While vegetarianism can be a way of achieving a healthier diet, it is a radical change and one that is not easily adhered to. There are sufficient studies and evidence that do provide us with proof that even a modified vegetarian diet is beneficial and results in a healthier life.<br />
Many vegetarians are concerned about protein intake. There are many vegetable sources that can provide a person with sources that can supply all of your amino acid (protein) needs. One of the best plant sources of protein is soybean, which contains 30 to 40 percent protein and is closer to meat protein than vegetable when examined under amino acid patterns.<br />
The question of B12 also arises for vegetarians. Most vegetarians do eat some form of dairy product, which takes care of this need.<br />

But don&#8217;t take my word for it! Dozens of readers have responded with their tips for how to become vegetarian and reasons to go vegetarian.<br />
•	Transform dishes that you already know and enjoy. For example, omit meatballs from your favorite spaghetti recipe, or replace with a vegetarian substitute, such as GimmeLean. Chances are, much of what you already eat could easily be made vegetarian. </p>
<p>•	If you want to become vegetarian, you&#8217;ll want to explore new foods! One of my favorite things to do is to try one new product every time I go to the grocery store. As a result, I eat a much more varied diet since becoming vegan than I ever did before. Although most large grocery stores stock soy milk and veggie burgers, try browsing in your local health food stores to see what new foods you can find. Make it fun and exciting to become vegetarian!</p>
<p>•	Try it twice. If you hated a particular food the first time, such as veggie burgers, try it again later, using a different product brand or prepared differently or with different seasonings and spices. Not all products are the same, and you may prefer one product or style of preparation. For example, if you microwaved your veggie burger the first time, try grilling it next time.<br />
•	Browse health food stores. There&#8217;s always something new to try, and the staff can help you find what you&#8217;re looking for or give advice on which products are best.</p>
<p>•	Give yourself a break! Don’t throw in the towel if you can’t resist that burger. Just take a breath and resolve to do better at the next meal. Another idea is to allow yourself one day a week to eat meat. If you&#8217;re finding it difficult to stick to a vegetarian diet, you’re much more likely to pass something up, knowing you can indulge on Saturday or Sunday. Giving yourself a break in the short term rather than giving up will help you become vegetarian in the long run.</p>
<p>•	Be patient! You may find it easy to go vegan overnight, while others struggle just omitting red meat when becoming vegetarian. Everyone really is different, but rest assured that with time, your cravings will subside. Remembering your goals and reasons for becoming vegetarian or vegan will help you when you are tempted to give in.<br />
•	Learn, read and talk. Learn and read as much as possible about vegetarian health and foods. Knowledge is power! If you know any other vegetarians or vegans, ask them for their tips or advice. Everyone will have something different to share about their experience becoming vegetarian, but most people are more than willing to provide a bit of advice and will likely be flattered that you asked for help to become a vegetarian. </p>
<p>•	Browse your local bookstore for a great vegetarian cookbook. Look for one that not only appeals to you, but has a variety of recipes that are simple enough for everyday use.<br />
•	If you’re the only one in your family transitioning to a vegetarian diet, you don’t have to cook two separate meals! Simply cook the meat for dishes like stir-fries and pasta dishes in a separate pan and add to a separated portion just before serving.<br />
•	Try new restaurants. Seek out Chinese, Indian, Middle Eastern and Thai restaurants and taste the many dishes and foods they have to offer.</p>
<p>•	Be sure to replace meat with healthy foods and eat a balanced diet. If you are eating nothing but French fries and chips, your health will suffer, and you will want to resort to your former eating habits. Eat a variety of whole grains, vegetables and proteins, such as tofu or veggie burgers to stay full and healthy. </p>

