Dessert wines from Sauternes can be quite decadent. However they are never cloying in the palate. That’s because of the sharp acidity imbued into the wine which balances well against the sweetness giving the wine much needed vigor despite its richness. The undertone of botrytis underneath the sweetness gives the wine its backbone and that holds everything together throughout the long ageing process to reach full maturity.

This 2005 La Fleur d’Or is delicious to now and will continue to give us pleasure for many more years to come. Despite all its attractive features, many wine lovers find it difficult to finish a full bottle over dinner. Taking note of that, Yats Wine Cellars is offering a convenient half-bottle version, 375ml of wine just fit for 2 to 4 in a table.

Although the name dessert wine clearly suggest that the wine is ideal for the dessert course of the meal, more and more, food and wine lovers have discovered that the Sauternes are excellent with fatty food. Classic pairings include foie gras and liver pates.

The Philippines is approximately 85 percent Christian (mostly Roman Catholic), 10 percent Muslim, and 5 percent ‘other’ religions.
In this predominantly Roman Catholic country, the Philippine’s commemoration of the week leading up to Easter is a one of the most fascinating religious events in the world.
Holy Week is known as Semana Santa (the Spanish translation of the religious festival itself). Many superstitions abound regarding this holiest of weeks, such as that wounds inflicted or received on Good Friday take long to heal and that amulets acquired on the said day are especially powerful.
Throughout the week, most businesses in the Philippines either shut down operations until Black Saturday or have later opening and earlier closing times, and (mostly local) television or radio stations nationwide either stay off the air and those that sign-on air shows with more solemn or serious content, especially films and programs with a religious theme.
An example is the airing of the Seven Last Words on Good Friday live from churches on various local channels and films about the life and death of Jesus. During the Easter Triduum, usually a public holiday, some television stations even interrupt broadcast altogether until Black Saturday in observance of this solemn occasion, Holy Week.
Holy Monday to Holy Wednesday of Holy Week
Holy Monday to Holy Wednesday marks the beginning of the Pabasa (literally, “reading”) or the Pasyon, the marathon chanting of the poetic prayer-story of Jesus’ life, Passion, and death, which continues day and night, for as long as two straight days.
Maundy Thursday
Come Maundy Thursday, a popular tradition is “Church Visit” or “Visita Iglesia”, which involves visiting a church or several churches at which the devotees would pray the devotion known as the Stations of the Cross. In the morning, they would join their parish priest in the usual morning mass in the cathedral. This time of the day is a very joyful celebration as this is considered by many priests in the country to be the day when they renew their sacerdotal vows.
Also celebrated on this day is the last Mass before Easter (commonly called the Mass of the Institution of the Lord’s Supper) usually including a re-enactment of the washing of the Feet of the Apostles; this Mass is followed by the procession of the Blessed Sacrament before it is taken to the Altar of Repose. TV and Radio networks in the nation will formally either sign-off until Easter Sunday or start restricting broadcasts related to religion, especially to the Holy Week.
Good Friday
Good Friday, a public holiday in the Philippines, is commemorated with solemn street processions, the Way of the Cross, the commemoration of Jesus’ Seven last words and a Passion play called the Senakulo. In some communities (most famously in the province of Pampanga), the processions include devotees who self-flagellate and sometimes even have themselves nailed to crosses as expressions of penance or in fulfilment of a vow accomplished in thanksgiving or exchange for a granted request or prayer. After three o’clock in the afternoon of Good Friday (the time at which Jesus is traditionally believed to have died), noise is discouraged, bathing is proscribed and the faithful are urged to keep a solemn and prayerful disposition. Towards late afternoon and evening there is the procession of the dead Christ.(similar to the funeral procession of Eva Peron the first lady of Argentina)
The figure of the corpse of Jesus is taken in solemn procession and borne on a decorated hearse, after which it is venerated by the faithful. Some even accord the image with the proper funeral rites such as laying the body in state or, in some instances, by smoking the seated corpse of Jesus over a fire in accordance with local, pre-hispanic funerary customs. Such a procession may involve a various number of other saints, and tradition dictates that the last image in the line is the Sorrowful Virgin.
Black Saturday
Black Saturday is traditionally observed with silence and solemnity. Preparations are made for the Easter Vigil to be celebrated that evening.
Holy Week & Easter Sunday
Easter Sunday is the culmination of the whole commemoration of Holy Week. Unlike the previous days, this is a time for joy and merriment. The mood is festive and the people are busy preparing an Easter feast. A theatrical play takes place at dawn, the risen Christ meeting his sorrowful Mother. The two images come from different sides of the street and meet at the town church’s facade. The people clap and cheer and once again, sing praises of hymn.
It is truly a unique experience for a tourist to witness the Filipino’s celebration of Holy Week. For the locals, this is where religious fervor, theatrics and camaraderie blissfully collide.

