There is a loosely defined style of brown ale from Belgium that cannot be accurately called “oud bruin”. To my knowledge there is no special term for it, except maybe just “bruin”. The difference between these two styles is not necessarily age as many brown ales would age wonderfully. Brown ale is lacking in any acidity, tending to taste maltier, sometimes to the point of being a little like distilled spirits. I have never had one that was remotely hoppy, and I have had many.

A very good example of the “distilled spirits” flavor is Gouden Carolus. It is very dark with an ABV of 7.6%. This is one that will change a lot in the bottle over time, so you might find it to be inconsistant. That the price of complexity. Slightly lighter in alcohol is Gildenbier, at 7% ABV. This one is a bit chocolaty with a slight resemblance in flavor to dubbels. You would probably not mistake it for one, but there is a distinct bready flavor shared by most dubbels that I found in Gildenbier.

Kasteel Brown is an enormous beer with a heavy sweetness that is so intense it almost seems like it never fully fermented. Then you stand up. Yep, it’s fermented all right! Beers like this make me want to add a category called “Belgian-style barley wine”, but really, there are plenty of categories all ready. Give up your car keys, it’s ABV is around a wopping 10%. It is the kind of beer you should finish your night with as most things would taste like nothing following it.

Many producers of abbey ale also make something they call brune, Leffe being one example of many. As it has a 6.2% ABV, and as Leffe doesn’t make something they call “dubbel” I would tend to think that’s what is.

Other examples resemble dubbel in flavor, such as Verboden Vrucht from De Kluis, but exceed the ABV range associated with the abbey style. In the case of the 9% Verboden Vrucht, the 6ish% of a dubbel is left in the dust. This results in all kinds of desserty things happening, flavors such as vanilla have been associated with this beer. As with other examples of brown ale, the complexity and shelf life of this beer is enhanced by it’s strength.

The last type of beer that could be grouped here is Scotch Ale. This style is produced in Scotland for export to several places including Belgium. There are examples of this style that are produced in Belgium though, like Scotch Silly. This is a style to be reconed with. It is typically very strong with a wonderful caramel-like maltiness and almost no perceivable hop character. Some have a hint of distilled spirits in their flavor profile. If you are from the US and are wondering what I mean by this, wrap your hot little hand around a McEwans Scotch ale (not to be confused with the export).

Another manifestation of Belgian sour beer, Flemish brown ale – or Oud Bruin – can boasts the same boldly lactic character of the lambic family but generally without the horsey character. Another variety of sour ale is referred to as “Flander’s red ale”. Though there are different viewpoints on this, there is much reliable information to suggest oud bruin and Flanders red are really the same style. When commenting to a Belgian bartender that Oud Zottergem’s bruin was not particularly bruin, he told me color is not a real issue in defining oud bruin. This idea was first posed to me by Johnny Fincioen, the owner of the Global Beer Network, a native Belgian who imports a wonderful line of beers. A contributor to this site commented that the difference between red and brown ale was actually regional. Don Feinberg of Vanberg & DeWulf added that the referrence to “red ale” was likely to have come about due to the creation of Rodenbach. As it was clearer, reder and generally more beautiful than the typical oud bruin (which I believe is true) it was deservent of it’s own designation. Anyway, though there are differences between classic oud bruin and the benchmark red ale – Rodenbach (sometimes referred to as the “Burgundy of Belgium”), they are outweighed by their similarities.

The most recognized Oud Bruin, Liefmans Goudenband, is a spectacular beer thought I believe it has gone down hill in the last year. None the less I will always remember my first sip of this fabulous brew fondly. Other examples of the style are more or less lactic, some leaning towards the sweet side. A bruin originating from the same town as Goudenband, Felix, is noticably more tart. I would guess, based on its flavor, that it is not blended. Despite producing a benchmark bruin, Leifman’s makes a beer called Oud Bruin that is not Goudenband. The difference between to two is the oud bruin is not blended.

Blending is a very significant practice in oud bruin production. Aging oud bruin makes it overwhelmingly (for most, not for me) tart. The malty sweetness some have is generally because younger beer has been blended with a lesser amount of aged, sour beer. Ichtegem’s, for example, is a blend of 70% young beer to 30% old. Oud Zottergem’s is another example of a beer that is only slightly tart, with a bready sweetness being more dominent.

