiser such as a reception hall or scenic outdoor setting. Arrange tables in a layout to suit the space and leave plenty of room for access to each table.
Experts can describe each tasting while wearing a lapel microphone and visiting each table. Use volunteers to bring a bottle of each vintage to all the tables prior to their discussion and have them handle the pouring.
To add a festive flair, consider providing live music with a string quartet or jazz group.
Profit Tips
There are many additional ways to raise funds at your wine tasting. One is to conduct both silent auctions and live auctions for rare wines and wine-related merchandise.
Run your silent auctions from an easy to reach spot such as the check-in table and always do a last call for bids. With live auctions of expensive wines, consider using a professional auctioneer in order to maximize bid prices.
Talk to your merchant partners about ways where both of you can profit such as offering gift certificates to their stores or special case buys on recommended wines.
Look for tie-ins with other merchants who offer related products such as wine glasses, gourmet food items, or travel trips to wine country.
For really large events, provide valet parking services and raise a few extra dollars.
Additional Event Fundraising
Auctions are an additional way to maximize revenue at your wine tasting event. You can offer bottles of fine wines via silent auction or conduct a live auction.
Raffle tickets are another great way to raise additional funds. They are a great way to offering an inexpensive chance at winning an expensive prize. Sometimes, you can even raise more money buy raffling off an item than by auctioning it to the highest bidder.
With a good-sized crowd, raffle off multiple items. You can use the approach where one fairly pricey ticket gives you a shot at multiple prizes. With a high-priced single raffle ticket being sold, you draw from the same pool for multiple winners.
Another approach is to keep the ticket price low and encourage people to buy multiple tickets. This way, the chance that an individual ticket will win is much lower, but people will often spend a greater amount on the lower-priced tickets.
And of course, a raffle allows you to sell tickets to people who can’t make the event but would still like to participate in the fun.
Closing Tips
For a successful wine tasting, be sure to allow yourself enough lead time to successfully publicize and organize your fundraiser event. Get the maximum possible turnout by making tickets available at a discount for advance purchases and at a higher price at the door.
If your location is not well-known, be sure to provide directions on flyers wherever tickets are sold. Print a contact number on the tickets for any last-minute questions.
Do everything you can to make the night memorable. Decorate your location appropriately, provide live music and dancing, use a dedicated announcer, and serve plenty of unusual wines to compare.
Using a local media personality as a host is another great way to ensure a large turnout. It’s best to route such requests through the program director of their employer.
Good luck with your wine tasting fundraiser!

September 1, 2011 Nothing contributes more significantly to your wine experience than tasting. It’s kind of like learning to play …