By JM Agreda
Sunday, October 16, 2011
KALINGA Representative Manuel Agyao, head of the House of Representatives committee on bases conversion, will lead investigations on unpaid lease rental of a private developer in Camp John Hay.
Fil Estate-owned Camp John Hay Development Corporation’s (CJHDevCo) unpaid rent for the former American rest and recreation facility has ballooned to P2.6 billion in the past years despite an already restructured lease contract.
The probe emerged after a resolution authored by Ilocos Norte first district Representative Rodolfo Fariñas last month was adopted by 30 other legislators, including Baguio Representative Bernardo Vergara.
“Non-compliance of the Fil Estate-owned CJHDevCo of its obligation to pay its debts places the National Government and the City of Baguio in a very disadvantageous position,” the resolution stated.
Bases Conversion Development Authority (BCDA) claimed that CJHDevCo has outstanding arrears in lease rentals, which the developer itself acknowledged during efforts in years 2000, 2003 and 2008 to negotiate the payment.
Both parties also had restructuring agreements on the mentioned years.
“Despite BCDA having virtually exhausted all options for a mutually acceptable solution, CJHDevCo still continues to fail to comply with its obligations,” Farinas said.
The City has also waited for years for its 25 percent share in rentals from the corporation to be released after its privatization.
CJHDevCo has the authority to develop, manage and operate more than 200 hectares of areas in Camp John Hay with existing structures. It also acts as leaseholder of other enterprises of the former American reservation, which set up operations, including the Fil Estate-operated Manor and the Baguio Techno Hub, which Ayala Land Inc. has started to develop with call centers and other facilities.
The City Government also expects shares from five percent gross income of new Camp John Hay locators, including firms registered under BCDA and the Philippine Economic Zone Authority.
These shares from CJHDevCo have been declared an important resource by Mayor Mauricio Domogan, especially since the city is facing decreased internal revenue allotment by 2012.
Earnings from the rental were also earmarked prior to the acquisition of then Government Service Insurance Corporation (GSIS)-owned Baguio Convention Center, which the mayor said was not followed.
This resulted in delays in payment to GSIS, which the mayor said resulted in hiked payments in buying the property due to premium interests.
The original lease agreement fixed CJHDevCo’s rental at P425 million yearly for the first five years, starting in 1996, and P150 million annually, after which, the share of Baguio City being 25 percent or P150 million for the first five years and P35.5 million for the succeeding years.
Baguio City, through the City Council committee on laws chairman Richard Cariño, supported the inquiry, stressing the development in Baguio has long been delayed due to the failure of the company to pay the rentals to the city.
Mayor Mauricio Domogan said years of not issuing business permits in the area and the set-up of a one-stop shop also led to the delay in claiming rentals from the company.
In next week’s inquiry, Fariñas hopes to uncover a reported deal of the private developer and the Baguio City government in 1996, the lawmaker said.

