			<content:encoded><![CDATA[<p>Committing to a low-fat lifestyle means making some changes in our kitchens. But what do we mean by a low-fat kitchen? Basically we mean replacing high-fat foods with low-fat foods. So yes, those double-stuff sandwich cookies should be tossed, along with that extra-butter popcorn. But don’t despair, there are so many low-fat products available these days, alternatives are pretty easy to find. So what should we choose and lose?<br />
Choose:<br />
•	Oils Olive oil, canola oil, nonstick cooking spray, safflower oil, flavored oils<br />
•	Canned Fish Water-packed tuna, salmon and sardines<br />
•	Canned Vegetables and Fruit Peas, carrots, corn, beets, mushrooms, asparagus; peaches, pineapple, pears &#8211; in light syrup<br />
•	Canned Tomatoes Whole, diced or crushed tomatoes, tomato purees, tomato sauces (with no added salt)<br />
•	Legumes and Grains Canned or dried black beans, pinto beans, chickpeas (Garbanzo beans), kidney beans, navy beans, black-eyed peas; rice, lentils, barley, couscous, quinoa, bulgur, kamut<br />
•	Pasta Whole wheat spaghetti, penne, lasagna sheets and other noodles<br />
•	Jars Anchovies, capers, pimientos, peppers, artichokes, pickles, sundried tomatoes, minced garlic<br />
•	Soups and Stocks Low-fat, low-sodium canned soups and soup mixes; low-sodium, fat-free broths, bouillon cubes and stock concentrates<br />
•	Flavorings Herbs, spices and seasonings; whole garlic, garlic paste, tomato paste, chili paste, bottled ginger, low-sodium Worcestershire sauce, soy sauces and bottled marinades<br />
•	Dressings Vinegars, mustards, low-fat or fat-free salad dressings and mayonnaise<br />
•	Breads and Cereals Whole grain breads, rolls and bagels; whole wheat flour; whole-grain cereals such as oatmeal, bran flakes or low-fat granola<br />
•	Dried Fruits Cranberries, cherries, blueberries and raisins<br />
•	Nuts and Seeds Almonds, hazelnuts, walnuts, peanuts, pecans; pumpkin seeds, sunflower seeds, sesame seeds, poppy seeds, and flax seeds<br />
•	Sugars Honey, molasses, maple syrup<br />
•	Snacks Pretzels, low-fat microwave popcorn, whole grain crackers; sugar-free/fat-free pudding and jello, applesauce<br />
This is not an exhaustive list, but it gives us an idea of what kinds of things to stock in a low fat kitchen so that we have flavorful, nutritious ingredients on hand. Including nuts, seeds, oils and fatty fish in our diets is fine in moderation, as most of the fat from these sources is heart healthy. Be sure, also, to buy plenty of fresh fruit and vegetables, from across the color spectrum.<br />
Lose:<br />
•	Regular mayonnaise and oil-based dressings<br />
•	Shortening, though there is at least a trans fat-free version available<br />
•	Oil-packed tuna and fish<br />
•	Canned meats<br />
•	Cream soups and chowders<br />
•	Boxed mac and cheese<br />
•	Flavored pasta and rice mixes<br />
•	Refried beans, unless fat free<br />
•	Gravy mixes, cheese sauces, pancake and biscuit mixes<br />
•	Sugary cereals<br />
•	Anything with &#8220;partially hydrogenated&#8221; on the label (cookies, cakes, donuts, muffins)<br />
•	Potato chips, corn chips, unless baked<br />
•	White bread<br />
•	Coffee creamer<br />
So far so good for our pantries. But fat can loom even larger in our refrigerators and freezers.<br />
Milk<br />
Many of us have already made the switch from whole milk to some kind of lower-fat milk. But truthfully, drinking 2% milk isn’t that much better for us. It still contains 5g of total fat and 3g of saturated fat per one-cup serving. We should really aim for nonfat milk at best, and 1% milk at least. But it doesn’t end there. Choose low-fat or nonfat ice creams or yogurts over full fat versions, and do the same for sour cream.<br />
Cheese<br />
Choose low-fat or fat-free cottage cheese, cream cheese and hard cheeses. True, some hard cheeses don’t melt as well in cooking. Part-skim ricotta cheese or mozzarella are good lower-fat substitutes, though there are also fat-free versions. Try stronger cheeses such as Gruyere, Gorgonzola or Parmesan to add maximum flavor per ounce.<br />
Butter and Margarine<br />
The problem with butter is its high levels of saturated fat and cholesterol; the trouble with margarine (especially stick margarine) is its high levels of trans fats, which arise from the hydrogenation process that converts liquid vegetable oils into solid fat. Tub margarine and liquid spread contain fewer or no trans fats, and some spreads contain special ingredients that actively lower bad cholesterol. These would be better choices.<br />
Eggs<br />
