strong>WINE PAIRED DINNER AT YATS RESTAURANT IN CLARK PAMPANGA

Dining out is made so much more fun when good food is paired with fine wine. That is exactly what will happen this Sunday in Clark at Yats Restaurant and Wine Lounge located inside Mimosa Golf Leisure Estate in Pampanga.

Apologies for the short notice but this seems to be how things turn out these days, an impulsive decision brought on by the availability of fine wines that trigger an urge to pair them up some good classic dishes and inviting food and wine lovers to come over and enjoy the evening together. There might be better ways to spend Sunday evenings but drinking fine wines, eating good food, relax and unwind among nice people who enjoy the same things in life might not be a bad idea.

Leading distributor or fine vintage wines in the Philippines Yats Wine Cellars will hold a public wine tasting event this month. This event shall focus on the art and science of pairing wine with food.

This public wine tasting in Makati, Manila to be held in the Ayala Heritage Library in Makai on Saturday 17th November, 2012 is another rather special event.

This event is a wine tasting seminar dedicated to the pursuit of knowledge and experience in the art and science of pairing wine with food. Although the pairing of food and wine is subjective and personal in nature, there are however fundamental principles that can serve as useful guidelines for sommeliers as well as food and wine lovers looking for ideas on how to select the right kind of wines to enjoy with certain a certain dish.

The dynamics of food and wine pairing will be discussed over a 30-minute seminar. This is not a full-length seminar. Knowledge of techniques as well as palate dynamics is not required for participants to enjoy this event. The seminar is intended to go through the fundamental principles of food-wine pairing as well as some useful guidelines to follow when selecting wines to pair up with food.

This is then followed by tasting of various kinds of food-wine pairings. The tasting is designed to illustrate the principles at work in real-life matchups of wines with different kinds of food.

Five flights of food-wine pairings are served during the course of this event to illustrate the different basic strategies and principles of food-wine pairing.

For this event, we have selected as venue, the cozy but small Tower Room of Ayala Heritage Library at the Ayala Triangle in Makati, Manila. It is our intention to keep the participation small – up to 16 persons only – so we can have more interactions and plenty of opportunities to share ideas and ask questions too.

Please note that this is not a wine dinner. Being a tasting the food portion is purposely kept small. Pouring size of the wine will be the usual 60ml. The event will start promptly at 4:30pm and ends also promptly, at 6:30pm. Participants are asked to be punctual.
The five fights of wine-food pairings selected for this wine-tasting session are:

The five flights of food-wine tastings are:

Caesar Salad
1999 Chablis 1er Cru Vaillons, Lamblin et Fils

It is a shame that wines are often missing on the table when a good salad is served. Admittedly vegetables are not a wine’s strongest ally but it also doesn’t mean the two should go their separate ways either. For more intense salads such as the ever-popular Caesar, the wine is not matched up against the green (Romaine lettuce in this case) but the rich and savory dressing. This medium-age Chablis is chosen for only for its vigor and lemony nose but also for its fresh acidity to ignite a synergy when it meets the Anchovy at the base. What one must avoid in the wine for this pairing is oak flavors. That would ignite something rather unpleasant on both sides.

Mixed Liver Pate served on Toast
1977 Eiswein, Niederthaler Germany

Three aspects are being introduced to each other with this pairing. First we start with the texture. A slightly coarse mixed-liver patè is chosen. The grainy texture of the food makes the wine feel a little bit more velvety on the palate. The high percentage of fat in the food makes the palate feel awfully tired and sleepy. Sweet wines are among the most acidic of all forms of wines. The acidity of this Ice Wine is called upon to cut through the fat in the liver making it feel a bit lighter. Lastly this old vintage Eiswein last shed some of its youthful unctuous sweetness. Its medium-intensity sweetness prevents the wine from cloying our appetite.