Lenten Season in the Philippines:What’s behind those EASTER EGGS?
Being a God-observing country, Philippines observe Lenten season religiously. This will start on Ash Wednesday that paternized the lunar calendar of Romans to be followed by Palm Sunday, then what we call THE HOLY WEEK, with Maundy Thursday, Good Friday, Black Saturday, and will end on Easter Sunday.
It was said that we celebrate Easter on the first Sunday after the first full moon or the first vernal equinox (day and night sharing equal length). This was agreed upon by the church leaders of Nicea(325 A.D.), thus, this day can be either from March 22nd till April25th.
Behind that modernized way of celebrating Easter with the usual bunny and the famous egg hunting, Filipinos rejoice in this glorious day to commemorate the Resurrection of Jesus Christ and how He saved us from our sins. And since it has been long knowned what Christ went through, and what He did, People all across the country celebrate it as solemnly as possible.
How Filipinos Celebrate Easter
Festivity will start on Palm Sunday when everyone goes to church with palm leaves and listen to the mass and prepare for a week long celebration after. Then come Monday until Wednesday, we go to the office, do our regular chores, but in a more prim manner. Loud music is out of the question, drinking and going to bars- DEFINITELY a no-no… This is the time to reflect and to do fasting. This is the perfect time to forgive and forget.
On Maundy Thursday, Filipinos will attend the mass and pray together as we remembered the day Christ started suffering for our sins. Catholics observe the Station of the Cross, and it has been their tradition to visit as many churches as they can by walking. Others will just be in their respective homes as they sing Pasyon (Passion).
Good Friday is when you can see Penitensya (Penitents) who reneact how Jesus was nailed in the Cross, wherein these people would also put barbed wires as their crowns, walks down the streets carrying that cross that weights a ton.
On Black Saturday when Jesus is still dead, Filipinos still continue with the fasting to somehow suffer for what He did for us.
And as soon as sunrise hits on Easter Sunday, Filipinos go to church together, and celebrate as Christ has risen from death. The birth of NEW LIFE, so we rejoice in that Day and we have somehow adopted westernized culture, we now have Easter EGG hunting on this memorable day.
OTHER WAYS OF CELEBRATING EASTER FOR FILIPINOS
One of the most festive ways of celebrating Easter is those of the natives from the Marinduque Island, located on the Southern part of the Philippines. The Moriones Festival, and event similar to Mardi Gras wherein town people gather and wear Roman medieval masks and costumes similar to those worn by Roman legionaries.
This is a re-enactment of the story of Longinus from the Gospel of St John. Longinus, a Roman soldier who was blind in one eye who pierced the side of the crucified Jesus. He regained his sight when miraculously, blood that squirted from the side of Jesus dropped on his eye. The play will conclude with Longinus being beheaded.
Unlike the typical Sinakulo, Moriones Festival is the contemporary way of remembering How Jesus was crucified, as this is being celebrated by wearing bright painted costumes of different color, indeed one of the most sought after event in the country.
Modern Way of Celebrating Easter
Let us not remove the fact that nowadays, Easter has also become a justification for Filipinos to celebrate by partying. After the long holy week is over, after being done with repenting, after fasting for the entire week, without eating meat, no liquor (not one bit), not even a stick of cigar, no blaring rock and roll music, Filipinos makes this an excuse to have fiesta or to have some sort of a family gathering.
Well, I know that this is one of those occasions (A long one at that) where we could be with our love-ones, since most private and government companies are closed. This is also one of the best times to reflect with family to have a retreat, go out of town and spend time with your family while remembering what Jesus Christ did for all of us.

