Bordeaux’s classified growths have approved the first-ever standardised Chinese translation of their names, Decanter.com can exclusively reveal.
Auction house Christie’s has unveiled an official translation of each of the 61 chateaux in the 1855 classification, after 12 months of collaboration with the Medoc estates.
Simon Tam, head of wine, China, for Christie’s told decanter.com: ‘We have written confirmation and agreements from all but three or four chateaux that these Chinese translations are the agreed names for the whole Chinese speaking world.
‘We are trying to make wine as accessible as possible for our clients. Language is the first barrier and we are trying to break down those barriers,’ he added.
Christie’s staff have worked with chateaux to agree on Chinese translations for their estate while others already had Chinese names. However, some chateaux including Cos d’Estournel have opted not to take a Chinese name.
The Chinese translations have been published on a poster, which will be unveiled to the Bordeaux trade during the 2012 En Primeur week.
The posters will also be distributed to Chinese clients and journalists ‘to ensure the chateaux will be referred to properly,’ said Tam.
It is too early to tell whether the names will be embraced by other auction houses and the wider wine trade but Tam added, ‘I would like to think that the hard work has been done, and it will be adopted widely.’
Christie’s hopes to produce similar translations for producers in Sauternes, Bordeaux’s right bank and Burgundy in the future.

There are two criteria. The first relates to its design, while the second relates to the sort of wine you want to use it for.To begin with, here are some general tips. Regardless of how expensive or stylish the glass or crystal might be, get a decanter that is easy to clean. The shape of some decanters makes them virtually impossible to clean. And with wine, cleanliness is not so much a virtue as a prerequisite. You can tell a decanter is clean by the way it smells of absolutely nothing. As with stemware, decanters should also be made of clear glass or crystal so you can easily see through the wine to check its condition. Some decanters have rounded lips to pour over and they usually drip. I can’t think of many things that are worse than a decanter that drips. So check to see that it has a cut lip that will prevent drips. As you pour, a well-designed decanter will encourage the wine around its lip to spread out inside like a film. This film of wine should extend all the way inside the decanter, enabling the wine to be powerfully aerated in a very thin layer before it arrives at the bottom of the vessel. Now, on matching decanters to wine. There are only two kinds of decanters from this perspective: those that provide a large internal surface area, and those taller kinds – similar to wine bottles – that offer a smaller area.If you’re decanting with the specific intent of aerating wine – especially reds that are young – you would need a decanter that provides a large internal surface area. This will enable the wine to continue its process of aeration and gas exchange after the decanting has finished. But if you have an old and relatively delicate red and your main purpose for decanting is to remove it from its sediment, then a taller, narrower decanter with a small internal surface area would be better since it would help retard any excessive aeration once it is opened. Most of the time, we decant relatively young reds that need aeration. One of my favourite decanters for this is Zerruti’s very elegant Turn Decanter. Its ingenious design behaves like a normal ship’s decanter when left upright in its stand, but whirls its way around in circles, aerating the wine if put directly on the table. It’s always fun to look at the widening eyes of those who have never seen it before, since they’re almost convinced it will wander straight off the table

Why decant? There are actually two reasons. The first is to remove sediment from the liquid. Wines have solids such as yeast and grape skins mixed in, and over time these solids settle out of the wine and end up on the bottom of the bottle.

The second reason is that red wines (and even some whites) must breathe in order to maximize flavor. While many people simply pop the cork and leave it be, the truth is that the small opening of the bottle is just not large enough to allow for sufficient air exposure. Decanters should be made of clear, plain glass or crystal, so that it is easy to view the wine inside. Choose a shape that appeals to you, but make sure that it is possible to clean thoroughly after each use. If the shape is too ornate to allow for proper cleaning, your decanter is destined to retain the smell of every wine that has ever been poured into it, tainting the flavors of all but the very first bottle you decant. 2