California Maki
2011 Traminer, Durnbert Altes Kreuz, Austria

Sake and Sapporo draught are probably the classic choice for just about all kinds of Japanese cuisine but just in case we really want only wine on the table or in the picnic basket, the safe play is a fruity white wine. Not just any white wine because flavor matching isn’t the only challenge in this game. Weight is something that is far too often overlooked in a match-up. This Traminer from Austria is no featherweight. Once the flavors agree, this pairing is really about matching up pound for pound. Other good wine options include Cote-du-Rhone Blanc and maybe a good Rias-Baixas.

Grilled Salmon
1990 Corton Marechaudes, Grand Cru, Prince Florent de Merode

The doctrine “Red wine with meat and White wine with fish” is about to be thrown out the window. Be that as it may, pairing red wine with seafood is still tricky business. The culprit here is iodine and some fish are just oozing with it. Those fish would reap havoc in the presence of red wine. Luckily Salmon isn’t one of those. Salmon is rich and savory but it is still a fish so a heavy red wine will overpower the food. Too much presence of tannin in the wine will ruin everything with any fish but acidity is welcome as it is required to “cut” the richness of the Salmon otherwise the combination will feel flat and flabby. This Grand Cru red wine from Burgundy’s famed Corton commune has reached an age where the astringency of youth has mostly been shed, leaving with us a smooth elegant and complex Pinot Noir that not only matches the flavors but more importantly the weight of the Salmon.

Vintage Port served with English Blue Stilton Cheese in Yats Restaurant

Small Platter of Blue Cheeses
Porto, Douro, Imperial Rouge, Daniel Sanders

If it is just one single cheese on the platter, a Cropwell English Blue Stilton for example, then one can be rather bold and reckless with the choice of Port. But when there are several kinds of blue cheese on the board, I would be more conservative and go with a port that is less tannic, not so cloying and with not so much chocolate flavors. This Imperial Rouge from Daniel Sanders provides the right combination of sweetness, structure and acidity. It may not be the perfect match for any particular cheese in front of us but it brings more out of all the cheese when enjoyed together. This is another good example of how contrasting the wine and the food could somehow result in perfect harmony.

Manila, the country’s seat of power, is now also the “car theft capital” of the Philippines, an official of the Highway Patrol Group (HPG) of the Philippine National Police said Tuesday.
According to Superintendent Edwin Butacan, HPG spokesman, Manila has taken the unflattering tag from Quezon City as more car theft cases have been reported in the city since February than in any other area in the metropolis.
Butacan said that in August alone, 19 vehicles were reported stolen in Manila compared to nine in Quezon City.
The HPG recorded 50 car theft cases nationwide during the same month, he added.
“[That has been the trend] since February. Manila now tops the list [of areas] where [car theft cases are rampant],” Butacan said in a news briefing at Camp Crame.
Asked what could be the reason for the hike in incidents in Manila, he said: “Since Quezon City is widely considered as the ‘car theft capital,’ the HPG augmented the efforts of the Quezon City police …”
According to him, the order of former HPG director Chief Supt. Leonardo Espina, now the director of the National Capital Region Police Office, to deploy more patrol units to Quezon City helped the police curb the operations of car theft syndicates.
“So now we can see that if we focus our police operations on a specific area … we can really decrease the number of car theft cases in that place,” Butacan said.
At the same time, he noted that the reported number of stolen vehicles in August considerably dropped compared to the same period last year.
A total of 127 vehicles were taken from their owners in August 2011 compared to 50 for the same month this year, down by almost 60 percent, Butacan said.
Of the 50, 26 were motorcycles. According to the HPG official, aside from motorcycles, the following vehicles are the favorite targets of car thieves: Mitsubishi Montero, Nissan Urvan, Toyota Vios and Toyota Grandia.
“That’s because motorcycles are easy to steal. At the same time, it’s also difficult to recover stolen motorcycles,” Butacan said.

SYNOPSIS

In the back of the minds of wine drinkers of different levels of sophistication is the question of why some wines cost so much more than others. Are the differences discernable enough to justify the huge difference in their prices?

