Clark Chamber of Commerce’s letter to mayor questioned

ANGELES CITY -– The Office of the City Mayor said a letter from the Metro Clark Chamber of Commerce and Industry (MACCI), which asked for the reduction of the city budget, has been questioned by many of those whose names were included as signatories.
Marco Nepomuceno, regional director of the Philippine Chamber of Commerce and Industry (PCCI); Arsenio Valdes, past president of the Environmental Practitioners Association; Cynthia Gueco, past president of Rotary Club Kuliat; Gerry Tayag of Taguete Realty Inc.; and lawyer Alejandro Buan, president of the Integrated Bar of the Philippines (IBP)-Angeles Chapter, denied signing the document or giving permission for their electronic signatures to be pasted in the letter.
Lawyer Buan said there is no IBP-Angeles Chapter but only IBP-Pampanga and Angeles City Lawyers League.
City Administrator Dennis Albert Pamintuan said the MACCI leadership, particularly its president, Frankie Villanueva, should explain why many of the group’s officers denied signing the letter.
“We understand the concern of MACCI, which we consider as a partner in the development of Angeles and we respect its position. However, there are certain realities that we must consider, even as we assure MACCI that we shall be very prudent in the disposition of our budget,” Pamintuan said.
Pamintuan said the increase in the budget of the city from P1.2 billion in 2012 to P1.3 billion this year is necessary to implement key programs and obligations of the city, including the last tranche of the Salary Standardization Law (SSL), the transfer of the City College of Angeles from its temporary location at the City Library to its new campus in Barangay Pampang, among others.
He lamented, however, that the issue raised has political undertones. Curiously, the MACCI letter has jibed with a recent media statement of Representative Carmelo Lazatin that the city budget has been “overestimated.”
Pamintuan said the approved 2013 budget is proportionately less compared to the budget increases of the previous administrations, considering the programs of the current administration, inflation and payment of loans by the past administrations of Lazatin and Nepomuceno and the reduction of the city’s share in the internal revenue allotment (IRA) from the National Government.
He said the implementation of the final phase of the SSL would require P150 million for 2013, while debt servicing is budgeted at P130 million annually.
City treasurer Juliet Quinsaat also denied that the city has not achieved its revenue collections target in 2012, contrary to the claim of MACCI. She said total collections in 2012 (as of November 22) was already P411 million.
“Even their figures on the city’s 2011 of P249 million was inaccurate as the actual collections based on records for that year for business taxes and licenses was P409 million,” Quinsaat said.
The group also asked why they were not invited in the budget deliberations. But contrary to their claim, Angeles City Vice Mayor Vicky Vega-Cabigting clarified that the budget deliberations have been opened to the public and was even repeatedly announced over the radio.
“Members of the media were present during the deliberations, but they or any other private groups and individuals cannot participate in the discussions and approval of the budget as only the members of the Council are authorized to do so,” she said.
Vega-Cabigting said the budget was approved by the City Council after lengthy and careful deliberations, and has already reduced it.
The City Council also attached a provision to the budget that 10 percent of the Special Programs Fund may only be programmed if local tax collections increase, Vega-Cabigting said.
In compliance with the provision, Pamintuan said the Office of the Mayor already issued a memorandum calling for 20 percent of the Special Program budget as well as the maintenance and other operations expenses (MOOE) of departments be set aside as “reserved funds.”
“Further, we are still on austerity mode and continue to implement the Executive Order on austerity measures,” Pamintuan said, adding that there are obligations incurred by the previous administrations that must also be amortized.
Both the Lazatin and Nepomuceno administrations separately acquired loans from several government banks totaling to almost P1 billion.