•	Eat a dark green vegetable (broccoli, spinach, kale, collard greens) at least three times a week. These nutritional powerhouses are packed full of vitamins such as calcium and iron. On the run or hate spinach? Try drinking your greens. I recommend Naked Juice&#8217;s Green Machine-its made with fruit juice as well as greens, so it tastes better than others.<br />
•	Take a vitamin supplement that contains B12 or include nutritional yeast in your diet regularly, especially if you&#8217;re vegan or mostly vegan.<br />
•	Water water water! It&#8217;s been said over and over again for a reason-because its true! Most people don&#8217;t drink nearly enough. Bring a water bottle with you wherever you go and invest in a simple filter for your home. Water is especially important when adjusting to a new way of eating, as it will help curb any cravings you may experience.<br />
•	Make it a goal to eat at least one piece of raw fruit or a handful of raw vegetables every dayI try to eat an apple first thing in the morning to get it out of the way.<br />
•	Reduce your refined sugar intake. I&#8217;ve got as much of a sweet tooth as anybody, but I try to keep it under control by using such sugar replacers as brown rice syrup, stevia and agave nectar whenever possible (such as in coffee and tea) and indulging in the refined stuff only occasionally.<br />
•	Keep your favorite salad dressings on hand. I find that I&#8217;m much more likely to eat my greens or some raw veggies when my favorite salad dressings are in the fridge. A little variety is great too&#8211;I try to keep at least two kinds, either store bought or homemade on hand at all times. Some of my favorites are homemade goddess dressing, Thai peanut sauce from my local Asian grocer and rasberry vinaigrette. A vegan ranch dressing was helpful as well when I was trying to wean myself off dairy.<br />
•	Eat the rainbow! Fruits and vegetables all contain different nutrients. A simple way to remember to eat a range of vitamins and minerals is to vary the colors of the vegetables you eat. Of course, greens are always good, but try eating a rainbow of tomatoes, yellow squash and purple cabbage! </p>

Vegetarian Protein<br />
The little known truth about protein is that most of us get too much, not too little of it. Women need about 45 grams per day and men need around 55 grams. One cup of tofu contains about 20 grams of protein, so women, eat some tofu and you’re almost halfway there! Lots of foods contain protein and if you’re eating a well-balanced diet, you’re probably consuming more than enough protein without even thinking about it. Even though it’s quite easy to get plenty of protein on a vegetarian or vegan diet, its a good idea to make sure you’re eating a variety of protein-rich foods. If you’re a lacto-ovo vegetarian, you’ll likely get sufficient protein from eggs and dairy without even trying, but if you’re vegan, here are some high protein vegan foods to include in your diet: tofu, seitan, veggie burgers, soy, lentils, chickpeas, nuts and seeds, brown rice and whole grains.<br />

Calcium<br />
Kids need lots of calcium while they’re still growing, but adults need calcium too! If you’re a smoker, you will need to get more calcium, as your absorption and retention levels are lower. Strong bones throughout life come from both calcium in the diet and exercise, so for optimum health, be sure you get both. Although milk is a source of calcium, you certainly don’t need milk to get plenty of calcium. Here’s some calcium-rich foods to try: spinach, collard greens, kale, soy milk, fortified orange juice, sesame seeds, tahini, broccoli, almonds, carrots, and rice milk. Be sure to shake your soy milk and orange juice before drinking, as the calcium can settle to the bottom.<br />

Iron<br />
A study published in the British Journal of Nutrition found that iron levels in vegetarians and vegans in the UK were, on average, higher than those of the general population, showing that it’s possible to get more than enough iron on a vegan diet. Just like with protein, however, you should still be sure to eat a balanced diet to ensure you are getting enough iron. Drinking coffee and tea, particularly with meals, can limit your absorption and should be consumed at least three hours before a meal. For an iron boost, try eating tofu, lentils, spinach, soy, chickpeas and hummus. Vitamin C also increases the absorption of iron, so if you take an iron supplement, wash it down with some orange juice!<br />

Vitamin B12<br />
Vegetarians don’t have to worry about vitamin B12, and many people disagree about whether or not vegans need a B12 supplement. I like to go with &#8220;better safe than sorry&#8221; on this one. B12 deficiency is extremely rare amongst both vegans and non-vegetarians alike, but is a serious issue when it does occur.<br />
There are a few things vegans should know about B12.<br />
•	Your body has the ability to store B12 for a number of years, so if you’re newly vegan, you may have sufficient reserves for another decade, but unless you have your B12 levels tested regularly there is no way of knowing.<br />
•	Nutritional yeast is the best food source for B12, although miso and some seaweeds contain a minimal amount as well.<br />
•	Although nutritional yeast is a great source and an incredibly tasty addition to just about everything, some doctors suggest its best not to rely on a single source and recommend taking a vitamin supplement at least once a week, even if you regularly eat nutritional yeast. So if you’re vegan, please be better safe than sorry and take a supplement at least once a week.<br />
•	Once again, if you’re a smoker, your body will lose nutrients, so you need extra B12.<br />
•	Expectant mothers and infants have special B12 needs as well. If you’re vegan and expecting, take a supplement everyday.</p>