A discerning palate doesn’t come automatically with drinking lots and lots of wine. It certainly helps but that is not the only means to an end. In fact drinking without thought and purposes may not get us very far down the road towards connoisseurship.

To fully appreciate the value of high-quality wines, one has to know something about how grapes are grown in the vineyards and how they are made into wine at the winery. To fully appreciate fine wines, one has to know about special efforts to achieve quality in all aspects of wine-making, understanding how they affect the taste of the wine. These efforts are often expensive which in turn raises the prices of the resulting wines.

Format of a Wine Seminar

A typical seminar lasts for 120 minutes. It starts with a 90-minute lecture on a specific topic followed by a guided tasting of several wines to illustrate the key points of the lecture. During the 30-minute guided tasting participants may ask questions and share ideas and comments among themselves also.

Wine seminars are intended to provide sufficient information on and insights into a certain topic about wine in the hope that this will stimulate interest in the participants to research further into related issues and ideas.

The ensuing tasting session is crucial to the knowledge acquisition process. Nothing works better to answer questions or make a point than tasting good examples of wines.

Attendance is usually limited to 15 to 20 persons. Admission is confirmed and paid for in advance.

About This Wine Seminar

For this wine seminar, we will review the wine production process from vines to wines. Although we will visit a number of technical subjects it will be quite easy for all participants to understand their implications.

These are the topics that will be covered by the 90-minute lecture:

1. Growing Good Grapes

What are some of the things that producers do to improve the quality of grapes? How do these improvements translate into making a better wine that tastes better than the others? Subjects covered include location of vineyard, yield management and green harvesting, canopy management, achieving ripeness etc.

2. Making Good Wines

To make good wines, we certainly need good, clean and healthy grapes. But even then, it is quite possible to make bad wines afterwards. What are some of the things that wineries do to separate their wines from the mediocre stuff? Subjects covered include grape sorting, fermentation techniques, barrel ageing and tender treatment to preserve delicate flavors in great wines of elegance.

3. Sparkling Wines and Champagne

We will quickly review the two main production processes of making sparkling wine or Champagne, namely the Champagne method and the Charmat or “tank” method. We will also discuss the ageing process which imbues complexity into the wine.

4. Qualities to Look For in Fine Wine

The knowledge of viticulture and wine-making techniques helps one to know what to look for when tasting a wine. Notions of concentration, extract, ripeness, aromatics, body, the finish and age-worthiness will be discussed.

Yats Wine Tasting is fun and educational also

This is one of those wine-tasting events that novices and seasoned wine drinkers can enjoy equally. Even for those who don’t drink wine regularly, attending this event might result in their expanding their preferences for alcoholic beverages.

Yats Restaurant has been honored by world leading wine magazine – The Wine Spectator – for offering one of the best restaurant wine lists in the world.

About this wine-tasting event

As with all wine-tastings held by Yats Wine Cellars in the past, the objective is always to offer a convenient and cost-effective opportunity for wine enthusiasts to enhance their knowledge by tasting different kinds of wines side by side. There is nothing more revealing and informative than a comparative tasting of wines in a well designed lineup.

For this upcoming event, Yats Wine Cellars turns your attention not just to the classic wines of the world but on the art of pairing food with wine to create a synergy that can offer immense pleasures. Participants will taste four kinds of wines paired carefully with a specific kind of food. Wine lovers of all level of sophistication will have no trouble appreciating the synergy. The pleasure of the pairing exceeds the sum of the pleasures offered by the wine and by the food.

The four kinds of wines selected for this wine-tasting session are:

Italian Red Wine paired with a full-throttle Italian lasagna. Notice how the heaviness of the lasagna melts down once you have mouthful of a classic Tuscany red wine on the palate.

Classic White Wine paired with deep-fried prawn toast. The crisp acidity of the white wine cuts through the oil of the food resulting in a delectable impression that is quite refreshing.