CLARK FREEPORT — Cebu Pacific Air and CAE, world leader in aviation training, inaugurated Monday their new aviation training center inside this Freeport.
The joint venture, known as the Philippine Academy for Aviation Training Inc. (PAAT), will initially cater to Airbus A319/320/321 series pilot type-rating training requirements and will provide “wet” instructor-led type-rating training to CEB’s current and new-hire pilots, and to other aircraft operators of the region.
“PAAT will definitely put the Philippines on the map when it comes to world-class, state-of-the-art aviation training,” said Cebu Pacific Air president and CEO Lance Gokongwei.
“This is the first CAE aviation training center in the Philippines, and we are very proud of this joint venture. It will be essential in meeting the training requirements not only of our growing number of aviation professionals at Cebu Pacific Air, but also of other aircraft operators in the region,” said Gokongwei.
CEB will take delivery of a total of 50 Airbus A320, A321neo and A330 aircraft until 2021. It is scheduled to launch its long-haul flights in the third quarter of 2013.
“CAE is very pleased to partner with Cebu Pacific Air to offer the highest-quality aviation training in the Philippines,” said Jeff Roberts, CAE’s Group President of Civil Simulation Products, Training and Services.
“Our global network of training locations provides airlines and other aircraft operators a complete training solution for their personnel. The PAAT is equipped with the latest simulation and training technology, and the training is delivered by well-qualified, experienced instructors. We are confident that this new facility will enhance aviation safety and operational efficiency in the region,” he added.
The state-of-the-art training center is currently equipped with one Airbus A320 full-flight simulator. Delivery of a second A320 simulator is planned for 2013, and the facility can accommodate two additional simulators.
The center will have the capacity to train over 2,500 pilots annually, as well as other aviation professionals, offering initial, recurrent, conversion and jet indoctrination training to Airbus operators. Training for other aviation personnel such as cabin crew, dispatch, ground handling personnel and cadets is also planned for the future.
This is the 45th location in CAE’s global network of training locations for commercial aircraft, business aircraft and civil helicopter operators. PAAT is also part of the CAE-Airbus Training Cooperation Network.

Wine goes with cheese. Meat sandwiches go with a pickle. Green tea goes with Asian food. Sushi goes with pickled ginger. Oil goes with vinegar. Soda goes with chips. Many of the world’s most beloved food combinations pair an astringent food, which causes the mouth to pucker up, with a fatty food, which makes the mouth feel slippery.
But why? “The kernel of this idea of pairing astringents with fats is found in gastronomies all over the planet, but it’s never been clear how or why these pairings work,” said Paul Breslin, an experimental psychologist at RutgersUniversity and Monell Chemical Senses Center who studies taste perception.
In a new paper published online Oct. 8 in the journal Cell, Breslin and colleagues propose a theory of food pairings that explains for the first time how astringent and fatty foods oppose one another to create a balanced “mouthfeel.”
Because fat is oily, eating it lubricates the mouth, making it feel slick or even slimy, Breslin said. Meanwhile, astringents, chemical compounds such as the tannins in wine and green tea, make the mouth feel dry and rough. They do this by chemically binding with lubricant proteins present in saliva, causing the proteins to clump together and solidify, and leaving the surface of the tongue and gums without their usual coating of lubrication. We don’t like slimy, but we don’t like puckered up, either. “We want our mouth to be lubricated but not overly lubricated,” Breslin told LiveScience. “In our study, we show that astringents reduce the lubricants in the mouth during a fatty meal and return balance.”
Although this food-pairing idea had been proposed before, it was a mystery how that balance might actually be struck, because wine, green tea and the other widely consumed astringents are only mildly astringent. No one knew how they managed to cut the fat as well as they do. [Will People Really Be Forced to Stop Eating Meat?]
The researchers discovered that astringents have a stronger effect each time the mouth is exposed to them. Every time study participants took a sip of green tea, for example, they perceived it to be more astringent than during the previous sip, indicating that the astringents were reacting more strongly with the lubricating proteins in their mouths upon each exposure. This growth in astringency is why, even though tea and wine have only a weak effect at first, sipping them throughout a fatty meal eventually enables the astringents to counterbalance the strong lubricating effect of the fat.
A second experiment supported this conclusion. When the study participants alternated their sips of tea with bites of salami, the perceived slipperiness of their mouths (caused by the fatty salami) gradually decreased as they took more sips. When they sipped water, by contrast, the slimy feeling in their mouths continued to build.
The importance of repeated exposure explains why we don’t tend to gulp down an entire glass of wine then eat our entire steak. Nor do we polish off our whole pickle before setting into our sandwich. The new research justifies the widespread use of astringent foods as “palate cleansers” that people sample throughout a meal.
This general principle of yin and yang food pairings goes part of the way in explaining gastronomy, but what about the specifics? Why do we pair sushi with pickled ginger rather than with a soda, despite the fact that they’re both astringents? And why does cheese seem to taste better with red wine than with green tea? As Breslin put it, “Is there something to the idea that a particular astringent and a particular fatty food go together?”
The famous pairings could simply be cultural accidents — a matter of which foods were available in which regions. But Breslin said it’s also possible that cultures have unknowingly worked out the most balanced pairings based on the chemical properties of the foods.
“Different kinds of astringents give rise to different rates of growth of astringency. As you repeatedly sample them, one will have a steep rise and the other a shallow rise,” he said. “It could be that there’s a particular mixing of an astringent and a fatty food that determines how strong the astringent is going to be and how quickly it gets there. This is a mystery of gastronomy.”