Yes, they do contain high levels of dietary cholesterol, yet in other ways they pack a heavy nutritional punch, as a great source of vitamins and minerals. But you can always use egg whites or egg substitutes instead, especially if you have to watch your cholesterol. And even if you don’t, use whole eggs sparingly.<br />
Meat<br />
Fresh meat and deli meats should be as lean as possible. Watch out for sodium content in the latter. Substitute turkey or chicken hot dogs for beef ones, and try veggie burgers instead of beef patties. But you&#8217;re not confined only to chicken. Pork tenderloin is now considered as lean as a skinless chicken breast.<br />
Fish<br />
Fish&#8211;preferably fresh fish rather than high-fat fish sticks&#8211;should be consumed at least twice a week. Be sure to include even the fattier variety such as salmon, since they contain high levels of heart-healthy omega-3 fatty acids.<br />
We can use only what we have at hand in our kitchens, so make sure your pantry and refrigerator are stocked with plenty of low fat, nutritious ingredients to help you create healthy meals for the whole family. <p>Dry-aging beef provides it with a tender complex flavor. If you have a refrigerator, try to dry-age your own beef over a couple days to a couple of weeks. Exposing the beef to air in a refrigerator helps dehydrate the meat, providing it with stronger flavor. If you are trying to dry-age a large amount of beef though, it can become expensive because the process shrinks the meat by about 20 to 25 percent, so you end up with a smaller amount.</p>
<p>1.	Purchase the highest quality meat you can get, focusing on a prime boneless loin or rib roast. Freeze it a week before you plan to start the dry-aging process.<br />
2   Sett your refrigerator below 40 degrees Fahrenheit a day or two before you want to start the dry-aging process.<br />
3.	Unwrap the meat and rinse it well under room temperature water. Pat the meat dry with clean paper towels. Set the meat onto a cheesecloth and wrap it two to three times. You do not have to wrap the meat tightly as you want air to circulate around the meat.<br />
4.	Set the cheesecloth-wrapped piece of meat on a metal rack, like a baking rack. Place this rack on top of a deep baking tray or sheet to catch any juices.<br />
5.	Slide the tray into the refrigerator out of your way. After one day in the refrigerator, remove it and unwrap the cheesecloth. Re-wrap it again loosely (this is so the meat doesn&#8217;t stick to the cheesecloth).<br />
6.	Put the tray back into the refrigerator and keep it there for at least four days, but it can stay in there for up to three weeks. The longer it is left in the refrigerator, the more aged it will become (resulting in a better flavor).<br />
7.	Remove the tray when you desire and unwrap the meat from the cheesecloth. Use a sharp knife to trim off the hardened fat and outside meat that has hardened as well. Roast, grill or cook as desired.</p>

Health typically describes how you feel.  Although, in 1986, the World Health Organization (WHO), stated that health is “a resource for everyday life, not the objective of living. Health is a positive concept emphasizing social and personal resources, as well as physical capacities.”   What we do realize is that health is achieved by a combination of physical and mental well-being.  Many, but not all, include social well-being as an integral component of health, referring to the Health Triangle as described below, stating that if one section of the triangle is affected, they all are:<br />

<p>People whose blood cholesterol and LDL-cholesterol levels are undesirably high should consume a diet that is relatively low in total fat and saturated fat. To do this systematically, it is necessary to become fully aware of what you are eating. This means getting into the habit of checking labels to determine the amount of cholesterol and the amount and type of fat. You should also pay attention to the &#8220;hidden&#8221; fats found in processed foods such as cookies, crackers, and snack cakes, and the kinds of fats and oils used in their own cooking.<br />
The next step is to make substitutions. For example, leaner cuts of beef (select or choice rather than prime) should be used, and consumption of fish, poultry, fresh fruits and vegetables, beans, and other legumes should be increased. Foods high in complex carbohydrates-such as whole grains, beans, and vegetables-can be made the &#8220;main dish,&#8221; with small amounts of red meats and cheeses becoming the &#8220;side dishes.&#8221; Mixed dishes such as stews, casseroles, and pasta and rice meals can combine small amounts of meat with other foods, such as grains or vegetables.<br />
Finally, evaluate your progress by having your blood cholesterol tested within a few months and then periodically as recommended by the professional who is guiding them. The goal should be a gradual but steady reduction in your total cholesterol and LDL-cholesterol levels.<br />