September 1, 2011

Nothing contributes more significantly to your wine experience than tasting. It’s kind of like learning to play an instrument; it’s helpful to know how to read music, but ultimately, there’s no substitute for practice.
Coming together with a group of fellow wine enthusiasts is a fantastic way to exercise your tasting muscles. A group atmosphere offers participants the opportunity to share opinions and conclusions, shaping and strengthening each individual’s appreciation of the wine. The concept is similar to that of a book club. Sure, you can enjoy a novel on your own. But getting together with a group of people who have read the same book can enhance your appreciation and understanding of the story.
The following article shows you the key steps in hosting a wine tasting — from the planning stage to choosing a theme — so that it will be a truly meaningful experience. We’ll start by addressing a few basics you should consider when planning a wine tasting.
Blind Tasting
Organizing a wine tasting is easy; all you’ll need are good friends and (hopefully) good wine. Whether you decide to plan an occasion that’s formal and serious or casual and low-key, a blind tasting (where the tasters don’t know which wine is in which glass) is your best bet. Concealing the wine’s identity is vital if purely sensory evaluations are to be made. Otherwise, the power of suggestion can cloud a taster’s ability to honestly evaluate a wine; impressions are likely to be influenced, whether consciously or unconsciously, by expectation rather than by what the senses actually encounter.
The More the Merrier?
So, how many people should you include in your tasting group? In general, the more the merrier! More tasters means more opinions, increasing the base for interaction. And if you plan to pool your resources to finance the wine purchases, more people can mean a wider range and/or better-class of wines. Still, keep in mind that a bottle of wine can only go so far. A regular (750 ml) bottle contains about 25 ounces. If a tasting sample is two ounces, one bottle can accommodate up to 12 people. But, if the group exceeds 12 participants, it will be necessary to either buy more than one bottle of each wine to be sampled or pour smaller tasting samples from a single bottle.
Before the first tasting, get your friends together for a planning session. Now is the time to work out the details so the event itself can be a festive, carefree occasion.
Choose a date and time for the get-together. Who will host the tasting? Will the host be responsible for setup and cleanup? For purchasing the wines? Decide in advance which group member will be responsible for each element of the event. After all, it’s impossible to have a tasting without the wine! Pick a site for the tasting. Make certain the location has sufficient table space and chairs to accommodate the tasters and their glasses. The most comfortable and hassle-free site is probably a cozy dining room. If this isn’t possible, then you’ll have to be creative. Does a group member have access to a semipublic room, such as a recreation room at a condominium or an apartment complex? If so, consider booking the room for the tasting. Other possibilities include a meeting room in an office suite or a separate room in a restaurant (the owner might be persuaded to make the room available if your group dines at the restaurant following the tasting).
Determine how many wines will be sampled. Agree on a minimum number, so the host will know how many wines to obtain. Also decide whether the tasters are to bring their own glasses. If so, consider tasting six wines; boxed stemware often comes in sets of six, and the compartmental boxes make carrying the glasses to and from the tasting much more convenient.
Decide how the wines will be paid for. Some wines might be significantly higher in price, and some tasters may drop out along the way, so it’s important to resolve this issue early on. Consider simply dividing the total cost by the number of people participating. Don’t forget to factor in any amount spent for bread or cheese! Or, take turns hosting (and paying for) the event. Perhaps you can make it a monthly get-together!
Create or obtain a tasting sheet. Many wineries have tasting sheets that can be adapted for the group’s purposes, or you can create your own. Whatever you choose to do, make sure to duplicate the form so that you have a copy for each taster.
The tasting sheet should include the number or letter that corresponds to each wine; space for comments; points awarded, if desired (the common systems are the 20-point and 100-point scales); an individual ranking, from first place to last place; and total group ranking points. To calculate total group ranking points, find out what ranking each taster gave each wine. If six people believe the same wine deserves to be in first place, it gets six group points (631=6); if they all put the wine in sixth place, it gets 36 points (636=36). The lower the total ranking score, the higher the group ranking for the particular wine.
Choose a tabulator and create a tabulator’s sheet. Decide which group member will act as the tabulator. This can change from tasting to tasting, or the same person can do it each time. The tabulator compiles each taster’s rankings as well as each taster’s point awards, if points are used (keep in mind that rankings are much more important than point values; awarding points is a very subjective exercise and can lead to considerable confusion). Design a sheet that enables the tabulator to readily calculate these figures. You might also want to develop simple slips of paper for group members to use to transmit their rankings (and scores, if used) to the tabulator.