Why red wine and red meat pair so well

For any gourmand who has ever wondered why certain wines pair so well with a hearty steak, or how a palate-cleansing sorbet works its magic between courses, science has an answer now.
Oral astringents — substances that elicit a “rough” or “dry” taste, such as high-tannin wines — occupy the exact opposite end of a taste spectrum relative to substances with fatty, or “slippery” qualities, such as steak, according to a study published Monday in the journal Current Biology.
Because the dry wine and slippery beef tastes are opposites, they are constantly working to undercut, or reduce, the opposing sensation during the course of a meal, the study said. If diners sipped only water with their steak, they would perceive much more quickly the sensation that their mouths had become coated with fatty, or slippery, substances, it said.
“The opposition between fatty and astringent sensations allows us to eat fatty foods more easily if we also ingest astringents with them,” said study author Paul Breslin of Rutgers University and the Monell Chemical Senses Center.
The researchers found that astringent sustances such as wine, tea, sorbets and pickles need not be strong to oppose fatty sensations. That’s because the overall sensation of dryness or roughness builds with each bite or sip.
The affinity that people have for oppositely paired tastes may be due to the body’s need for a diverse diet, according to Breslin.
“The mouth is a magnificently sensitive somatosensory organ, arguably the most sensitive in the body,” he said. “The way foods make our mouths feel has a great deal to do with what foods we eat.”