Practical Tips for Lowring Fat Content<br />
•	Trim all visible fat from beef and poultry, and remove the skin from poultry before eating.<br />
•	Bake, broil, or roast meat dishes instead of deep-fat frying them. To prevent drying and add flavor, baste with wine, lemon juice, or a low-fat broth.<br />
•	Try experimenting with herbs and spices, such as dill, tarragon, cilantro, and basil.<br />
•	Avoid fatty gravies and sauces.<br />
•	If pan- or stir-frying, use small amounts of vegetable oils such as canola or safflower oil; also increase your use of olive oil.<br />
•	Minimize use of butter.<br />
•	Minimize use of products, such as margarines, that contain partially hydrogenated oils (trans-fatty acids).<br />
•	To cut down on whole-milk products, switch to 2% or 1% milk, and perhaps eventually to skim milk. Many people find it easy to get accustomed to low-fat milk, and that when they do so, whole milk tastes too rich. Use the low-fat or skim-milk versions of ricotta, cottage, and mozzarella cheese. Low-fat farmer or pot cheeses also are available. All these cheeses should contain no more than 2¬6 grams of fat per ounce. For desserts, substitute ice milk, frozen yogurt (especially the nonfat variety), sherbet or sorbet for ice cream. If you do eat ice cream, choose regular rather than super premium types.<br />
•	Limit consumption of foods that contain palm, palm kernel, and coconut oils, lard, butter, unidentified shortening, egg-yolk solids, and whole-milk solids. Also, cut down on baked goods made from these ingredients or that are fried, such as doughnuts.<br />
•	Use nonfat or low-fat yogurt instead of sour cream in dips and toppings.<br />
•	Use only the egg whites or discard every other yolk in recipes requiring eggs (2 whites = 1 whole egg in recipes). Or try commercial cholesterol-free egg substitutes.<br />
•	Reduce the amount of fat in recipes by one-third to one-half, and use chiefly polyunsaturated and monounsaturated oils.<br />
•	Shrimp, lobster, and other shellfish may be eaten occasionally because they are lower in cholesterol than previously thought, and do not contain too much saturated fat.<br />
•	In coffee, use low-fat or skim milk instead of non-dairy creamers containing saturated fats. Skim milk powder also is acceptable.<br />
•	Substitute rice and pasta for egg noodles.<br />
•	Make your own popcorn for a low-calorie snack, but be sure to omit the melted butter. Beware of high-fat microwave popcorn products.<br />
•	Avoid nuts that are high in saturated fats, such as coconuts and macadamia nuts.<br />
•	Incorporate oat fiber into your diet, for example, in oat bran muffins or in casseroles. To increase total fiber intake, look for the words &#8220;whole wheat&#8221; or &#8220;whole grain&#8221; near the top of the ingredient list when buying breads and cereals.<br />
•	Use fresh fruit for dessert instead of high-fat desserts.<br />
•	Choose lowfat luncheon meats such as turkey breast or pressed turkey instead of salami and bologna. Also eat few frankfurters, other sausages, and bacon. When eating turkey, remember that white meat has less fat than dark meat.<br />
•	Buy or make salad dressings with predominantly unsaturated oils. Olive oil is an especially good choice. Or try a nonfat type or just vinegar or lemon juice.<br />
•	Limit use of organ meats that are very high in cholesterol, such as liver, kidneys, brain, and sweetbreads.<br />
•	Prepare soups and stews containing meat the day before eating them. After refrigerating, skim off the congealed fat on the surface prior to reheating.<br />
•	Be cautious about store-bought baked products such as pies, cakes, croissants, pastries and muffins. Try to find lowfat cookies and crackers. Or eat home-made baked goods prepared with small amounts of unsaturated oils. Angel cake is a good choice because it is low in fat and cholesterol.<br />
•	Use some of the many fat-free, cholesterol-free products marketed as substitutes for products that normally are high in fat.<br />
•	Make changes gradually to avoid feeling deprived. For most people, enjoying a rich dessert or a prime rib once in a while is not going to significantly affect their cholesterol level as long as the overall cholesterol-lowering diet is followed most of the time. It is better to splurge once in a while than to cheat a little bit each day.<br />
Dietary Evaluation<br />