Choosing a Wine-Tasting Theme
Coming up with a theme for a wine tasting requires some imagination; you have so many choices! To begin, decide whether the tasting will be vertical or horizontal.
A vertical tasting features the same brand of wine from different vintages: for example, Winery X Cabernet Sauvignons from 1995 to 2000. A horizontal tasting includes wines from different wineries that are the same type and vintage: for example, six different bottles of Alsace Gewurztraminer, each with a vintage date of 2000. A horizontal tasting can be as basic as comparing newly released varietals (like Cabernet Sauvignon or Chardonnay) that are from the same appellation or growing area. Or it can be much more complicated; it’s up to you!
Many resources are available to assist in coming up with a theme. If your group is just beginning to acquire some wine knowledge, a reliable wine merchant should be happy to suggest wines that fit the theme. If you’re operating within a budget, let the merchant know up front. Don’t make the mistake of pumping the merchant for advice and then going to a discounter to get a cheaper price; you make no friends that way.
Perhaps the next best thing to a wine merchant is a magazine or newspaper. Such publications are usually available at newsstands and wine shops. Or go online to find a helpful site. These sources feature wine-tasting notes, sometimes with point scores or evaluation symbols, sometimes without.
Obtain the wines that fit the theme. The individual paper bag in which each wine is wrapped before it leaves the store can be used to conceal the wine’s identity at the tasting. Make sure there are enough bags for all the wines (perhaps before you leave the store).
If the group can afford it, taste better-quality wines. Ordinary wines are for everyday drinking, not for group deliberation. Moderate-quality wines afford good tasting practice and can be interesting but often reflect a “sameness” that makes comparison difficult. The most vivid characteristics of a growing area or a vintage are most easily identified in a wine of higher quality.
Do some research on the wines to be tasted. Call the wineries or visit their Web sites for winemaker’s production data and tasting notes. Telephone numbers and Web addresses can often be found on back labels. Also consider copying pertinent tasting notes from published sources, and distribute them at the discussion stage of the tasting.
A few weeks in advance of the tasting, the host should remind everyone of the date and time. If all or most of your friends have e-mail, this should be a quick and easy task. Include the theme of the tasting, and remind the tasters to bring their own glassware, unless the host is providing the glasses. Also request that the participants avoid wearing cologne or perfume to the event.
It’s Almost Tasting Time!
If the wines are in the refrigerator, remove them about one hour before the start of the tasting so they can warm up a bit; wine that’s too cold can’t be adequately evaluated. Remove the foil capsules, pull the corks, and bag each wine. Secure the top of each bag with a rubber band, or simply twist the top of the bag around the neck of the bottle. Leave the task of numbering or lettering the bags to another participant (who hasn’t seen the wines being bagged), so that you can taste them blind too.
Get the table area set up with enough chairs for the participants. If possible, use a white table cover to make color and clarity evaluations easier. Each place setting should have
either a small spit bucket or a large plastic cup. Spitting is highly recommended to keep as clear a head as possible while all the wines are being evaluated. The group’s evaluation and reporting forms should also be at each place setting.
Put out a sufficient quantity of sliced plain baguettes and pitchers of water to act as palate cleansers. A water glass at each setting is thoughtful, as is a pencil or pen. Keep the tasting area free of strongly scented things, such as flowers or cooked foods.

How to Make the Most of Your Wine Tasting
There are some simple steps you can take to ensure that your wine tasting is a sparkling success.
No smoking and go easy on the cologne or perfume. Smoking at a tasting may be inconsiderate, even offensive, to many people, but it also seriously impairs the ability of the smoker and others nearby to evaluate the wines. For the same reason, avoid heavy use of cologne or perfume.
Keep talking to a minimum during evaluation. Although a wine tasting doesn’t have to be a solemn occasion, it also shouldn’t be a gab session, at least not until after the rankings (and scores, if used) have been turned in. There’s nothing more distracting than a chatterbox, except maybe two chatterboxes, in the tasting room.
Offer a short introduction. The host should give the tasters some general information about what’s in front of them. For example: “These are Pinot Noirs from the 2000 vintage; all come from Santa Barbara County. Prices range from $18 to $25.”
Pour small tasting portions. Wine glasses, one for each wine, should be set out in a semicircle in front of each taster. The bagged bottles (which have been numbered or lettered by someone other than the host) should be passed among the tasters so each can pour a small sample (approximately two ounces).
Consider purchasing a pouring disc, a great, inexpensive, reusable tool that facilitates pouring in measured amounts without dripping. Made of flexible heavy foil, these discs fold into a funnel shape and fit into the bottle opening. They come several to a packet and can be found in most wine stores.
If desired, tasters’ glasses can be lettered or numbered on the base with a wet-erase pen, available at most stores that sell stationery or office supplies. This avoids confusion if the glasses are moved out of order at some point. The number or letter on each glass should conform to the number or letter on the bag concealing the wine. The ink readily washes off the glass in warm water.
Hold off on eating until later. Spicy, aromatic foods, like sausages and heavy cheeses, can get in the way of pure wine evaluation. Sliced baguettes and cubes of mild, white cheese or simple water (without flavoring) are sufficient to clear the palate between sips. If desired, appetizers or a light meal can be organized to follow the tasting, or you can all sit down to a full meal; there you can resume social interaction and see how perceptions of the wines change when enjoyed with food.
Discuss the wines. After the tabulations are complete, the wines should be unbagged one by one. For added interest, move from the last-place wine to the first-place wine. The tabulator should announce each wine’s group ranking and total ranking points and, if scores are submitted, the average score (add all the scores together and divide by the number of members submitting scores).
After all the results have been announced, a discussion may be held, with a participant selecting one wine to talk about, followed by another member offering his or her comments about the same wine, and so on around the table.
Before your friends go their separate ways that day, take the opportunity to discuss the next wine tasting. Who will be the host and when and where will it be?
With very little effort, your circle of friends can get together on a regular basis to enjoy and broaden their knowledge and appreciation of one of life’s greatest pleasures.