How South African Wines Can Re-Engage the U.S. Market

South Africa is entering a new era of producing fresh, exciting, and beautifully crafted premium wines, yet many wine consumers in the USA have still not had a chance to taste the latest style. Instead they have lingering memories of giraffe labels and “burnt rubber” tastes in South African wines from a decade ago.
Yet at the Capewine conference this past week, the more than 650 South African wine producers and the 3500 grape growers supporting them, showcased exquisite chenin blancs and complex cabernet sauvignons, syrahs, pinotages, and red blends from all regions, and fresh chardonnays and pinot noirs from the Cape South Coast. I was able to taste more than 300 wines, and only found a few with the “rubber” taste, or what others dub as “eraser or band aid” notes.
So what does South Africa need to do to change their public image in the US, and achieve the same export success they have in the UK and Scandinavia? Following are a five first steps that may help them reintroduce the exciting wines they are now producing.
1) Acknowledge Former Quality Issues
“We exported a lot of wines we shouldn’t have,” one South African winemaker told me. “After Apartheid ended, we had so many countries asking to buy our wines that we shipped everything without checking to make sure it was quality wine.”
Indeed, for those Americans who have tasted South African wines, the first experience wasn’t always memorable or pleasant. Many were introduced to inexpensive semi-sweet chenin blancs with giraffe or leopard labels that they picked up in a grocery store. Though fun to try once, the innocuous flavor didn’t convince many to buy a second bottle. Others, who encountered the burnt rubber tastes of the early pinotages, swore it would never pass their lips again. This is unfortunate, because I tasted some pinotages this time that were so fresh and fruity they could have been a lighter bodied spicy syrah.
Therefore, admitting to former quality issues, and explaining how the “burnt rubber” taste has been almost completely eliminated by replanting virused vineyards and adopting modern winemaking methods, is an important first step for Wines of South Africa (WOSA). When other countries have experienced quality issues, such as Austria with their anti-freeze scandal and, more recently, Italy with its Brunello glitches, acknowledging the problem and communicating solutions is the best way to move forward.
2) Showcase Country Images with Unified Marketing Message
“I’ve been trying to sell South African wines in the US market for more than 20 years,” said one US importer, “but Americans just don’t seem interested. The concept of wine from Africa is alien to them.”
This statement rings true, because I had a couple of people say to me before I left – “I didn’t know they made wine in Africa.” And several college-educated friends said, “So which country in Southern Africa are you visiting for your wine conference and tour?” When I answered that the name of the country was “South Africa,” they were surprised. Yes, many Americans are geography challenged.
Therefore WOSA should consider developing a unified and memorable marketing message with positive images illustrating the beauty and location of the country. Photos showing the dramatic landscape of mountains, vineyards, and ocean, as well as local people, food, music and dance could assist in the process. A catchy slogan that helps Americans recognize the location and quality of South African wines would be extremely helpful. Indeed, just five years ago, many Americans hadn’t heard of Argentina and malbec. Now most wine consumers recognize both.
The fact that the various wine regions and associations of South Africa are working more closely than they ever have before, should help in the development of a unified marketing message for this purpose.
3) Lead with Chenin Blanc
New Zealand took the world by storm with its unique style of sauvignon blanc. South Africa should consider leading with its chenin blancs, which are some of the most beautiful I have ever tasted. Furthermore, except for the Loire Valley, no other region is focusing on chenin blanc to the extent of South Africa.
South Africa has a wide variety of chenin blanc styles that should appeal to multiple consumer segments. My favorites are the bone-dry chenins with a peach nose, mineral palate, and clean high acid finish — wonderful food wines. At the same time, I also tasted some exquisite semi-sweet chenins with aromatic peach and honey notes that make a great sipping wine. Then there are the fuller-bodied and more serious oaked chenins with complex flavors that have been developed through oak fermentation, battonage, and malolactic fermentation. These wines give chardonnay a run for its money.
4) Court Sommeliers
Another good entry point in the US market is via the sommelier circuit. This is because many of the premium wines South Africa is producing are a unique mix of styles, with the ripe fruit nose of the New World, but the minerality, terroir notes and higher acids of Old World wine countries. This makes these wines a perfect compliment for food, but often requires a hand-sell from an expert who can tell the story of the vineyard and property. Sommeliers are in an ideal position to do this.
WOSA was wise enough to invite several influential American sommeliers to Capewine, and the ones I spoke with were very complimentary about the potential of South African wines. Dedicated follow-up, and perhaps more hosted tastings of South African wines in the US market, should assist in this process.
5) Communicate Sustainability & Fair Trade Efforts
With its very unique flora and fauna, South Africa was an early adopter of environmental practices in agriculture. It is the only country that has one of the world’s six floral kingdoms within its borders, marked by the unique fynbos family, including multi-colored protea flowers that grow wild along the roadsides. In addition, it has very unique animals, and visitors can see baboons, greysbok, and even the occasional leopard in the vineyards.
Because of this, many wineries and vineyards have adopted sustainable winegrowing practices, and some are gravitating towards organic and biodynamic certification. In addition, complete winegrowing regions are creating ecotourism zones. The Green Mountain Eco Route, blending wine and biodiversity, is a good example of this.
On the social equity side, South Africa is working even harder than many countries because it the legacy of Apartheid. Some wineries are FairTrade certified, which includes adopting social practices such as fair pay, assisting with child education, health, and other equity issues. These commendable measures should be communicated as part of their wine marketing message.