Vintage French Red Wine is paired up with French blue cheese. This is an application of contrast in doing a food-wine pairing. The cheese is fatty and heavy. We use vintage red wines that are slim, agile, racy and vigorous. It seems like the two will go to war against each other but instead they end up hugging and dancing with each other once they combine inside your mouth.

Sweet Dessert Wine is paired delicately with a liver pate served on simple toast. On the surface this again smacks of a natural disaster. The sweet dessert wine is obviously designed to enjoy with dessert, something nice and sweet. The liver pate is dry and fatty. Toast is bland and boring. How can this work? Well, it does and one of the reasons is that the sweet wine comes with a high degree of acidity. In fact, it is one of the most acidic styles of wines. But of course, we only taste the sweetness.

Enjoying the wine tasting event

Guests can arrive anytime during the event and enjoy the tasting at his/her own pace. Each ticket contains a certain number of tasting stubs. Each stub corresponds to a flight, or group, in the lineup. Just approach the wine service station and surrender a stub to redeem it for a tasting pour (roughly 55-60ml) of a wine in that group.

Experienced wine drinkers who have attended more than a few of these wine-tasting events often start with lighter wines and end with the ones that full-bodied. Having a sip of water in between tastings can help cleanse the palate to appreciate different set of flavors of the wines in the next glass.

Many participants also enjoy meeting new friends during these wine-tasting events. Some find it a great pleasure to talk to people with similar interests but different experiences in wine. Interesting stories are exchanged and opinions are shared during the tasting.

Philippines Wine Shop Clark Wine Center is pleased to share with you articles, news and information about wine, wine events, wine tasting and other topics related to wine and the appreciation of wine.

Pour a glass of wine into a suitable wine glass. Then take a good look at the wine. Tilt the glass away from you and check out the color of the wine from the rim edges to the middle of the glass (it’s helpful to have a white background – either paper, napkin or a white tablecloth). What color is it? Look beyond red, white or blush. If it’s a red wine is the color maroon, purple, ruby, garnet, red, brick or even brownish? If it’s a white wine is it clear, pale yellow, straw-like, light green, golden, amber or brown in appearance?Still Looking. Move on to the wine’s opacity. Is the wine watery or dark, translucent or opaque, dull or brilliant, cloudy or clear? Can you see sediment? Tilt your glass a bit, give it a little swirl – look again, is there sediment, bits of cork or any other floaters? An older red wine will often have more orange tinges on the edges of color than younger red wines. Older white wines are darker, than younger white wines when comparing the same varietal at different ages. Our sense of smell is critical in properly analyzing a glass of wine. To get a good impression of your wine’s aroma, swirl your glass for a solid 10-12 seconds (this helps vaporize some of the wine’s alcohol and release more of its natural aromas) and then take a quick whiff to gain a first impression.Still Smelling. Now stick your nose down into the glass and take a deep inhale through your nose. What are your second impressions? Do you smell oak, berry, flowers, vanilla or citrus? A wine’s aroma is an excellent indicator of its quality and unique characteristics.Swirl the wine and let the aromas mix and mingle, and sniff again. Finally, take a taste. Start with a small sip and let it roll around your mouth. There are three stages of taste: the Attack phase, the Evolution phase and the Finish. The Attack Phase, is the initial impression that the wine makes on your palate. The Attack is comprised of four pieces of the wine puzzle: alcohol content, tannin levels, acidity and residual sugar. These four puzzle pieces display initial sensations on the palate. Ideally these components will be well-balanced one piece will not be more prominent than the others. These four pieces do not display a specific flavor per se, they meld together to offer impressions in intensity and complexity, soft or firm, light or heavy, crisp or creamy, sweet or dry, but not necessarily true flavors like fruit or spice. The Evolution Phase is next, also called the mid-palate or middle range phase, this is the wine’s actual taste on the palate. In this phase you are looking to discern the flavor profile of the wine. If it’s a red wine you may start noting fruit – berry, plum, prune or fig; perhaps some spice – pepper, clove, cinnamon, or maybe a woody flavor like oak, cedar, or a detectable smokiness. If you are in the Evolution Phase of a white wine you may taste apple, pear, tropical or citrus fruits, or the taste may be more floral in nature or consist of honey, butter, herbs or a bit of earthiness. The Finish is appropriately labeled as the final phase. The wine’s finish is how long the flavor impression lasts after it is swallowed. This is where the wine culminates, where the aftertaste comes into play. Did it last several seconds? Was it light-bodied (like the weight of water), medium-bodied (similar in weight to milk) or full-bodied (like the consistency of cream)? Can you taste the remnant of the wine on the back of your mouth and throat? Do you want another sip or was the wine too bitter at the end? What was your last flavor impression – fruit, butter, oak? Does the taste persist or is it short-lived?After you have taken the time to taste your wine, you might record some of your impressions. Did you like the wine overall? Was it sweet, sour or bitter? How was the wine’s acidity? Was it well balanced? Does it taste better with cheese, bread or a heavy meal? Will you buy it again? If so, jot the wine’s name, producer and vintage year down for future reference.