Catholic devotees in the Philippines have been nailed to crosses in Easter ‘crucifixions’ recreating the Passion of Christ for Good Friday.
While the ritual is frowned on by church authorities, the voluntary crucifixions in villages north of the capital Manila are one of the most extreme displays of religious devotion in Asia’s largest Roman Catholic state.
Other penitants whipped their backs and chanted prayers as dozens of them mixed faith with gory rituals to mark the church calendar’s most sombre day at Easter.
Monsignor Pedro Quitorio, spokesman of the Catholic Bishops’ Conference of the Philippines, said the church discourages such rituals because the penitents were expecting rewards for hurting themselves.
“We only encourage the faithfuls to fast, pray and confess their sins,” he told the Reuters news agency. “We can’t stop the practice. It is not necessary, but the church has no police power. These rituals challenge us to guide our flock on the true teachings of the Catholic church.”
In the small village of Cutud, 50 miles north of Manila, the crucifixion of Jesus Christ was re-enacted in a colourful street play with dozens of men carrying wooden crosses as heavy as 110 lbs and scores whipping their backs to a bloody pulp.
After walking barefoot for almost a mile around the village in scorching heat, the drama ended at a man-made hill where 11 men were nailed to crosses with three-inch nails driven into their hands and feet.
“I am not doing this for fame or money,” said Ruben Inaje, 48, who has played the role of Jesus Christ at Cutud since 1986. “This is my own way of thanking the Lord. He has showered my family with so much blessings and has saved my life many times.”
Inaje, a house painter, said he made a decision to have himself crucified after escaping death after a fall from a three-storey building.
“I believed God was using me as an instrument to show the world the Filipinos’ devotion to God,” he said, showing his bandaged bands at a medical station after the crucifixion.
“I will never get tired doing this every year. This is my personal devotion and I will continue this until the Lord allows my body to endure the pain.”
In the neighbouring province of Bulacan, five people were nailed to wooden crosses, including an 18-year-old woman and an Australian, who said he was hoping his sacrifice would cure his cancer-striken mother.
The crowd cheered John Michael, 33, as the nails were driven to his hands and feet. Minutes, later he gave a broad smile of relief as the nails were pulled out.
About 20 crucifixions were held in four other parts of the country.
Thousands, many of them curious tourists from Australia, Europe and South Korea watched the spectacle in Cutud, which has grown from a village novelty started in 1955 to a media and tourist attraction copied in other parts of the country.
The atmosphere was festive, with hawkers selling bottled water, beer, ice-cream and souvenir whips. VIPs and even some nuns watched from a specially elevated “viewing platform”.
More than 80 per cent of the Philippines’ estimated 90 million population are Catholic.

Easter is the greatest holiday in Christian Calendar, marking the rebirth of Jesus Christ and the renewal of Christian Faith… Filipinos go to church together as soon as sunrise hits on Easter Sunday, and celebrate the life, death and resurection of the savior… It’s also a magical time for children to enjoy chocolate bunnies, marshmallow chicks, and jellybean-filled Easter eggs….

What a fun Easter activity, Easter egg hunting is! It all begins with purchasing eggs at the store. The number of eggs to purchase depends on how many kids will be Easter egg hunting.
Easter eggs are specially decorated eggs given to celebrate the Easter holiday or springtime. The egg was a symbol of the rebirth of the earth in Pagan celebrations of spring and was adopted by early Christians as a symbol of the rebirth. The oldest tradition is to use dyed or painted chicken eggs, but a modern custom is to substitute chocolate eggs, or plastic eggs filled with confectionery such as jellybeans. These eggs are often hidden, allegedly by the Easter Bunny, for good children to find on Easter morning. Otherwise, they are generally put in a basket filled with real or artificial straw to resemble a bird’s nest.

“If you want to wow your family with extra special Easter eggs, this is the recipe for you! These are peanut butter and coconut cream eggs dipped in chocolate. They are both delicious and beautiful!”

Bloody Filipino Observances for the Atonement of Sins

Each Easter in the Philippines, Christians make a grueling march on Good Friday to atone for their sins through self-flagellation and crucifixion.

In the Philippines at the Easter season, Roman Catholics practice the extreme ascetic rituals of flagellation, cutting, wearing crowns of thorns, bearing crosses, and crucifixion, emulating the passion of Christ. These Christian Filipinos are Roman Catholic, although the Church does not officially approve of these observances.

Purpose Behind the Ascetic Rituals
The purpose of performing these rituals is to ask forgiveness for the sins committed over the year for oneself and one’s family — a type of penitence. In following the last painful events in the life of Christ, these people feel a closer connection with their religion and their God, and a feeling of ease or forgiveness for their sins.
Ascetic practices, or what might be called “mortification of the flesh” can be seen in some religious sects. This was shown in the Opus Dei (a controversial Roman Catholic organization) character in the fictional work The Da Vinci Code by Dan Brown (Doubleday, 2003). This Opus Dei assassin practiced mortification of the flesh in order to bring his body under subjugation of his spirit.