Winegrowers: What to Do With a New AVA

Cloverdale, Calif.—It took years of preparation, a name change and somewhere between $50,000 and $100,000, but the Pine Mountain-Cloverdale Peak AVA won TTB approval just about a year ago. Since then, the scant dozen grapegrowers and winemakers in this remote, high-elevation appellation in northeastern Sonoma County have founded an association, a website and are working together to build a brand focused on high-end, high-elevation Bordeaux varieties. Grower Barry Hoffner owns Silverwood Ranch with his wife Jackie. Their 1,200 acres of vineyards represent about 25% of the AVA’s total acreage. Most of their grapes are sold to Francis Ford Coppola Winery in nearby Geyserville, and a small amount goes to Miro Cellars, which makes a vineyard-designated Cabernet Sauvignon. Hoffner leases some 30 acres at 1,800-2,600 feet to Benziger Family Winery, which grows 11 different grape varieties for its high-end Imagery Estate Winery brand. Imagery’s 2010 Malbec is now ready for release, believed to be the first to bear the Pine Mountain-Cloverdale Peak AVA in addition to the mandated Sonoma County label.
A long gestation After several years of preparation, the growers submitted their petition for a subappellation to the TTB in fall 2010. At that time, it was to be called Pine Mountain/Mayacmas. The “Mayacmas” is a Native American name that appears on official maps and was intended to distinguish it from innumerable Pine Mountains across the continent. However, Mayacamas Vineyards (spelled slightly differently) was already a well-known Napa County wine brand, so petitioners adopted “Cloverdale Peak” to win final approval.
“It turned out to be a blessing in disguise,” Hoffner told Wines & Vines. “Cloverdale is an up-and-coming city, one of the best little towns in the United States. We’re linking ourselves up with Cloverdale.” AVA “partners” met last week with the mayor and other officials to talk promotion. Mike Foster, owner of Tin Cross Vineyard and Captûre Winery, also has been involved in the AVA since it first was conceived. Under winery CEO Ben Sharp and winemaker Denis Malbec, Captûre already is earning a reputation as a premier luxury brand. Its first vintage of Cabernet Sauvignon, released in 2011, earned 90-plus scores from critics and retails around $90-$140. According to Foster, the long-term benefit of the AVA is to market and produce a great brand for the terroir. “Pine Mountain has been delivering very good fruit to really good brands. The notion for us is that we really believe we can and should brand Pine Mountain as the premium, high-elevation luxury brand,” he said.’’ With many of its more famous neighbors anchored in comparatively lowland terrroir—Alexander Valley, Dry Creek Valley, Russian River Valley, Sonoma Valley—the emphasis on high-elevation identity does make Pine Mountain a standout, as does its emphasis on classic red Bordeaux varieties. Hoffner pointed out that most of the AVA’s grapes already are contracted to established producers, so increasing grape prices was not an immediate goal for the appellation. But, Foster said, “Using the AVA as a central theme as we travel across the country, we hope our vineyard values will grow, and that more precision-farmed vineyards will help with better grape prices and, eventually, real estate prices.” Foster said the story has proved to be fascinating to wine buyers across the country. “The concept of a new, small, high-elevation, exclusive AVA with not a lot of acres planted and not a lot more to plant” is alluring, he said. “I believe having an AVA like this, that will be marketed all over and reflected on the premium bottles of wines, should have a long-term effect on our property values.” He’s a fan of Cloverdale and its Wild West history. “I don’t think the world sees Cloverdale like Healdsburg,” he said. “I like the name a lot. It’s frontier territory, rugged. It’s on the edge. Black Bart robbed stage coaches on Cloverdale Mountain.” Common goal: uncommon wines Hien Nguyen bought his 34 acres of Cabernet Sauvignon and 2 acres of Cabernet Franc vines three years ago. Although the vineyards were planted 14 years ago, he’s a raw novice in the wine business, a professor of mathematics at the University of Montana in Missoula looking for a “retirement” career. Ulises Val dez manages the vineyards, and Thomas Rivers Brown has come aboard as winemaker for Nguyen’s soon-to-be licensed brand, Ampere. Brown made about 375 cases of 2010 Cabernet Sauvignon. San Francisco’s Treasure Island Winery bought some grapes for a 2010 vineyard designate wine. “As little as I know,” Nguyen said modestly, “It’s important to give indication to the consumer that there is something that allows the wine to be distinguished. The label itself doesn’t mean too much. It’s like an empty vessel. You need to brand the premium wine, the grapes, the vineyard. “In my case, the production will be small. Probably we’ll sell online, through a wine club and rely on informal marketing. The full story, in the end, is the quality. We’re trying to define a standard for the AVA. We want to do it together, and find very good winemakers to promote our quality.” Without the AVA, he believes, “People would be much less justified in investing the energy into producing extraordinary grapes. We work together to have a higher standard. The AVA is the platform, the opportunity to separate ourselves. To make it meaningful, we have to make it very good. We are all in agreement. It’s our common goal.” Imagery Wines is the first to release designated wine from the Pine Mountain-Cloverdale Peak AVA, its 2010 Malbec. Imagery is growing 11 varieties on the mountain; “Not all are mature; Malbec is the first,” said Jessica LaBounty, director of marketing for Imagery and its parent, Benziger. “We’ll probably be doing some blends with Tannat, Teroldego and Tempranillo, but our intention now is for single-variety wines.” Current production from Imagery is about 10,500 cases per year from various appellations, sold 100% consumer direct at the tasting room and through the wine club. “In general,” LaBounty said, “Whenever you can be as specific as possible there is a benefit to the winery. It’s an opportunity to educate the consumer,” and the smaller the defined space, the better. “Sonoma is not like other places with a tremendous amount of continuity,” she pointed out. “For Imagery in particular, the whole spirit of the brand is discovery and tasting things you’ve never tasted before, about educating and sharing; standing at the bar and explaining why we’re planting what and where.”