Following above guidelines will reduce the fat, saturated fat, and cholesterol content of the diet and should come close to the fat and saturated-fat levels recommended by the National Cholesterol Education Program. However, the only way to determine how much fat and cholesterol are actually consumed is to calculate the amounts contained in one&#8217;s daily diet. <p>People whose blood cholesterol and LDL-cholesterol levels are undesirably high should consume a diet that is relatively low in total fat and saturated fat. To do this systematically, it is necessary to become fully aware of what you are eating. This means getting into the habit of checking labels to determine the amount of cholesterol and the amount and type of fat. You should also pay attention to the &#8220;hidden&#8221; fats found in processed foods such as cookies, crackers, and snack cakes, and the kinds of fats and oils used in their own cooking.<br />
The next step is to make substitutions. For example, leaner cuts of beef (select or choice rather than prime) should be used, and consumption of fish, poultry, fresh fruits and vegetables, beans, and other legumes should be increased. Foods high in complex carbohydrates-such as whole grains, beans, and vegetables-can be made the &#8220;main dish,&#8221; with small amounts of red meats and cheeses becoming the &#8220;side dishes.&#8221; Mixed dishes such as stews, casseroles, and pasta and rice meals can combine small amounts of meat with other foods, such as grains or vegetables.<br />
Finally, evaluate your progress by having your blood cholesterol tested within a few months and then periodically as recommended by the professional who is guiding them. The goal should be a gradual but steady reduction in your total cholesterol and LDL-cholesterol levels.<br />
Practical Tips for Lowring Fat Content<br />
•	Trim all visible fat from beef and poultry, and remove the skin from poultry before eating.<br />
•	Bake, broil, or roast meat dishes instead of deep-fat frying them. To prevent drying and add flavor, baste with wine, lemon juice, or a low-fat broth.<br />
•	Try experimenting with herbs and spices, such as dill, tarragon, cilantro, and basil.<br />
•	Avoid fatty gravies and sauces.<br />
•	If pan- or stir-frying, use small amounts of vegetable oils such as canola or safflower oil; also increase your use of olive oil.<br />
•	Minimize use of butter.<br />
•	Minimize use of products, such as margarines, that contain partially hydrogenated oils (trans-fatty acids).<br />
•	To cut down on whole-milk products, switch to 2% or 1% milk, and perhaps eventually to skim milk. Many people find it easy to get accustomed to low-fat milk, and that when they do so, whole milk tastes too rich. Use the low-fat or skim-milk versions of ricotta, cottage, and mozzarella cheese. Low-fat farmer or pot cheeses also are available. All these cheeses should contain no more than 2¬6 grams of fat per ounce. For desserts, substitute ice milk, frozen yogurt (especially the nonfat variety), sherbet or sorbet for ice cream. If you do eat ice cream, choose regular rather than super premium types.<br />
•	Limit consumption of foods that contain palm, palm kernel, and coconut oils, lard, butter, unidentified shortening, egg-yolk solids, and whole-milk solids. Also, cut down on baked goods made from these ingredients or that are fried, such as doughnuts.<br />
•	Use nonfat or low-fat yogurt instead of sour cream in dips and toppings.<br />
•	Use only the egg whites or discard every other yolk in recipes requiring eggs (2 whites = 1 whole egg in recipes). Or try commercial cholesterol-free egg substitutes.<br />
•	Reduce the amount of fat in recipes by one-third to one-half, and use chiefly polyunsaturated and monounsaturated oils.<br />
•	Shrimp, lobster, and other shellfish may be eaten occasionally because they are lower in cholesterol than previously thought, and do not contain too much saturated fat.<br />
•	In coffee, use low-fat or skim milk instead of non-dairy creamers containing saturated fats. Skim milk powder also is acceptable.<br />
•	Substitute rice and pasta for egg noodles.<br />
•	Make your own popcorn for a low-calorie snack, but be sure to omit the melted butter. Beware of high-fat microwave popcorn products.<br />
•	Avoid nuts that are high in saturated fats, such as coconuts and macadamia nuts.<br />
•	Incorporate oat fiber into your diet, for example, in oat bran muffins or in casseroles. To increase total fiber intake, look for the words &#8220;whole wheat&#8221; or &#8220;whole grain&#8221; near the top of the ingredient list when buying breads and cereals.<br />
•	Use fresh fruit for dessert instead of high-fat desserts.<br />
•	Choose lowfat luncheon meats such as turkey breast or pressed turkey instead of salami and bologna. Also eat few frankfurters, other sausages, and bacon. When eating turkey, remember that white meat has less fat than dark meat.<br />