Rodenbach makes three different versions of their beer, including the unblended red and the blended grand cru. The third is a sweetened beer, having cherry essence added to aged beer.

The general profiles that all share go something like this. Final gravity is about 1/4 starting gravity and the average ABV is around 5.5%. Duchesse de Bourgogne is the most powerful I have found with an ABV of 6.2%. They tend to not have hoppy aromas, nor is the use of black patient or chocolate malt or roasted barley given away by the nose. Aromas are usually tart, fruity and floral, never with the buttery scent of diacetyl or spices.

Hop character in the taste is always beaten back by sourness with some examples also emphasising sweetness or fruitiness. The afore mentioned grains are seldom the source of color. This is usually the result of crystal malts and long boils. Lighter versions, such as Rodenbach, derives color from more medium colored malts like Vienna.

Wit, or white, bier is a pale golden, tart, refreshing style thick with sediment and with a high level of carbon dioxide. With the pale malts, unmalted wheat and lack of filtration it’s no surprise that it bares some resemblance to German HefeWiesse. The greatest different between Wit and its German cousin is the addition of spices, classically coriander and bitter Curacao orange peel.

In the 1800s, Hoegaarden was one of the most significant brewing centers in Belgium, with 30 breweries producing Wit bier. Unfortunately, time chipped away at this situation and by the mid 1950s only a few were still in production.

In the early 60s Pierre Celis took it upon himself to resurrect this all but dead style. He bought equipment and applied skills picked up having helped out at a local brewery that made Wit and founded the De Kluis brewery. This reintroduction of white beer went very well as Hoegaarden Wit took off. This story has a great ending — Celis moved to Austin, Texas were he established the Celis Brewery. He hgas since returned to Belgium, but only after leaving us the legacy of his wonderful brewing skills.

There are seven Trappist breweries in the world, 6 in Belgium – they are Westmalle, Westvleteren, Chimay, Rochefort, Orval and Achel. No other Belgian breweries are entitled by law to apply that name to their product.

Between these abbeys about 20 beers are brewed. All are top-fermenting, relatively to very strong, bottle conditioned ales.

Orval is the oldest of the brewing monasteries, founded in the 11th century by Benedictine monks. Interruptions to the monastic way of life (the French Revolution and the Napoleonic period) caused a religious exodus from France and the establishment of several Belgian abbeys in addition to those that already existed. Several of these abbeys typically began producing beer for internal use, then expanded to commercial production, selling first locally before making their beer available on a larger scale.

The term “trappist” fell into use in the years between WWI and WWII, popularized by Chimay (1850). It was there that Father Theodore and the famed brewing scientist Jean De Clerck developed much of the brewing theory that makes Trappist beers what they are.

ORVAL: The Notre-Dame d’Orval has a long history of distruction and reconstruction. The single beer they produce is probably the driest of the Trappist ales. They began brewing prior to the French Revolution, but that conflict was among the distructive events of the monestary’s history.

CHIMAY: The most commercial of the Trappist brewing entities, this monestary has a history of taking beer production very seriously. After World War II the legendary brewing scientist Jean De Clerck was a major factor in re-establishing the brewery. Their 3 beers are available in a variety of sizes, including magnum bottles of Grand Reserve.

WESTMALLE: The orginator of the widely imitated triple style. The abbeys full name id Our Lady of the Sacred Heart. Founded in 1794 it began making beer in the early 19th century. Beer production became commercial in 1920.

WESTVLETEREN: The smallest producer of the brewing abbeys. Their beer is very expensive cause it you want it you have to go there – they don’t ship! This is a rare example of a beer with both Trappist and abbey affiliations. St. Bernardus – formerly know as St. Sixtus – is made by a secular brewer under the licsence of the Abbey of St. Sixtus in the town of Westvleteren. Confusingly, the abbey of St. Sixtus makes the Westvleteren ales in a Trappist capacity, but not St. Sixtus ales!

ROCHEFORT: Actually known as Notre-Dame de Saint-Remy (located neat the southern town of Rochefort), this monestary began brewing in 1595 – that’s quite a heritage! Their 3 beers are ale dark and fairly sweet ales.