Hopes of London wine harvest destroyed after greedy birds take grapes

Dreams of producing the first wine in a part of London for 300 years have been left crushed after the grapes were taken.
Nik Darlington hoped vines in Richmond would be harvested and the first brew from that patch since the 18th century would be made.
However, when he and other bosses at Red Squirrel Wine woke on Friday, they found more than 70 per cent of the grapes had been plucked from their stems.
Mr Darlington, 26, said: “It is disappointing because it would have been quite fun.
“I don’t think anyone was mendacious enough to steal the grapes – I think it was just greedy birds.”
After they were due to be picked from the vines outside Red Squirrel’s central headquarters in Richmond, the grapes would have been fermented to make a small amount of wine.
Mr Darlington has lived on St James’s Cottages for three years and noticed the vines were producing healthy bunches of red grapes year after year.
They are just minutes away from The Vineyard, where wine was produced in the 1700s.
He said: “I just walk past it every day and the last couple of years I thought we could do something with this.
“What we wanted to do was raise awareness that the local area used to produce its own wine.”
He added the depleted vines were a trend across Europe, with crops across the continent showing a decrease in yield by as much as 70 per cent because of poor weather conditions.
Mr Darlington said he was keen to try again next year and urged people in the area to donate excess grapes to create a London wine.
He said: “We are now appealing to anyone who has surplus grapes to give them to us so we can make some wine at least from London. Roughly 1kg of grapes makes a bottle of wine.”

The pros and cons of online wine sales

If Amazon.com jumps into the wine business, as I discuss in my column this week, it could give a dramatic boost to online vino sales.
Internet-based wine sales currently are dominated by Wine.com, which shipped 2.2 million bottles last year. Other smaller models have struggled. Lot18, a “flash sale” site that offers time-limited discounts on select wines, folded its British operation earlier this year. A new site with a similar approach is called VelvetPalate.com.
Flash-sale sites like to brag about their deep discounts on hard-to-find wines, but as a consumer, it pays to do some research. The “retail” prices listed on Velvet Palate, for example, are considerably higher than I could find elsewhere online, making the site’s sale prices less dramatic.
On a recent sale for Cicchitti Emkem Malbec 2006 from Argentina, even the $24 sale price was high — I saw the same wine listed elsewhere for less than $20. And as a Maryland resident, I couldn’t have bought it from Velvet Palate anyway. That’s because Maryland’s new law, which took effect in July 2011, allows direct shipping to state residents by wineries, but not by retailers. (Like most sites that facilitate such sales, Velvet Palate does not identify its vendors.)
However, I could have purchased two bottles of Bella Vetta Cabernet Sauvignon 2007 from Napa Valley, which Velvet Palate offered for $60 with free shipping, marked down from its “retail” price of $113. That’s presumably because the winery would be shipping the product, while the aforementioned Argentine bottle likely would come from a retailer. And I could have saved money on this deal: Bella Vetta’s Web siteoffered the wine at $45 a bottle, and I would still need to arrange third-party shipping.
What’s more, Velvet Palate has a nice graphical way of describing a wine’s flavor profile, and when I submitted a food-wine pairing question to the site’s “virtual sommelier,” I received a thorough and well-reasoned answer within a few hours.
Consumers looking for a direct connection to exclusive European wineries should explore VinConnect.com. The site is the brainchild ofKevin Sidders, a former investment advisor to Silicon Valley software firms, who enjoyed exploring California’s boutique wineries and buying bottles through their mailing lists. Sidders, who now lives in Charlottesville, applied the mailing-list concept to foreign wines. Visitors who register at VinConnect (membership is free) can sign up for e-mails and special offers direct from the wineries.
VinConnect launched a year ago and has a short-but-impressive list of French and Italian wineries, including famed Burgundy producer Clos du Tart, Domaine du Pegau from Chateauneuf-du-Pape and La Spinetta, a noted barolo producer from Piemonte.
For the wineries, VinConnect offers a direct link to their U.S. consumers without relying on the importers or distributors who themselves are a tier or two away from the consumer in the three-tier system. For the wine lover, VinConnect provides a personal connection to the vintners and a chance to snare some hard-to-find wines. And that’s what direct shipping is all about.

