Wine is not just a fad but a deep-rooted pastime for the residents in Manila, Angeles City Pampanga and Cebu. More and more tables in Philippines’ upscale restaurants are graced with bottles of wine as customers forgo the traditional iced tea and cold beers for a more sophisticated dinner beverage – wine.

As the Philippines’ wine-drinking population grows at impressive speed some top restaurants in Manila and Pampanga respond by offering set dinners and prix fixe menus that include wine or at least offer suggestions for wine and food pairings. One restaurant in Clark Pampanga which is already well regarded by Philippines wine lovers to be more advanced than all other restaurants in the area of food and wine pairing has unveiled a series of wine-paired dinners for this year. Dubbed “wine appreciation diners”, this restaurant in Clark Pampanga offers 4 or 5 course dinners paired with 4 kinds of wine. The price of php1,500 per person surprised many wine lovers, in a most pleasant way, causing even Manila wine drinkers to drive up to Clark Freeport to enjoy a nice dinner with friends and family.

Yats Restaurant and Wine Lounge is already recognized internationally for its award-winning wine list which boasts no fewer than 2500 items. Blessed with such a vast selection of wine and an incredible depth of vintages for many wines, this restaurant has the ability to select precisely not only the wine to pair up with a certain food recipe but also the perfect age of that wine also. This is something that no other restaurants in Manila or anywhere in Philippines can match.

Menus for wine appreciation dinners are posted on the web site of this restaurant in Clark Pampanga. Wine lovers who are interested to find out more may click on this link:

Restaurants in Clark Pampanga as well as neighboring cities like Subic, Angeles City and San Fernando appear to react in different ways to the trend of increasing focus paid to wine list by regular customers. Although most Pampanga restaurants appear to take this seriously some owners are complacent and adopt a wait-and-see attitude. The more successful restaurants in Pampanga have reacted quickly to face this challenge head on, although each restaurant seems to have its own way to deal with it. The common denominator in their approaches seems to be allotting some of their profits to projects aimed at improving their products, services and facilities.

One restaurant in Clark Pampanga at least decided to go back to the basics in search of flaws and weaknesses that had largely been overlooked in the past. This restaurant appears to be taking a longer term approach to re-engineering itself to stay competitive for decades to come. For more information about their approach, please log on to:

Pampanga Clark Freeport Zone is poised to be the preferred destination for foreign investments and tourism. Low crime rate and a generally peaceful ambience of the city make it conducive to investment projects in retirement and hospitality. For more information about Clark, log on to http://www.ClarkPhilippines.com

Clark is also frequently visited by Manila wine drinkers for a little wine shopping. In Clark Pampanga there is a large wine shop called Clark Wine center which offers over 1500 selections of wine from all wine regions of the world at all price points. Most of the wines are not available in Manila. For more information, log on to http://www.ClarkWineCenter.com

Nespresso Coffee catches fire in the Philippines! But the fire is running out of fuel.

Despite dozens of luxury coffee options not to mention several new international coffee chains like Seattle’s Best and Starbucks, coffee drinkers in Manila, Cebu, Pampanga and other major cities in the Philippines opt for the one coffee option that seems to satisfy them the most – Nespresso.

Nespresso Coffee Pods

The revolutionary technology developed for Nespresso coffee capsules uses an exclusive packaging system that entails placing the right quantity of coffee grounds into one individual capsule. Each coffee pod contains exactly the right amount of fresh, finely ground coffee for one espresso.

The sleek Nespresso capsules are hermetically sealed in 100% recyclable aluminum capsules to totally protect from the harmful effects of air, light and moisture to ensure that the ground coffee remains fresh over time.

By means of a sophisticated packaging process, exclusive to Nespresso, all the qualities and flavor of the freshly roasted coffee are sealed for at least nine months, providing optimum quality at every moment of consumption. The result is always ideal gourmet cup of coffee!

Nespresso Coffee Machines are just about the easiest piece of equipment to operate, many coffee drinkers in the Philippines say it is easier than a simple microwave oven or even a toaster. Two little buttons to push, one for espresso and one for a regular brew so it doesn’t really take a great deal of reading and practising to get this show on the road, is it?

Fine dining Yats Restaurant & Wine Lounge in Clark Pampanga Philippines

Finding places in the Philippines to buy Nespresso Coffee Capsules, also called Nespresso Pods, is a totally different story. For a long time, Nespresso Coffee Machines users in Manila, Cebu, Angeles City and other cities in the Philippines were stranded with no practical and economic means to get a regular supply of Nespresso coffee pods.