ACHEL: This newest Trappist brewery resembles a brewpub. It has a cafeteria line where you get your food and beer and tables both inside and on the outdoor patio. Father Thomas of Westmalle started the brewery, the current brewer is Brother Jules. When Achel first became available the general buzz was that it was clearly the inferior Trappist ale. But it did not take long for that to change, favor for this one has been steadily increasing. Now-a-days there is no shortage of praise for Achel. It took even God more than one day to get it all right!

ABBEY ALES

Though only five Trappist breweries still exist in Belgium, the number used to be greater. The last to cease production was the Benedictine monastery at Affligem (during WWII). “Yeah, but I can still buy Affligem” you might say, and you’d be right. Their classic Doubles and Tripples are still made by the De Smedt brewery under license of Affligem. Abbey ale is a term associated with beer brewed by non-monastic types, frequently under such a license. These beers cannot be called “Trappist”, but usually derive their name from a shrine or a church or some other religious icon. It is typical for abbey ale to mimmik the styles of Trappist beer. Doubles and triples, such as appear in Westmalle’s line, are very popular. Some beers, like St. Bernardus, are more similar to the dark, profoundly powerful brews of Rochefort and Westvleteren.

It should be mentioned that Abbey Ales can be thought of in two categories: the ones legitamately associated with a monastic order and the ones that arn’t. Affligem, as stated above, is brewed under the liscence of a real monestary. Others, like St. Feuillien is named after a defunct abbey, thus it is an abbey ale by name and not by association.

A while back there was some legal activity regarding use of the term “abbey ale”. My understanding is that the Trappist brewers banded together to legally force non-monastically related brewers to call themselves “abbey-style ales”. The reason, as stated in an article the was published in England in the later 90′s, was that the unflattering depiction of monks on labels was hurting monastic recruitment. Number of new monks were down around 80%. It would seem to me that the pious life-style of a monk would be a far more significant reason for dwindling numbers. None the less, I wish them luck in their efforts to survive.

The Lambic style can trace its roots back over 400 years, and has remained mostly unchanged from its introduction. I have heard the first written lambic recipe is dated 1516, ironically the same year that Reinheitsgebot – the German purity law – went into effect over all of Bavaria. In fact, in ancient Mesopotamia a beer that could be thought of as the “roots” of lambic was brewed 5000 years ago. Sikaru, the premium beer of the day, was brewed from 60% malt, 40% raw wheat, used wild fermentation and was flavored with spices.

Although it is impossible to absolutely confirm the origin of the word “lambic” it is most likely a distortion of Lembeek, a present and historic lambic producing town. Its status as the center of Lambic brewing was diminished in the early 1900′s when much of the developed world decided distilled spirits were a bad thing. Scotch ales and Trappist beer offered a better alternative to hard alcohol than Lambics because of their strength. The oddities of the style are many. Like its ancient Middle Eastern predecessor, the grist is composed of as much as 40% unmalted wheat. The hops are aged to curtail the introduction of hop character. The fermentation is also wild — that is the wort is left open to the night air for inoculation. These two aspects of lambic production are part of a Royal Decree of 1965 (sort of an anti-Rienhietsgobot!). Lambic requires several years to come of age, during which time dust and cobwebs are encouraged to cover the wooden fermenting vessels. Production is usually confined from mid-October to May, allowing for the wild yeast and beer to party during the summer.

Its interesting to note that lambic consumption has been a favored subject of Flemish artists. Brueghel, Teniers, Pierre Paul Rubens and Jacob Joardens have all depicted this in works like “Village Fair”, “Village Wedding” and “Peasants Dance”

GUEUZE: Belgian law leaves loop holes for interpretation. Use of grain adjuncts and inoculation is allowed. The blending of old and young pure lambic and bottle aging is the traditional way to make gueuze, but artificial carbonation is not uncommon. Filtration and pasteurization can occur. Gueuze is golden to light amber in color. Carbonation can be champagne-like. They are sour, acetic and sometimes harsh, usually without bitterness.

FARO: Character of young lambic with slight candi-sugar sweetness.

KRIEK: Orangey to deep red in color. Combines the character of gueuze with fresh fruit and pit aromas and some residual sweetness. Usually flavored with syrups.

FRAMBOISE: Ruby red with huge raspberry aroma. Traditionally dry and astringent, but mainstream stuff is sweet.