Here is where the technique comes in. Uncork your wine bottle, and pick it up gently. Be careful not to jostle it, lest the sediment at the bottom gets mixed in. Now, pour the wine slowly into the decanter, so that you avoid allowing any sediment to slide down into it.Some people like to decant over a lit candle, so that it is easier to see the sediment in the bottle’s neck. This an especially good idea if you are decanting an older bottle, which is likely to have a fair amount of sediment. Now that the wine has been decanted, you will need to exert some willpower before pouring yourself a glass. Let the wine breathe for half an hour to an hour. This will cause the aromas to rise up from the liquid, allowing drinkers to get the full range of smells and flavors. Wine may be left to breathe for up to 8 hours before developing an undesirable vinegar flavor.

Philippines Wine Shop Clark Wine Center is pleased to share with you articles, news and information about wine, wine events, wine tasting and other topics related to wine and the appreciation of wine.

Who actually owns a decanter nowadays? People who live in stately homes, or perhaps the proprietors of antique and curiosity shops? No, not at all. Anyone who wants the best from their wine should own one. Decanting wines is not just for show, and even in this modern age of industrial, fined and filtered wines, some will still benefit from spending some time in a decanter. In times gone by, before so many wines were routinely fined and filtered to a crystal clear state, it was quite common for wines poured from both barrel and bottle to contain a considerable degree of solid matter. In order to avoid bringing an unsightly looking wine to the table, it was quite the norm to decant the wine into a suitably resplendent receptacle. The need for such a receptacle led to the development of the many and varied elegant decanters which are available today. Most wines on the shelves today, however, have no real need for decanting. The winemaking process ensures the wine is thoroughly clarified (even if it may mean stripping the wine of some of its flavour) before it is bottled, by a process of fining (passing egg whites, bentonite clay or other unsavoury substances through the fine to collect solid matter) and mechanical filtration. Although these wines are often best served from the bottle (after all, you’ve paid for the label), many others still benefit from decanting.Wines which have aged in bottle, typically red wines rather than white, will generally throw a sediment by perhaps ten years of age or more. Not only is this sediment displeasing to the eye, it can also be quite unpleasant in the mouth. More than any other wines, these are the ones that deserve decanting. Young wines also benefit from decanting, although the aim is not to take the wine off its sediment (there is rarely any such sediment in young wines), but rather to aerate the wine. The action of decanting itself, and the large surface area in contact with the air in the decanter, alters the wine, softening its youthful bite and encouraging the development of the more complex aromas that normally develop with years in bottle. For this reason even inexpensive wines plucked from the shelves of the local supermarket can benefit from decanting, if a first taste reveals a tannic, grippy, youthful structure. First, take the wine from where it has been stored, hopefully lying on its side in a suitably cool, dark environment. If you suspect a considerable amount of sediment, as may occur with older wines, it’s advisable to stand the bottle upright for a day or so prior to decanting, thus allowing the sediment to fall to the bottom of the bottle. When the time comes to decant the wine, assemble the few things which you will need. These are corkscrew and bottle (obviously), together with a suitable receptacle, which does not have to be anything fancy, a simple carafe such as the one shown here will do, together with a suitable source of light. I use a small candle, as shown here, but a small torch or anything similar will do.Firstly, remove the entire capsule from around the neck of the bottle, using a knife or other implement. It’s important to remove the whole capsule, and not just the top, as you need to have a clear view into the neck of the bottle whilst decanting. This is so that you can observe the wine coming through the neck for sediment. To enhance your view of the wine in the neck, position the light source shining through the neck from behind. Once done, you are ready to pour.Hold the receptacle in one hand and the bottle in the other, and with a smooth and steady action, pour the wine into the decanter. Don’t rush when decanting, rather use a gentle, steady movement, to avoid disturbing the sediment in the wine. Keep the neck of the bottle over the light source, so that you can observe for an arrowhead of sediment moving into the neck of the bottle. This is your cue to stop pouring. If you’ve done it all correctly, this should be the end result. A full carafe or decanter of clear wine, with just half a glass or so of sediment-laden wine remaining. This remaining portion makes a great addition to the gravy, should you be decanting the wine as an accompaniment to a roast dinner. Don’t fret too much if you haven’t achieved a crystal clear pour, as a small amount of very fine sediment is not a great concern – as long as the large, unpalatable pieces have been remove