Some Christian ascetics believe that the apostle Paul taught asceticism in the New Testament. The Apostle Paul said in Romans 8:13 “If you live after the flesh, you shall die, but if through the spirit you mortify the deeds of the flesh, you shall live.” The Catholics believe that this means that mortification or self-inflicted acts of pain will end the disease of the soul.
While Christ’s atonement was to pay for all men’s sins, the Catholic belief is that men should also do something in the expiations of their own sins, which sacrificing acts are pleasing to God. Protestants do not practice such extreme asceticism, but do practice fasting for somewhat similar reasons.
Easter Rituals in the Philippines
Each year in the Philippines, particularly in Pampanga Province, men and women take part in the passion plays of torture and crucifixion as symbolic of the suffering of Jesus Christ. At the end of the march on Good Friday, with self-flagellation, whipping and cutting of the flesh by officials, and carrying heavy crosses. Each year, over a dozen people are actually hung on crosses.

Crucifixion is an extremely painful form of torture and death. The Filipino crucifixion followers are either tied to the crosses or actually nailed there. They are not left on the crosses to die, as was the practice during ancient times by the Romans and other civilizations worldwide generally from the 6th century B.C.E. to the 4th century C.E.. In actual crucifixions, people usually died from asphyxiation or heart failure.
Most Filipinos attest to the feeling of worship, forgiveness and cleanliness that occurs through the process of their painful Easter rituals. They generally practice self-flagellation and crucifixion to atone for their sins.
Others Who Self-Flagellate
The Filipinos are not the only modern group to practice self-flagellate in the name of religion. It is also seen by the Shi’ite Muslims as they commemorate the passion of Imam Husayn and other martyrs at the Battle of Karbala in the 7th century C.E. Catholic monks and nuns practiced self-flagellation since medieval times as a reminder of the suffering of Christ. In modern days Los Hermanos Penitente of Colorado and New Mexico practice self-flagellation, the bearing of crosses, and actual crucifixion like the Filipinos.
It was reported by a nun who looked after Pope John Paul II , that he practiced self-flagellation, and the sounds of the whip on his flesh could often be heard from his living quarters.

The Philippines is the third largest Roman Catholic country in the world with some 80% of the 85 million Filipinos following the faith. The major events in the Christian calendar, Christmas, Easter, All Saints Day, are all celebrated with gusto but it is Easter or Holy Week, as it is known in the Philippines, which ignites the Filipino passion. From the public self-flagellation and crucifixions of Pampanga Province to the street parades and the shrines of Makati City’s Poblacion suburb with their infusion of popular and indigenous cultural influences, Holy Week is the celebration of the calendar.
For over half a century, the 17000 residents of this suburb have held street parades, a Saturday night, Sunday morning vigil or salubong and constructed shrines in honour of Holy week. Each year up to 40 shrines are dotted about the one square kilometer that is the inner city suburb of Poblacion. Throughout the year, street groups known locally as Samahans have raised the 50,000 pesos required to employ an artist, feed and water the volunteer assistants and obtain the materials necessary to actualize the artist’s vision for their shrine.
These shrines are folk art of the first order, utilizing a range of materials from the time honoured papier-mâché to the 20th Century’s set builder’s material of choice, polystyrene. When they are combined with bamboo, plywood, timber, bricks and mortar that call on the trade skills of the residents and the artist’s skill with the brush they produce settings worthy of an off Broadway production.
In the weeks leading up to Holy Week, streets become impassable to vehicles as the construction takes place. Scaffolding is erected, frames are built and clad, sculptures several meters high are constructed, water features are incorporated, lights are installed with the chosen street corners becoming beehives of activity. As the start of Holy Week arrives the activity goes up a notch, the shrines must be completed by Wednesday evening.
Its arrival heralds a street parade which wends it way through the suburb incorporating every shrine in its route. The devout carry crucifixes for installation in the shrines accompanied by the Makati City Marching Band. It is now that Christ’s Pasyon, the marathon chanting or singing of the poem of Jesus’ life, passion, and death begins and continues day and night through to 3pm on Good Friday.
The Thursday before Good Friday sees thousands of people from all over Metro Manila descend upon the suburb. They wander the streets admiring the diversity of the art created by the Poblacion residents. Although sacred in inspiration, the designs of the shrines are often unconventional ranging from the American Wild West to the pharaohs of ancient Egypt for their chosen themes. There is carnival atmosphere in the air as excited children run and point, adults ooh and ah, street sellers hawk their wares and camera flashes bounce off the walls of the shrines.
Throughout Good Friday Christ’s Pasyon is recited by members of the street associations, usually working in pairs. Church goers wander home from their devotions stopping to listen and gossip at the shrines. At 3pm, the reputed time of Jesus’ death, black shrouds are draped over the crucifixes in the shrines. In the evening a parade of the shrine’s tableaux traverses the streets of the suburb.
After Saturday’s midnight mass, at the local parish church of Saint Peter and Paul, effigies of Jesus and Mary are carried along different streets to meet for the Salubong outside the suburb’s sports complex. There, a temporary stage has been erected upon which a choir of children dressed as angels await their arrival. The statue of Mary has her head shrouded with a black cloth and before a crowd of several thousand people packed into this town square, it is removed when she meets her son. Blue and white helium filled balloons bare her shroud into the dark heavens above.
Eight to ten hours after this two a.m. meeting, many of the shrines are builder’s rubble. They have had their 4 days in the sun and over the following few days any trace of their existence will have vanished except perhaps for a painted section of road way and the record captured by the photographers.