PECHE: Patented by Lindermans. Made with peaches.

CASIS: Made with black currents. Very aromatic and rich.

German beer – you have to admit, is one of the finest tasting beers you can drink. German breweries are pretty secretive about their “how tos”. They all seem to say it’s in the water. I’m sure there’s some truth to that, but what really gives the beer it’s great flavor is the hops which is traded as seriously as grapes for wine makers.

Most German beers are great tasting because all are vegan (no animal products are used). Bavarian purity laws limit them to four ingredients only: water, grain, hops and yeast. Real German beer is also not pasteurized as many American beers are, which lets you taste the beer’s real flavor.

Listed below are some of the different types of German beers typically found in Bavaria and what you can expect should you order one of these types.

Ein “Helles”, bitte ( A lite beer)

The standard light beer, when you order a “Helles” in a pub or restaurant you’ll most likely end up with a pint. Depending on the brewer it can be quite refreshing. Some beer gardens have responded to the public’s demand for smaller quantities and now also offer them outdoors, the “real” beer garden only serves the “Mass” (one quart) – pronounced “maus”. By the way, Germany has laws governing the quantity of liquids served to the public, that is why you will find level markers on each glass. If your Mass looks like it is not quite 1 liter after the foam settles, just go back and ask for “bitte nachschenken”. The man at the keg will be impressed that you know your way around.

Ein “Pils” (A Pilsener)

If you like a more bitter and less malty taste try the pils which is also called pilsner. You can order them in restaurants and special pils bars. Take a closer look at the time consuming process of serving a foam crowned pils with perfection. You will see dozens of glasses filled with foam only, waiting to settle. It can take a good quarter of an hour for the foam refills to turn into the golden liquid.

Ein “Dunkeles” (A dark beer)

Against popular beliefs it is not the most powerful in alcohol contents. It is basically a lager bottom brewed beer containing “toasted” malt.

Ein “Weissbier” (A white beer)

A very good idea when the sun is shining and you prefer being refreshed by a lighter tasting beer. Weizen means wheat, often called a Weissbier (white), and is served in tall and elegant 1/2 liter glasses. But beware of its “light” character, it is the strongest in alcohol. While some will serve it with a slice of lemon, do not put one in your Hefe (yeast) Weissbier. The Hefeweissbier comes only in bottles, a professional will wet the glass and pour the bottle at a steep angle. With the foam that remains at the bottom of the bottle he will collect the yeast (swirling action) and add it to your beer.

Ein Bock und Doppelbock (A Bock beer)

Bock is term used for a stronger beer (doppel meaning double even more so). Fasting monks found an ingenious way of compensating the lack of food – they started brewing very strong beers. March and October are the two most prominent seasons for brewing these special beers.

The origins of German beer steins date back to the 14th century. As a result of the bubonic plague and several invasions of flies throughout Europe shortly thereafter, Germany established several laws in the early 16th century requiring that all food and beverage containers (in our case it’s beer steins) be covered to protect their contents. The guild system was firmly entrenched in European society at this time. The pewter guild, combined with the heightened awareness for hygiene among food containers, created an environment in Germany that would ensure the presence of permanently attached pewter lids on stoneware drinking vessels for the next 300 years. By the end of the 19th century, the beer stein was clearly defined as being made in Europe, primarily of stoneware and primarily with a permanently attached pewter lid.

The history of german beer steins includes the development and introduction of several different materials other than stoneware. Pewter was not only used for lids, but also as a primary body material. It was the material of choice throughout large areas of Europe and particularly popular in England. Glass, porcelain and silver beer steins were introduced several hundred years ago as well and are all still available today. Many stein-decorating styles and techniques were developed over the centuries, offering further diversity to this creative, historical, artistic, and ever-evolving gift item. Centuries-old traditions continue to train the skilled hands and eyes that are required to create these steins.