If you think that decanting is a ritual only for fining dining in restaurants, think again. Decanting is a process that both removes the natural sediments in wine and allows aged wine to breathe and get some air before serving. For your fancy and vintage red wine and any Port that is more than three years of age, decanting is both practical and a great way to truly enjoy your drink. Here’s how.Allow the wine to set. Wine bottles are normally stored in a horizontal position. For long storage, the horizontal position is ideal, but this also means that the sediments in the wine will be left on the side of the bottle. To bring the sediments down to the bottom of the bottle, allow the wine to settle in an upright position for at least two to three days prior to serving. A couple of days of settling may seem like a long time, but remember that you want all of the small particles in the wine to settle at the bottom of the bottle, and not just the large fragments that are visible to the eye.Choose your decanter. Next, select a decanter for your wine. There are plenty of decanters available, some of which are more expensive than others. When choosing your decanter, look for the shape and the type of material used, instead of the price tag. Glass and crystal decanters are the best since these will not change the natural taste of the wine. Plastic, on the other hand, will sometimes react with the wine and change its taste. In terms of shape, the best decanters are wide, so that the wine will have plenty of air exposure in the decanter, allowing it to aerate. Prepare for decanting. Once the wine has already set, take the decanter and place it on a table. Light a thin candle and place it near the decanter, in such a way that you will be able to use the light from the candle to illuminate the neck of the wine bottle later on.Setting up the wine bottle. Take your wine bottle and carefully remove the cork and the wrapping around the neck of the bottle. Do this without shaking the bottle, so that the sediments that have gathered at the bottom of the wine bottle will not contaminate the rest of the wine. Make sure that the entire neck area of the bottle is cleared of packaging as well.Decanting. To actually decant the wine, take the bottle and hold it so that the label is facing upwards. Place the neck of the bottle near the candle flame so that you will be able to see the insides of the neck. Slowly pour the wine into the decanter while looking at the neck of the bottle and checking for sediments that may escape into the decanter. If there are sediments, return the bottle to its upright position and wait a minute or two until the sediment has returned to the bottle of the bottle.

Wine glasses have been used since ancient times.

Pliny (23–79 A.D.) wrote about gold and silver drinking vessels being abandoned in favor of glass, and they were frequently priced as high as the precious metal versions. Bonifacio Veronese’s sixteenth-century ‘Last Supper’ includes modern style wine glasses with a stem and foot. The oldest surviving European wine glasses with a stem and foot are fifteenth-century enameled goblets (a goblet is a glass holding more than four ounces of liquid).Near the end of the sixteenth-century in Germany sophisticated engraved decoration was applied to covered wine glasses.