It was not until just three years ago that this problem was rectified by a company called Yats International. What brought about the availability of Nespresso Coffee Capsules in the Philippines was the regular clients of Yats who approached Yats, pressured them even, to find a solution even thought Yats does not sell or service Nespresso coffee machines at all. Bowing to customer demands and keeping up with their reputation of taking the best care of their private clientele in the Philippines who purchase fine vintage wines regularly from Yats, they started to offer Nespresso Coffee Pods to their regular VIP clients.

Anyway, if you are a new Nespresso Coffee Machine owner and you are looking for a place to get your Nespresso Coffee Capsules and coffee pods in Manila, Pampanga, Cebu, Borocay or any other cities in the Philippines, contact one of these Yats outlets:

Bar in Clark Pampanga is pleased to keep clients and visitors to this Pub informed of news and happenings in Subic, Pampanga Angeles City and Clark Freeport Zone.

Felipe Fernández-Armesto on the origins of the restaurant, haute cuisine and Champagne, and the sorry case of the tardy lobster.
1400ad
The first French cookbooks imitated Moorish cuisine. Sugar, still a luxury, made food sweet. Saffron gilded it, rose water perfumed it, and milk of almonds made it rich. Today’s taste for tajines and couscous is an echo of the middle ages.
1500
The Renaissance: artists of the skillet discarded the Moorish palette. The new chefs were Italian, inspired by the sharp, salty, viscous preferences of ancient Rome. The physician at the court of Henri II (born 1519-died 1559) was alarmed at the rediscovery of fungi as food: these “phlegmy excretions”, he warned, were ancient murder weapons, which massacred banqueters in antiquity. Fine wine, another Roman obsession, played a complementary part, stimulating appetites and aiding digestion. Château Latour was recommended as a digestif by the essayist Montaigne (1533-1592), a gourmand who ate so ravenously that he bit his fingers in his frenzy for his food.
1600
Royal patronage promoted French cooking. Henri IV (1553-1610), who aimed to put “a chicken in the pot” of each peasant, funded banquets as lubricants of policy. The table of Louis XIII (1601-1643) featured 22 kinds of fish and 28 of fruit. The “complaisant digestion” of his successor, Louis XIV (1638-1715), introduced enlightened gluttony to the court. Louis’s sister-in-law saw him eat “four soups, a pheasant, a partridge, a plate of salad, sliced mutton with garlic, two lumps of ham, a plate of pastries, fruits and preserves” at one sitting. He incapacitated himself with food on his wedding night. A butler killed himself when his lobsters arrived late. The secrets of Louis’s kitchen were divulged in cookbooks: by 1691, when François Massialot (1760-1733) published a book whose title, Cuisinier Royal et Bourgeois, summed up the process of social diffusion, the embourgeoisment of haute cuisine had begun. Meanwhile, Dom Pérignon (1639-1715) invented the art of making Champagne, storing his wine in bottles strong enough to contain the pétillance (effervescence) of secondary fermentation. Coffee, introduced in 1644, revived a taste for the exotic, while, in 1686, the development of the croissant celebrated a Christian victory in Austria over the crescent banners of the Turks.
1700
The appeal of French food grew with the prestige of French culture: only England resisted, patriotically loyal to roast beef and sceptical of superfluous sauces. The English even flirted with Portuguese wines in their trade wars against the French. Imperialism inaugurated the age of sugar, chocolate, global grocery. While abundance inspired extremes of gastro-nomic inventiveness for the elite, cooking became philosophy in 1765, when the restaurant movement began in a ‘house of health’ run by one M Boulanger, whose shop sign pledged: “Hasten unto me, all whose stomachs labour, and I will restore you.” A new journalistic breed – food critics and restaurant reviewers – made Paris the shrine of foodie pilgrims. Later, the Revolution dispersed to the world the chefs of decapitated aristos: the French style, after spreading slowly for centuries, suddenly became universal.
1800
The 19th century consolidated French supremacy. Antonin Carême (1784- 1833), founder of grande cuisine, organised spectacular, Roman-style meals. In 1825, Jean-Anthèlme Brillat-Savarin wrote what is still the world’s best food book, La Physiologie du Got. Brillat-Savarin exalted cooking as art and science, inviting ladies of his acquaintance to experiment with aphrodisiacs, and advocating kitchens as the laboratories of the laws of nutrition. He justified gourmandism on the grounds that it showed “implicit obedience to the commands of the Creator, who, when he ordered us to eat in order to live, gave us the inducement of appetite, the encour-agement of savour, and the reward of pleasure”. Industrialisation intervened, but the French exploited the new techno-logies to serve the table. In 1804, Nicolas Appert (1750-1841) began experiments in bottling: at first, the needs of the army were paramount but when, in 1810, he made his process public, he appealed to gourmets and housewives. Sardines were the commercial breakthrough: first canned in the 1820s, by 1880 they emerged from French canneries at the rate of 50 million tins a year. Hippolyte Mège-Mouriés (1817-1880) responded to the crisis in butter supplies in 1869, mixing beef fat with skimmed milk and stirring in a bit of cow’s udder. He called his product ‘margarine’ because its anaemic tone resembled pearls known as ‘margaritas’. Science even saved the wine industry, after phylloxera struck the vine-yards. American grafts restored French stocks, the first sign that France’s near-monopoly was vulnerable to competition.
1900
Yet French food relied for its reputation on the inventiveness not of its industrialists, but of its chefs and gastronomes. Auguste Escoffier (1846- 1935), “the chef of emperors and Emperor of chefs”, founded the grand htel style, which left amateur cooks, and traditional and foreign cuisines on the wrong side of a chasm. His books were the most influential culinary texts since the writings of ancient Rome’s top chef, Apicius. He created dishes for the celebrities of the new century: cuisses de nymphe Aurore (a dish of frogs’ legs) for the Prince of Wales, and peach Melba, in honour of the owner of the smoothest stage voice of the day, whose memory survives only on menus. His showy, ingenious, liquor-lashed, cream-besotted dishes dominated haute cuisine until the Seventies, when light-handed, digestion-friendly nouvelle cuisine became the last French fashion to reshape the way we eat.