How to Organize a Wine Tasting
I frequently get asked by people how to organize a wine tasting. This is not a question that can be really answered in a few words, so hopefully this is a better answer.
Let’s spend a moment up front on–drinking. If you are really having a tasting with a fair number of bottles, drinking can be unnecessary and, especially for neophytes unused to running through large numbers of bottles in succession, dangerous. How can drinking be “unnecessary” at a wine tasting? There are no taste buds in the esophagus. People can taste the wine, spit and dump, without actually swallowing. Swirl the wine, take it into your mouth, swish it around, and hold it a few seconds. Your tastebuds and sense of smell are fully engaged–without swallowing. Every tasting should have dump buckets near by, small personal containers where people can dump wine they spit or don’t want. This is especially important for those who are relatively new to wine tasting events. People who are not used to evaluating anywhere from 6 to 15 or more wines in a sitting can easily go overboard if they are not advised on how to taste a wine without swallowing. People who normally control themselves well, when confronted with folks saying “ok, now taste these three wines” every ten minutes can lose sight of the consequences.
But what about dinner? Is it forbidden to ever actually drink any wine? No, of course not. But there are still some considerations, particularly if you have an unskilled group. If people are aiming for consumption, the number of bottles and courses of food should be planned out over a period of time where people will be able to consume without getting blasted. Serving 9 wines with 5 oz. pours per person in an hour with the expectation or fear that everyone will do “bottoms up” is a really bad idea. Staggering flights of wine in pours half that size over four hours accompanied by reasonable quantities of food to soak up the alcohol, is another issue. Make sure you have dump buckets available anyway. I have met some people who profess outrage that anyone might dump wine at a dinner tasting. Too bad, is my view. No one should be under pressure to “bottoms up.” Not everyone will like everything, of course, so you can assume that not every glass will be finished even if it is a dinner event rather than a pure tasting. Apart from that, inexperienced drinkers, smaller people, and women, who are all more quickly affected by alcohol, surely need your help in providing the opportunity to dump unused wine when appropriate, or in planning a reasonable time for consumption of the wine, or both. Give your guests a fighting chance. You can’t make them behave, but you can make good behavior easy rather than difficult.
The Glasses Crisis is usually the first wine issue. Of course, having sufficient types and quantities of glasses available can encourage or discourage consumption, too. I’ve seen many folks at tastings basically drain a glass they weren’t otherwise going to drink because they needed to make room for the next wine. Apart from that, though, you need to think through the Glasses Crisis: How many do you need? The first answer to that involves determining what wines you are going to serve. If you are having 14 Bordeaux from 1990, it is easier to reuse the glasses as the evening progresses. If you are having 3 Sauvignon Blancs from New Zealand followed by six Pinot Noirs from Oregon, you’re going to need a new set of glasses in all likelihood. The pungent Sauvignons will obliterate the varietal characteristics of the Pinots. Also, depending on how many wines you have to pour over how many hours, you will certainly want to do “flights.” That is, if you are showing a number of wines, it is common to organize them by serving three or four at a time, hopefully with some coherent theme, or at least in a fashion that does not clash. So, even if you can reuse the glasses, you’ll want to have at least 3 or 4 per person in that event.