<p>Vegan plant-based diets have recently attracted a great deal of attention. Even TV celebrity Oprah Winfrey invited her staff to try a vegan diet for one week. She called it The Vegan Challenge . Kathy Freston, a New York Times best-selling author, help facilitate the week, which saw 378 staffers take up the challenge. Three hundred staff completed The Vegan Challenge, many with positive results. It was so successful that Oprah and her staff instituted &#8216;Meatless Mondays&#8217;.<br />
Americans and Canadians are addicted to meat-based diets. Unfortunately, meat-based diets swamp humans with unneeded cholesterol. So much so that statin drugs, which lower cholestrol output from the liver, like Lipitor and Zocor are huge money makers for their manufacturers.<br />
Recently my wife asked our family doctor, &#8220;How can I stop taking Lipitor?&#8221;<br />
&#8220;If you really want to get off the cholesterol pills, I would like you to read a book titled Prevent and Reverse Heart Disease&#8221; was the doctor&#8217;s response.<br />
His answer launched us on a new adventure &#8211; a vegan plant-based diet and lifestyle.<br />
Prevent and Reverse Heart Disease<br />
Written by Dr. Caldwell B. Esselstyn, Jr., who works as a cardiologist, clinician and surgeon at the world famous Cleveland Clinic, Prevent and Reverse Heart Disease highlights the critical importance of a vegan plant-based diet. It also includes his personal twelve year study of twenty-four cardiac patients.<br />