The earliest surviving English wine glasses are diamond-engraved glasses that were produced near the end of the sixteenth-century by Verzelini. Plain straight stems gained popularity around 1740, with air twist stems being introduced about the same time. Ten years later a twist incised on the exterior of the stem became popular.Quality crystal wine glasses were being produced in France near the end of the eighteenth-century.Cordial glasses in the eighteenth-century had bowls of the same shapes that were typical for wine glasses, but they were much smaller, holding about one ounce.Toast masters glasses were made with a thicker bottom and walls so that they would hold less. A toast master had to drain every glass and still be able to remain standing till all toasts were completed.Wine glasses during the nineteenth-century were often produced in sets — with a dozen each of port and sherry, burgundy and claret, champagne glasses and liqueur glasses.More recently, in the 1950s, Riedel Crystal and other stemware manufacturers have refined wine glass design to the point of having a unique size and shape for almost every wine variation.Wine glasses are made for drinking wine, of course, but people are creative and have found other uses ranging from combining several wine glasses to construct a glass harp to using stemware in a similar manner to provide sound education. Champagne is best served in a tall slender tulip glass. Visual enjoyment of the bubbles that differentiate a sparkling wine from a still wine is enhanced by the height. The once popular shorter version of the Champagne glass — whose design was reputed to be based on an particular aspect of Marie Antoinette’s anatomy — is too likely to spill and doesn’t present the rising bubbles to best advantage or prolong the chill like a tall wine glass will.If your budget, available cabinet space or desire for simplicity limit your wine glass and stemware collection to a single size, a number of producers have made all purpose designs. Most all-purpose wine glass designs are attractive and relatively inexpensive. You may want to pick a design similar to what the California Wine Institute developed as an all-purpose wine glass. It is five and one half inches tall with a one and three quarter inch stem. Its clear, tulip-shaped bowl has a capacity of eight ounces.
There is also an International Standards Organization (ISO) wine glass, but — like many of the wine glasses you might collect as souvenirs when tasting at wineries — it may be a better size for tasting wine — a little small for drinking wine

A wine decanter is not just a piece of decorative glass for your wine but actually serves an important function in wine pouring. Of course you can always incorporate an aesthetic to your wine decanter, but this is one of the things where functionality comes before form. Over time wine can develop sediment, especially red wine. When you decant your wine you are doing two things. One you are helping to open the wine and expose the aromas better and two, you are straining the sediment from the wine so that you are not drinking the crystallized proteins. You should try to avoid pouring the sediment into the decanter. As that is not always possible, some come with a protective sieve to place between the bottle and wine decanter.Wine decanters come in all shapes and sizes and forms of various glasses and metals, but all you need is one with a wide base and an elongated neck with a mouth open enough to let the wine breath. A doughnut decanter has become popular. Its base is round with a hole in the middle and the wine fills the “doughnut” area. This shape actually lets the wine breath better than your typical red wine decanters like I described above. Another newer design that has caught on is the Duck design. It’s in the shape of a gravy boat more or less but with the long neck. The design allows the wine the widest area for breathing as possible.

Philippines Wine Shop Clark Wine Center is pleased to share with you articles, news and information about wine, wine events, wine tasting and other topics related to wine and the appreciation of wine.

Burgundy type red wines benefit from using the right glassware to present and serve them. You can make a significant difference to your enjoyment of these wines and impress your guests with your knowledge of wine decanters and wine glasses.Burgundy red wine originates from the Bougogne region of eastern France, usually made from the Pinot Noir grape. Extensive coverage of this topic can be found in Wikipedia. Red wines with similar characteristics are now produced in many regions of the world and all can benefit from the wine decanters and wine glasses described in this article. Major wines that fall into this category are Barolo, Barbaresco, Burgundy, Grand Cru, Beaujolais, Nebbiolo and Pinot Noir. The first step in releasing the potential of your Burgundy red wine is to decant the wine into an appropriate decanter two or so hours in advance of serving. Enhance your wine with a wide based wine decanter, preferably made from lead free crystal to ensure that no impurities will leach into your wine. A large base optimizes oxidation to release all the notes and aromas of your wine. You can find them online by searching on “lead free wide base wine decanter” or similar. The correct wine decanter signals that you know about your wine and it has the added advantage of being visually satisfying.Choice of wine glass for your Burgundy type red wine is if anything more important still. Contemporary designs are shaped to enhance the nose of the wine and finely made glass is designed to minimize the barrier between you and the wine. Here again it is preferable to buy lead free wine glasses. The ideal shape of your Burgundy red wine glass is a deep rounded bowl that tapers upwards to a sheer, narrower rim to allow dense fruit-driven red wines to concentrate their bouquet. A picture paints a thousand words and you can see an example at Wine Decanters Plus.