Other obvious questions concern your own resources and desires, such as what the average bottle cost will be and whether (apart from dinner events) you want to serve food directly with the wine. Although many decisions like that are purely personal, they still change the nature of the event and need to be thought through. For instance, many people insist on some food with wine. It is often said that wine is made to be consumed with food, so this seems like a reasonable demand. Plus, drinking a lot without food can certainly get you more quickly intoxicated since food can often mitigate the effects of alcohol. Yet, food clouds the palate and changes the wine, making it hard to evaluate at times. If you are talking about a serious tasting with pricey bottles from which you want to extract detailed information about the wine and its future, serving lots of foods, particularly strong ones, may skew the results. People particularly like to serve cheeses. Cheese and wine go well together in a certain sense, but the wines frequently get lost in the shuffle. Worse still, reds often wind up tasting metallic, unable to hold up to the fat content of the cheeses. Whites, with higher acidities, are frequently a better match for many cheeses, especially those with high fat content like Brie and Camembert. Whites, too, however, can be overwhelmed. Other types of food are more useful. Having some crackers or bread handy is always helpful as I find that some bread and water often helps clear the palate of the effects of tannins. So, how serious do you want to be? Is this going to be a very formal, sit-down tasting, with little or no food, or dinner later? If there is food, think about proper matches for the wines so they are not obliterated.
How many bottles of each selection do you need? A bottle can generate about 24-25 pours, but you’d be better off saying 22 or so to leave a margin of error. That assumes pours of roughly 1 oz., which isn’t much. At a dinner tasting, with pours that small you might add a few bottles to increase the available wine. You don’t want your guests smashed. But you don’t want an entire course that lasts 45 minutes having only 2 oz. of wine available either. Remember, too, people won’t necessarily like everything. They need some choice at a dinner tasting. For that reason, I’d say that dinner pours need to be larger than pours at pure tastings, unless of course you are pouring numerous bottles at dinner.
Less than an ounce isn’t going to be enough for most people, even if they are just evaluating and not drinking. You take a sip, and the wine’s gone, not leaving enough left to swirl and get a good read on. While doing 1 oz. pours is fine for many people for evaluation purposes, many will say that’s too stingy and 2.0 oz. (12 people roughly to a bottle) is considerably better. Some would go further and say that if you don’t have 3 oz. pours (8 people, roughly, to a bottle), it is hard to swirl enough to get a bouquet, or let the wine sit and develop after taking a few sips. Nonetheless, a lot of pricey tastings have very small pours precisely because the wines are so expensive. They just can’t afford to do more. So, it’s certainly not impossible or improbable to have fun and learn something with small pours. As always, dinner tastings are different. While you might want to move along quickly in a pure tasting where people are spitting–thus rendering moot the issue of watching the wine develop in the glass for an hour–at dinner, or over a long period of time, you need a little extra. I think most wine geeks, for more relaxed dinner tastings, would certainly say that they would greatly prefer to limit attendees to 8-12 people a bottle instead of 18-20, so that they have enough wine to hold, and watch develop for awhile.
Next, you need a theme. I’ve seen a lot of people do wine tastings which go something like this: let’s have a bunch of different varietals, one of each. Well, I can understand why people eager to learn want to do that, but I don’t recommend it. For one thing, doing that means you will only have one example of a varietal. There are so many different forms of syrah, for instance. Just tasting one doesn’t in fact give you a “good read” on syrah. You’d learn more by being more focused. More importantly, some varietals just do not go well together. They clash. They harm each other. They complicate the Glasses Crisis, discussed above. For instance, no one sensible would recommend a flight of grassy, pungent Sauvignon Blancs, followed by a flight of elegant Pinot Noirs. The sauvignon blancs will make it difficult to taste anything subtle for awhile. You’ll need new glasses. The varietals have nothing in common. Similarly, drinking a flight of oaky, fruit forward shiraz followed by a flight of very tannic, mute young Barolos, isn’t going to work. The Barolos will seem dull if drunk after the shiraz. If drunk before the shiraz, their tannins will likely make it difficult to move quickly to the shiraz. These just clash!