Dr. Esselstyn advocates that we should eat no foods with &#8216;a face&#8217; or &#8216;a mother&#8217;. Therefore, no meat, no eggs, no dairy. Moreover, his diet regime also calls for no oils (e.g., olive oil, canola oil). That&#8217;s right, no oils. He recommends only one type of nut for consumption &#8211; the walnut &#8211; and only if you have no heart disease, and only because it contains lots of omega-3&#8242;s. But in general, no nuts either.<br />
What motivated Dr. Esselstyn to write his book? In his practice he noted that many of his patients were in desperate shape having had heart attacks, strokes or suffering from advanced atherosclerosis. He could see first-hand the physical and emotional costs of poor diet and lifestyle. He needed to highlight the importance of a vegan plant-based diet.<br />
The Economic Costs of Heart Disease<br />
The economic costs of heart disease are staggering. Here are three selected quotes:<br />
•	The United States spends more than $250 billion a year on heart disease. (Esselstyn, 2008, p.4)<br />
•	Heart disease and stroke costs the Canadian economy more than $22.2 billion every year in physician services, hospital costs, lost wages and decreased productivity. (Tracking Heart Disease and Stroke in Canada. Released June 2009.)<br />
•	CVD [cardiovascular diseases] cost the health care system in the UK around £14.4 [$23.4 USD] billion in 2006. This represents a cost per capita of just under £250 [$405 USD]. The cost of hospital care for people who have CVD accounts for about 72% of these costs, whereas 20% of the cost is due to drugs. (British Heart Foundation Statistics Website)<br />
Why these terrible numbers?<br />
Maybe I&#8217;m being simplistic but it&#8217;s seems so obvious: obesityThe National Institutes of Health writes, &#8220;Overweight and obesity pose a major public health challenge.&#8221;<br />
Definition for BMI: BMI describes body weight relative to height and is strongly correlated with total body fat content in adults&#8230; the guidelines identified overweight as a BMI of 25 to 29.9 and obesity as a BMI of 30 and above. (NIH, First Federal Obesity Clinical Guidelines, 1998)<br />
Nationmaster.com contains a chart with some very disturbing data from the OECD (Organization for Economic Co-Operation and Development) on what might be characterize as the obesity disease. The numbers contained in this chart are from 2005 and are based on body mass index (BMI) figures gathered from the participating countries.<br />
A quick scan of the chart shows that the United States is #1 in obesity -30.6%, the United Kingdom is #2 &#8211; 23%and Canada is #11 &#8211; 14.3%.<br />
The correlation between obesity and heart disease is well documented. Atherosclerosis is clearly a big problem; but so is hypertension.<br />
The American Heart organization has published a paper titled Obesity: Impact on Cardiovacular disease in which the authors write, &#8220;The effects of obesity on cardiovascular health and disease are many, one of the most profound of which is hypertension. Risk estimates from population studies suggest that &gt;=75% of hypertension can be directly attributed to obesity.&#8221;<br />
Dr. Esselstyn&#8217;s Study Results<br />
Dr. Esselstyn&#8217;s book tells the tale of eighteen of his cardiac patients (the study began with 24 &#8211; six dropped out early on), and how they fared in a twelve year study. At the study&#8217;s beginning, the patients had experienced in total fourty-nine cardiovascular events including increased angina(15), measurable disease progression(13), by-pass surgery(7), heart attacks(4), strokes(3), angioplasty procedures(2), and worsening stress tests(2).<br />
When the study ended, the results were stunning. I have included two results drawn from the book:<br />
•	total cholesterol for each patient averaged below 150 mg/dL (the target) &#8211; originally it averaged 246 mg/dL for each<br />
•	angiograms for 11 patients showed that the diet had arrested the progression of heart disease, and in eight, reversed it<br />
&#8220;What has occurred with all these people is very basic: the blood supply through their coronary arteries to their heart muscle has improved&#8230; Profound reduction of cholesterol has increased the capacity of the endothelium&#8230; to produce nitric oxide, which in turn dilates the arteries themselves &#8211; even diseased arteries.&#8221; (Esselstyn, 2008, p. 53)<br />
Former President Bill Clinton and his Vegan Diet<br />
In May of 2010, Bill Clinton began a vegan diet because serious cardiovascular problems. His 2004 quadruple by-pass surgery had been compromised by a bad diet, and in early 2010 he needed more heart surgery to save his life. One of the four replaced veins was 100% blocked, and required two stents.<br />
He had read Dr. Esselstyn&#8217;s book and Dr. Dean Ornish&#8217;s book (Dean Ornish&#8217;s Program for Reversing Heart Disease) and began a plant-based diet with no oils. He lost 24 pounds in a few months and is reversing his heart disease. Wolf Blitzer has CNN interview with Dr. Esselstyn and Dr. Ornish on Bill Clinton&#8217;s diet.<br />
Both my wife and I also read both Esselstyn&#8217;s and Ornish&#8217;s books. They were big eye-openers, and the bottom line was simple. We did not want to be two more depressing cardiac statistics.<br />
Starting a New Lifestyle<br />
So we chose to start a lifestyle using a vegan plant-based diet with no oils. We wanted to clean up our arteries and veins, to lose weight, to get more fit, and to save money by not buying expensive cholesterol pills and hypertension.<br />
There are, however, some challenges with our new diet and lifestyle. The biggest one is finding tasty recipes. But we are succeeding. At this time, I have lost 15 pounds and I am documenting my progress at my blog. Together my wife and I now cook together and enjoy homemade food like pea soup, whole wheat bread, and tofu chilli: all without fats or oils.<br />

It’s possible to get protein from other sources— certain vegetables, nuts, and legumes, for example—which can make up for the protein lost by not taking in either meat or dairy. Furthermore, some vegans also have gluten allergies, making it very difficult to consume products like these on a regular basis.<br />
2. In most situations, there are few menu options for vegans.<br />