Despite a common pan-gallic chauvinism, French cooking is not a monolith: it ranges from the olives and seafood of Provence to the butter and roasts of Tours, from the simple food of the bistro to the fanciful confections of the Tour d’Argent. However, it all shares a seriousness about food. Throughout the country, French cooking involves a large number of techniques, some extremely complicated, that serve as basics. Any cook will tell you that French food will not tolerate shortcuts in regard to these fundamentals. Because mastery of sauces or pastry doughs is the center of the culinary arts, recipes themselves remain classic and constant. In a way similar to Japanese cuisine, it is expected that even the simplest preparation be undertaken in the most careful manner, which means disregarding the amount of time involved. This is one reason why French cooking has always seemed so daunting on the other side of the Atlantic. Americans love nothing more than combining innovation with time-saving; it is the particular genius of the United States, and it couldn’t be more at odds with the French aesthetic.
Not only do basic cooking techniques require great skill, but an they also demand a deep understanding of the ingredients themselves. Just as the vintner knows that the finest Bordeaux comes from the grapes grown on that side of the hill and not this, so too the chef knows not only from which region come the finest petits pois (small, young green peas), but from which town — the same goes for asparagus, and even cauliflower. If there is something worth eating, and cooking, there is a best representative of such. Many foods are known by the town that made them famous, such as Pessac for strawberries, the peas of Saint-Germaine, Macau artichokes, the Charollais steer, butter of Isigny.
The French and English adapted service à la russe, in which courses are served separately, in the middle of the 19th century. A French meal might begin with a hot hors d’oeuvre (or for luncheon, a cold hors d’oeuvre) followed by soup, main course, salad, cheese, and finally dessert. The French operate with a strong sense that there is an appropriate beverage for every food and occasion. Wine is drunk with the meal, but rarely without food. An aperitif (a light aloholic beverage such as Lillet) precedes the meal and a digestif (something more spirited — say, cognac) may follow. This close relationship between food and wine may, in part, closely parallel the evolution of great cooking and great wine making. It is probably not coincidental that some of the best cooking in France happens in some of her finest wine-growing regions. In Burgundy, Bordeaux, Provence, and Touraine, wine is as prevalent in the cooking process as it is in the glass. Champagne as a beverage doesn’t accompany food gracefully, likewise, as a region it is not well known for its food. One notable exception to this rule (and there are of course others) is Normandy, who, from her fantastic butter, cream, cheese, apples and the riches of the sea, has produced a marvelous local cuisine without the help of wine. However, the local Calvados, an apple based eau-de-vie, may also explain the phenomenon.
The French are predominantly Catholic and thus have no eating prohibitions, though many dishes have a Lenten variation. Moreover, the Gauls are not afraid to eat anything. Kidney, brain, sweetbreads, tripe, blood sauces and sausages, sheep’s foot, tongue, and intestines are all common in French cooking and hold equal standing with the meat of lamb, beef, pork, poultry, and game. Quite the opposite of being exotic, these foods are at the heart of the bourgeois menu, with seafood inevitably being the soul, and vegetables, the flesh.