Age is another issue in determining service order. Generally, assuming that older wines are more gentle and restrained, and younger wines fruitier and more tannic, I’d serve the older wines first in order to allow the more gentle wines to show well. It makes no sense to me to serve a 2000 Lynch Bages, followed by a 1985. The 1985 will just seem dull and overpowered. This all depends, to be sure, on exactly HOW young your young wines are, and HOW good. If you are talking about a 1999 Lynch Bages instead of the more powerful 2000, the equation changes, even though chronologically there is merely a year’s difference between them. The 1999 is less likely to overwhelm more mature wines. Similarly, if you are talking about the 1989 Lynch Bages versus the 1999–well, the equation changes again. The 1989 is a very powerful wine, more so than the 1999. I’d serve the 89 second. Age, in other words, does not always correlate with gentility, but the idea is to serve the more restrained wines first so that the more exuberant and powerful ones do not overwhelm them.
Another issue that comes up is whether to do the tasting blind or not. Blind tastings have many virtues. They remove preconceptions about the wine. They let you test your ability to pick out typical aspects in the wine. In some ways, however, blind tastings are also deceptive. Some wines, particularly young, tight and tannic ones, are hard to evaluate in a quick taste. Knowing what they are–if you know the winery well and how their wines typically evolve–can give you some clues. You can say mentally to yourself, “This is just how the 1994 showed at this age, and it came out well. I sense the same tannic structure and layers of fruit underneath.” Still, blind tastings are certainly fun and instructive and should be an occasional part of your repertoire.
The biggest negative of blind tastings in my view is at big events where no one person is really in control of the planning. Suddenly, everyone starts talking about bringing this and that, and chaos ensues. This tends to happens with “offlines” from folks on my bulletin board. It is very hard to plan coherent flights under these circumstances, and blind tastings make it more aggravating still, for two reasons. First, not knowing what is going to be coming, you risk having an incompatible mish-mash of wines. A mature Pinot Noir, followed by a young Cabernet, followed by a big shiraz, etc. It makes little sense. Second, even if you manage to impose some theme, it is still hard to organize the flights. You may have wanted to put all the 1990 Burgundies in one flight. But you may find yourself drinking a 2002 next to a 1990, and so on.
So, there are some tips. It is an art form–not a science. Don’t hesitate to experiment and take your own preferences into account. Just remember to think through what you do.

Here are some ideas on organizing your fundraising event …

May 19, 2011

March 17, 2011

A Beginner’s Guide to Learning About the World of Wine.

Step 2:

The second step is to select five to six wines and note the regions. Visit your local wine store and ask to speak with a sales representative or knowledgeable staff member for recommendations. Remember, you are looking for basic, ‘beginner’ wines for now, and can move onto the more in-depth and Reserve wines at a later date.

Step 3:

Wine lover’s choice – Yats Restaurant and Wine Bar – for the most impressive and practical wine list in the Philippines, over 2700 selections, enough to satisfy the most fastidious connoisseurs. Wine lovers and gourmand foodies from Hong Kong, Singapore, Japan, Korea and Malaysia dine at Yats Restaurant & Wine Bar when they visit Philippines and bring home some rare vintage wines too.

An excellent wine list is not just about 1st growth and cult Cabernet but a seemingly unending selection of affordable aged vintage wines that are not available anywhere else, not even in the best wine shops around town. Yats Restaurant has just that.

Visitors to Clark Philippines and Angeles City no longer suffer from lack of choices for places to eat out or wine and dine. Clark Philippines reviewed over 50 establishments and came up with three top choices in guide to best restaurant in Clark Freeport