The truth is we were born to consume a diet that largely (but perhaps not exclusively) contains zero highly processed foods, fatty meats, and no dairy. Since 90% of our grocery store aisles laugh at that idea, we have to do a little more digging.<br />
1. Nearly 30% suffer from lactose intolerance.<br />
That phlegmy cough you get to enjoy after a big bowl of cereal or ice cream comes from the lactose, whey, and lactose in dairy. Most of us have some sort of adverse reaction to dairy products. What happens is the body recognizes those particular proteins and lactose as foreign substances and can’t process it because intolerant or allergic people don’t have the right enzyme.<br />
But your body’s rejection to it doesn’t stop at a little annoying mucous, or even more serious stomach cramps and flatulence. The long-term effect of dairy ingestion for a body that’s not designed to eat it is very serious–the cilia in the intestines are gradually worn down impairing all digestive processes. Dairy makes most of us feel like the Stay-Puffed Marshmallow Man.<br />
2. Gluten intolerance affects around 15% of the population.<br />
Similar to a dairy allergy, gluten is often the culprit of a variety of physical ailments–chronic headaches, eczema, lethargy, and digestive issues. The problem? Gluten is in practically everything! It includes wheat, rye, barley, and some oats. Gluten is the “glue” that holds together breads, pastas, and other processed foods like ketchup and ice cream.<br />
Since wheat first made its appearance in human food, with just 2 sets of chromosomes, the highly processed variety we now consume contains 6, 8, 12 or more sets making it much more difficult to break down. In those of us that absolutely can’t digest it develop an auto-immune disease called Celiac. We are consuming huge amounts of stuff our bodies were never designed to eat.<br />
3. Meat is expensive.<br />
Vegetables range around 65-72¢/lb. where as the cheapest of poultry cuts starts around $1/lb. Costs of red meat are astronomical in comparison! By eliminating all dairy and meat purchases, the average grocery bill drops by about 40%. Obviously, shoppers would need to increase the amount of vegetables and whole grains, but the total cost rarely exceeds 75% of the original shopping total.<br />
4. The original human beings were vegetarians.<br />
Three major world religions–Chritianity, Islam, and Judaism–believe in the Book of Genesis, which states very clearly that humans did not eat meat (or not much of it) until after the Great Flood. The more restrictive a diet is, the more challenging it is to get all the nutrients you need. A vegan diet, for example, eliminates food sources of vitamin B-12, as well as milk products, which are good sources of calcium. Therefore, you may need to make an extra effort to ensure that your vegetarian diet includes sufficient quantities of the following nutrients:<br />
•	Calcium helps build and maintain strong teeth and bones. Milk and low-fat dairy foods are highest in calcium. Dark green vegetables, such as turnip and collard greens, kale and broccoli, are good plant sources when eaten in sufficient quantities. Calcium-enriched and fortified products, including juices, cereals, soy milk, soy yogurt and tofu, are other options.<br />
•	Iodine is a component in thyroid hormones, which help regulate metabolism, growth and function of many key organs, such as the brain, heart, kidney and thyroid. Vegans may not consume enough iodine and be at risk of iodine deficiency and possibly goiter. In addition, foods such as soybeans, cruciferous vegetables and sweet potatoes may promote goiter. Because food manufacturers may not use iodized salt in processed foods, vegans may want to ensure that they use salt with iodine at the table or in cooking. Just 1/4 teaspoon provides a significant amount of iodine.<br />
•	Iron is a crucial component of red blood cells. Dried beans and peas, lentils, enriched cereals, whole-grain products, dark leafy green vegetables and dried fruit are good sources of iron. Because iron isn&#8217;t as easily absorbed from plant sources, the recommended intake of iron for vegetarians is almost double that recommended for nonvegetarians. To help your body absorb iron, eat foods rich in vitamin C, such as strawberries, citrus fruits, tomatoes, cabbage and broccoli, at the same time as you&#8217;re eating iron-containing foods.<br />
•	Omega-3 fatty acids are important for cardiovascular health as well as eye and brain development. Vegetarian diets that do not include fish and eggs are generally low in active forms of omega-3 fats. Because conversion of the plant-based omega-3 to the types used by humans is inefficient, you may want to consider fortified products or supplements or both.<br />
•	Protein helps maintain healthy skin, bones, muscles and organs. Eggs and dairy products are good sources, and you don&#8217;t need to eat large amounts to meet your protein needs. You can also get sufficient protein from plant-based foods if you eat a variety of them throughout the day. Plant sources include soy products and meat substitutes, legumes, lentils, nuts, seeds and whole grains.<br />
•	Vitamin B-12 is necessary to produce red blood cells and prevent anemia. This vitamin is found almost exclusively in animal products, so it can be difficult to get enough B-12 on a vegan diet. Vitamin B-12 deficiency may go undetected in people who eat a vegan diet. This is because the vegan diet is rich in a vitamin called folate, which may mask deficiency in vitamin B-12 until severe problems occur. For this reason, it&#8217;s important for vegans to consider vitamin supplements, vitamin-enriched cereals and fortified soy products.<br />

However, if you don&#8217;t eat enough fortified foods and have limited sun exposure, you may need supplementation with vitamin D-2 (derived from plants).<br />

Like iron, zinc is not as easily absorbed from plant sources as it is from animal products. Cheese is a good option if you eat dairy products. Plant sources of zinc include whole grains, soy products, legumes, nuts and wheat germ.<br />