Taking the trauma out of recorking wine

The more age-worthy a wine, the more likely it’s going to need recorking at some point in its life. And, while the procedure is something you can try at home, it’s not a procedure to be done carelessly or taken lightly. If it were me and the wine in question was worth hundreds, never mind thousands of dollars, I’d summon an expert, leaving nothing to chance.
But those who collect the great Penfolds wines have the best option of all. The famous Australian winery’s head winemaker, Peter Gago, travels around the world with several of his assistants each year to handle the recorking himself.
When Gago brought the Penfolds “clinic” to Houston in September, he joked that he’s mostly motivated by all the frequent flyer miles he can collect. In reality, Penfolds hit upon a brilliant marketing plan when they launched these globe-trotting clinics in 1991. Gago and his assistants get quality face time with their best customers – the people who have the legendary Grange and other prized Penfold collectibles in their cellars – and they perform a necessary service for both the winery and the owner of the wine bottle.
“It allows us to assess how our wines are aging and give the client our recommendations on when they should be drunk,” Gago said. “There’s rarely a problem with wines that have been stored our cellars, but once we sell a bottle, we don’t know what happens to it. Storage is so crucial to protecting wine.”
Before his Houston visit, Gago conducted a clinic in New York in which he recorked a 60-year-old bottle of Grange worth $50,000.
To everyone’s relief, it was doing splendidly. It got a new cork and a new capsule, then was returned to the owner’s cellar.
Even corks in perfect condition allow some wine to evaporate over time – ullage – which is easily observed by how much space there is between the top of the liquid and the bottom of capsule. Penfolds has developed a system using a color-coded card that fits snugly against the neck of the bottle to visually illustrate the owner if recorking is necessary.
Because owners of rare and prized bottles can be reluctant to allow recorking – there’s always risk in exposing wine to air – the card removes the angst from the decision.
If the gap is less than eight centimeters deep (the green zone), recorking is most likely unnecessary. If the gap exceeds 9.5 centimeters (the red zone), you might as well pop the cork, swallow hard, then swallow the wine. If it’s still good, say “hallelujah!” and quickly throw a party. Penfolds will recork these wines and top them off, but they won’t recertify them, meaning they won’t be auction-worthy.
It’s the wines with gaps (or what’s also called “la part des anges,” which means the angel’s share) between eight and 9.5 centimeters that most profit from recorking.
If Gago or a team member pronounces the bottle sound after tasting, it gets topped off with the current vintage of the same wine – i.e., old Grange gets new Grange – a replacement capsule is put in place and a signed, computer-coded certification sticker is attached to the back of the bottle.
Then it’s wrapped in white tissue paper, just as a new one would be.
I’d always thought the tissue was just a fancy finishing touch – you never see the stuff on supermarket wines, after all – but Gago corrected me.
“Tissue,” he said, “makes it easy to tell if a bottle is leaking. That’s why you should keep it there.”
Penfolds recorks, free of charge, any of its wines that are least 15 years old. The team travels with a state-of-the-art single-bottle-at-a-time corking machine.
They also offer current-release tastings while you wait for your appointment. The gregarious Gago has been with Penfolds for 23 years and took over for the departed John Duval as Penfold’s cellar chief in 2002.
Now, a decade on, he’s the world’s reigning “Winemaker of the Year,” as chosen by the Institute of Masters of Wine in February. Gago loves hitting the road during what should be his quiet season because it permits him to revisit wines he had a hand in making and also meet the folks who treasure them. Spreading good will and providing an important service – plus collecting all those frequent-flier miles – makes for a happy traveler.