Pewter Fittings

Pewter fittings often help in the dating and pricing of the stein. Prior to 1680, they normally consisted of a domed lid with a tiered finial (a figural representation or common design positioned at the top of the stein), a large, closed, five- ring hinge and small thumblift mounted over the hinge. Soon after 1680, fittings became more massive with large ball-type thumblifts, lid rings, handle reinforcement straps, and five-ring hinge. From 1690 to 1748, fittings had footrings, lid rings, large fancy lids, large ball-thumblifts, and handle reinforcement straps. During the period 1850-65, pewter fittings were reduced to small diameter hinges, lids made of thin rings holding glass or ceramic inserts and fragile thumblifts. From 1875-1914, less expensive steins (stoneware and glass) had fancy pewter lids and thumblifts, while the more expensive ones (like Mettlach) were still made with ceramic inlaid lids.

The closed hinge was used mostly until 1875, when the open hinge came into general use. A shortage of tin and pewter during WWI & WWII, caused many steins to be made with nickel-plated metal lids. Many kinds of hinges and fittings are being used today. Most pewter lids dating from 1960 to present have a velvety, sandblasted texture.

The word stein is a shortened form of Steinzeugkrug, which is German for stoneware jug or tankard. By common usage, however, stein has come to mean any beer container regardless of its material or size that has a hinged lid and a handle.

Earliest Beer Steins

From about 1340 until 1380, a bubonic plague, or Black Death, killed more than 25 million Europeans! As horrible as this historic event was, it prompted tremendous progress for civilization. And, of interest here, it is also responsible for the origin of the beer stein. Recall from above that the distinction between a mug and a stein is the hinged lid. This lid was originally conceived entirely as a sanitary measure. During the summers of the late 1400s, hoards of little flies frequently invaded Central Europe. By the early 1500s, several principalities in what is now Germany had passed laws requiring that all food and beverage containers be covered to protect consumers against these dirty insects. The common mug also had to be covered, and this was accomplished by adding a hinged lid with a thumblift. This ingenious invention was soon used to cover all German beverage containers while still allowing them to be used with one hand. This covered-container law and several other public health laws were enthusiastically passed and vigilantly enforced as a result of public fears about a return of the Black Death.

In the period from Roman times to the 1300s, sanitation had continually declined. During the years of the Black Death, it became obvious to all, with 95% of those in filthy areas dead and only 10% dead in clean surroundings, that the plague was somehow related to unsanitary conditions. The covered-container law was only one in a whole series of sanitary regulations that were passed in Germany after the plague pigpens could not be adjacent to streets, old or diseased meat had to be labeled as such, and beer could be brewed only from hops, cereals, yeast, and water. Strictly enforced regulations concerning the quality and transport of beer in many of the German provinces resulted in a tremendous improvement in the taste of beer, and also had an impact on stein making. Many records show that average beer consumption increased to about two liters per day in many places. Beerhouses, city hall cellars, and taverns began to proliferate in the 1500s.

During the Black Death, churches claimed prayer would end the plague and sometimes announced that Revelations had begun. In either case they lost some of their hold on the public, and more pragmatic scientific views began to prevail. The subsequent rise of science and its marriage with art has been credited with starting the Renaissance. The obvious earthenware experiments involved raising the firing temperature past the usual level of 500 C (900 F). Higher temperatures, however, could not be achieved merely by throwing more wood into the furnace; they required new furnace designs.

The quality and taste of beer continued to improve. Besides offering taste and fellowship, beer was considered to be important for the constitution, with the ability to induce strength, health, and relaxation. From the earliest times right up into the 1800s, many considered beer to be the most effective medicine known the drink from the gods. Although glass beer beakers were used in Roman times, the Church viewed glassmaking as heathenish and suppressed its production during the Middle Ages.

The Napoleonic war and other rebellions of the time so diminished the aristocrats wealth and power that the middle class became the most important market for steins and other artistic products. Porcelain and silver steins continued to be made in the early 1800s, always with the Renaissance and Baroque designs that still appealed to the wealthy. In the early 1800s, the preference of the masses was so clearly for glass and pewter that nearly all of the faience workshops were permanently closed.

By 1850, art instruction consisted entirely of having students copy the forms and designs of the archaeological finds from the Renaissance and Classical periods. The new style that resulted has been called neo-Renaissance and neo-Classical or, more commonly, Historicism.

In the second half of the 1800s, glassmaking techniques had progressed enough to allow molds to also be used to mass-produce glass steins. With the subsequent outbreak of World War I, the materials and labor needed by the pewter industry were converted to use for munitions production, and beer stein making virtually ceased.