•	Buy or make salad dressings with predominantly unsaturated oils. Olive oil is an especially good choice. Or try a nonfat type or just vinegar or lemon juice.<br />
•	Limit use of organ meats that are very high in cholesterol, such as liver, kidneys, brain, and sweetbreads.<br />
•	Prepare soups and stews containing meat the day before eating them. After refrigerating, skim off the congealed fat on the surface prior to reheating.<br />
•	Be cautious about store-bought baked products such as pies, cakes, croissants, pastries and muffins. Try to find lowfat cookies and crackers. Or eat home-made baked goods prepared with small amounts of unsaturated oils. Angel cake is a good choice because it is low in fat and cholesterol.<br />
•	Use some of the many fat-free, cholesterol-free products marketed as substitutes for products that normally are high in fat.<br />
•	Make changes gradually to avoid feeling deprived. For most people, enjoying a rich dessert or a prime rib once in a while is not going to significantly affect their cholesterol level as long as the overall cholesterol-lowering diet is followed most of the time. It is better to splurge once in a while than to cheat a little bit each day.<br />

Purpose<br />
For a regular healthy diet, it is recommended that of the total calories eaten, no more than 30% should come from fat. However, certain diseases and medical conditions can make it difficult for the body to tolerate even that much fat, so a low-fat diet may help people with these conditions. </p>

Different medical organizations, governments, and diet plans define ‘low fat’ slightly different ways. In this essay, a low fat diet is one where 30% or less of the total daily calories come from fats A very low fat diet is one where 15% or less of the total daily calories come from fat. By comparison, in the average American diet about 35–37% of calories come from fat.<br />
Origins<br />
When metabolized in the body, fats provide 9 calories per gram compared to 4 calories per gram from proteins and carbohydrates Because of this, diets plans repeatedly target reduction in fats as a good way to lose weight. Examples of low fat diets include the Pritikin diet and Scarsdale diet, both popular in the 1970s, Rosemary Conley’s Hip and Thigh Diet (late 1980s), and the Dr. Dean Ornish Diet (2000s). Research into preventing cardiovascular disease also stimulated interest in low fat diets as a pre-ventative health measure.<br />
Description<br />
Over the past three decades, thinking about fats has changed. In the twenty-first century, all fats are not created equal. Fats are described as either saturated or unsaturated based on their chemical structure. Saturated fats are animal fats such as butter, the fats in milk and cream, bacon fat, the fat under the skin of chickens, lard, or the fat a piece of prime rib of beef. These fats are usually solid at room temperature. Exceptions are palm oil and coconut oil, which are both liquid saturated fats. Saturated fats are ‘bad’ fats. They raise the level of LDL cholesterol (‘bad’ cholesterol) in the blood. High LDL cholesterol levels are associated with an increased the risk of heart disease.<br />
Unsaturated fats have a slightly different chemical structure that makes them liquid at room temperatures. Unsaturated fats, especially monounsaturated fats, are ‘good’ fats that help lower cholesterol levels. Olive oil, canola oil, and peanut oil are high in monounsaturated fats. Corn oil, soybean oil, safflower oil, and sunflower oil are high in polyunsaturated fats. Fish oils that are high in omega-3 fatty acids are also polyunsaturated and have beneficial health effects.<br />
Another type of fat, trans fat, is made by a manufacturing process that creates hydrogenated or partially hydrogenated vegetable oils. Trans fat acts like saturated fat, raising the level of LDL cholesterol. It is found in some margarines, and in many commercially baked and fried foods. Starting in January 2006, the amount of trans fat in processed foods must be listed separately from total fat on food labels.<br />
KEY TERMS<br />
Cholesterol—a waxy substance made by the liver and acquired through diet. High levels in the blood may increase the risk of cardiovascular disease.<br />
Dietary supplement—a product, such as a vitamin, mineral, herb, amino acid, or enzyme, that is intended to be consumed in addition to an individual’s diet with the expectation that it will improve health.<br />
Fatty acids—complex molecules found in fats and oils. Essential fatty acids are fatty acids that the body needs but cannot synthesize. Essential fatty acids are made by plants and must be present in the diet to maintain health.<br />
Fatty liver—a condition in which liver cells accumulate fat. The condition is associated with alcohol abuse, obesity, and pregnancy and can result in serious damage to the liver.<br />