Approximately 90% of the 89 million Filipinos are Christian. During Holy Week, they practise scourging and crucifixion, a practice condemned by the Philippine Roman Catholic Church. (Report: B. Harris)

Devout Roman Catholic Ruben Enaje donned a crown of thorns as he put himself through the agonising ordeal of being nailed to a cross — for the 22nd time.

The 47-year-old decorator was the first of 19 men in this northern Philippines village Friday who underwent the gruesome Easter crucifixion ritual, an extreme form of penance by devotees wanting to thank God for answering their prayers.

On the one occasion he skipped it eight years ago, he said, he was struck down with stomach ulcers and his wife was taken ill.

“It is painful and difficult. But I will continue doing this for as long as I can. This is my pledge to God,” the father of four told AFP as he prepared his ceremonial garb at his modest wooden home.

Thousands of tourists braved the tropical heat Friday to flock to this poor farming community about an hour’s drive north of Manila to witness the religious rites.

The re-enactment of the crucifixion of Jesus Christ is part of a bloody annual spectacle that shocks outsiders in this devoutly Roman Catholic nation.

Neighbours costumed like Roman centurions dragged Enaje and the other penitents through the village streets and toward a barren hill where three wooden crosses and a large crowd of at least 2,000 tourists awaited.

He screamed in agony as seven-inch (18-centimetre) metal nails were driven into both palms and feet while lying spread-eagled over the cross.

The wooden contraption was stood for about five minutes before it was hauled down again and the nails pulled out. The process was repeated for the other volunteers.

Hours ahead of the ceremony, scores of other local men whipped themselves bloody with strips of bamboo attached to strings to atone for their sins.

The dominant Roman Catholic Church frowns on these extreme practices and the health department has warned the penitents to take anti-tetanus shots first and to sterilise their equipment.

“The church does not recommend it because the church is against self-flagellation,” said Father Norman Vitug, the local parish priest.

“Of course when we express our faith to the Lord the Church does not want us to hurt ourselves for us to experience the Love of God.

“But we cannot question somebody’s faith. It’s just an expression of their faith. We do not lead their lives so we do not know what happens to them while experiencing that, so we might as well respect it,” the priest added.

The crucifixions are organised by the village council, with help from the national government’s tourism department, said village official Leonard David.

The order of the crucifixions were done “according to seniority,” with Enaje first because he had done it the most in the past, David added.

Health Secretary Francisco Duque said that as it was hard to discourage “flagellants from whipping their own flesh, the best penitents can do is ensure that their whips are well-maintained.

“We are not trying to go against the Lenten tradition here because whipping has somewhat already become some form of ‘atonement for sins’ for some of us,” Duque said.

“But this advice is important to make sure that no one will land in the hospital due to tetanus or other infections that penitents might get in the process.”