Philippines Wine Shop Clark Wine Center is pleased to share with you articles, news and information about wine, wine events, wine tasting and other topics related to wine and the appreciation of wine.

Bring the glass down to a normal level and, while holding the stem, swirl the glass rapidly. This will increase the surface area of the wine by allowing it to move up the sides of the glass. This also helps to release the volatile chemicals of the wine into the air.Stop swirling. Insert your nose into the glass and inhale by taking quick, full sniffs. Some people prefer to take short sniffs, some prefer to just stick their nose in and leave it there for a while. Determine any off-odors, identify any grape aroma and rank the strength of the aroma.Analyze the aroma further. Try to detect the smell of fruity or floral notes. Decide what they remind you of if possible. Next, note the presence of spices, such as pepper, anise, cinnamon, vanilla, tea or possibly nuts. Finally, note the presence of other aromas, such as cedar, oak, dust, moist earth, herbs, chocolate, tobacco, toastiness, smoke, tar, mushrooms, red meat, grass, hay, or asparagus.Sip a small amount of wine and move it over your entire tongue so that all your taste buds come in contact with it. The trick to tasting wine is to allow the aromas of the wine to enter your nasal passageway at the back of your throat. Some people pucker their lips and suck in a small amount of air through the wine. Others find it easier to chew the wine as if it were food. Both of these methods will force the aromas of the wine through the nasal passage and will increase your experience of the wine.Note how long the flavors remain in your mouth after you’ve swallowed the wine. This is called length. Some wines can have up to one minute of length. Also be aware of any overbearing presence of alcohol. A wine should have enough balance that you’re barely aware of the alcohol in it.  Look for a very light shade of straw-toned color in white wines such as chardonnay and white Riesling. For semillon and sauvignon blanc, look for a more definite yellow color. For sweeter wines, look for a more golden color.Note colors of red wines range from pink to different tones of purple. Rosés are usually medium pink. A brown tinge in a rosé is usually not desirable. Red wines range from “medium red” to “high red.” A purple could indicate a young wine or a particular variety of grape.Check for clarity of the wine. Notice if the wine is clear and free of suspended material – this is termed a brilliant wine. Some descriptions to use include brilliant, clear, dull, and cloudy. Dull indicates haziness, and cloudy indicates heavy amounts of suspended material. As a beginner, focus on unwanted smells such as yeast, wood, mold, sulfur dioxide, oxidation (brackishness), acetic acid (vinegar) and hydrogen sulfide (rotten egg).Taste for sweetness or dryness. An acid bite indicates the vitality of the wine. Taste for excessive tannins (bitter and rough)and for vinegar flavor, which is usually not desirable.Note boldness, fullness and richness while tasting. These tend to indicate a wine with good body.