Triglycerides—a type of fat found in the blood. High levels of triglycerides can increase the risk of coronary artery disease.<br />
The federal Dietary Guidelines for Americans 2005 recommends that no more than 30% of an individual’s daily calories come from fat. Beyond that, no more than 10% of calories should come from saturated fat and people should consume as little trans fat as possible. The American Heart Association’s Nutrition Committee joined with the American Cancer Society, the American Academy of Pediatrics, and the National Institutes of Health to endorse these guidelines as part of a healthy diet. However, some experts believe that for heart health the amount of fats consumed should be much lower.<br />
Nathan Pritikin, originator of the Pritikin Diet Plan developed a very low fat diet for heart health. The Pritikin Plan calls for less than 10% of calories to come from fat. The diet is also low in protein and high in whole-grain carbohydrates. Respected independent research shows that this diet does cause weight loss and lower risk factors for heart disease such as cholesterol and blood triglycerides Critics of the diet say that it is too difficult to stay on and that low the fat component of the diet does not allow people to get enough beneficial fats such as omega-3 fatty acids.<br />
The Dr Dean Ornish Diet is another very low fat diet where only aboug15% of calories come from fat. The Ornish diet is an almost-vegetarian diet. It too is designed to promote heart health, and again critics claim hat it does not provide enough essential fatty acids.<br />
Other low fat diets are designed for people who have digestive disorders. People who have gallstones or gallbladder disease often benefit from reducing the amount of fats they eat. Bile, a digestive fluid made in the gallbladder, helps break down fats. When the gallbladder is not functioning well, a low fat diet can improve digestion. Symptoms of other gastrointestinal problems, such as diarrhea, irritable bowel disorder, various malabsorptive disorders, and fatty liver, often improve on a low fat diet. People who have had weight loss surgery usually have fewer digestive problems if they eat a low fat diet.<br />
Managing a low fat diet<br />
People on low fat diets need to avoid certain foods. High-fat foods include whole milk and whole milk products such as ice cream or cream cheese, fried foods, marbled beef, chicken skin, spare ribs or any meat with visible fat, tuna packed in oil, regular salad dressing, potato chips and fried snack foods, and many baked goods—cookies, cakes, pies, and doughnuts.<br />
People wishing to reduce the fat in their diet must read food labels. Food labels are required to list in the nutrition information panel nutrition facts that include calories, calories from fat, total fat, saturated fat, trans fat, cholesterol, sodium, total carbohydrates, dietary fiber, sugars, protein, vitamin A, vitamin C, calcium, and iron In addition, the following words have specific legal meanings on food labels.<br />
•	Fat-free: less than 0.5 grams of fat per serving.<br />
•	Low fat: no more than 3 grams or less of fat per serving.<br />
•	Less fat: A minimum of 25% less fat than the comparison food.<br />
•	Light (fat) A minimum of 50% less fat than the comparison food.<br />
The home cook can also reduce fat in the diet in the following ways:<br />
•	Remove all visible fat from meat and skin from poultry before cooking.<br />
•	Bake or broil meats on a rack set in a pan, so that the fat can drip off.<br />
•	Refrigerate homemade soups and stews, then skim the solidified fat off the top before serving.<br />
•	If using canned soup or broth that contains fat, put the can in the refrigerator for a few hours, and skim the solid fat off the top before heating.<br />
•	Top pasta with vegetables instead of oil, butter, or cheese.<br />
To reduce fat in meals when eating out:<br />
•	Choose items that are broiled, roasted or baked. Avoid fried foods.<br />
•	Select fish or chicken instead of beef or pork.<br />
•	Ask for salad dressing, butter, and gravy on the side.<br />
•	Fill up on salad with non-fat dressing at the salad bar.<br />
Function<br />
Low fat diets work as weight loss diets because they reduce calorie intake. The difficulty with low fat and very low fat diets is that they are difficult to maintain. Often when people go off these diets they gain weight back, then diet again, then gain weight back in a pattern of weight cycling This happens with many diets, but some research shows that people who go off low fat diets tend to binge or overeat more than people who go off more moderate diets.<br />
